Q3. Write an article on Operation management Practices (trends, best practices etc.) in any of the
following industries: e-commerce, Telecom, food processing industry or Tourism industry

Business Managers of today are living in challenging times. Business targets had never been
stiffer, work pressure and managing the complexities of competition is keeping them on their toes
all the time. Today, success or failure of a business and the Organisation is dependent wholly
upon the Organisations ability to be flexible and to respond to the external changing
environment. Only those who are able to adapt to the changes and those who are able to
assimilate and learn from tomorrows technology are able to run the race. Digital technology has
changed the rules of business game and good Operation management Practices helps to bring a
big competitive advantage. Operations Management is a systematic approach to address all the issues
pertaining to the transformation process that converts some inputs into output that are useful and could
fetch revenue for the organization.
Operations management in Food Processing Industry :
Food processing and manufacturing businesses must operate in planned, organised and systematic ways if
they are to be effective, efficient and profitable. Operation management helps to provide best service
of food processing and accessories at lowest cost possible. This objective can only be achieved if each
and every operation within the organization is managed optimally. The various operations within an
organization that needs to be managed are financial operations, capital management and human resource
management. The three features that the organization concentrates on are quality, speed and satisfying
customers.
The following things are important parametric constrains the industry need to focus on ,
a) structure of organization & manufacturing practices of the industry;
b) relationship with farmers, supermarkets and wholesalers and the consumer marketplace;
c) market trends in meat/poultry/dairy consumption;
d) threats and opportunities;
e) influence of animal welfare legislation and issues;
f) issues of globalization and food security and sustainability.
Raw material availability:
The main strategies used by big player like McDonald have to maintain the inventory is JIT, Just in Time.
The idea behind this is to reduce the cost of inventory management. This also helps in providing fresh food
to the customers. This strategy is successful since the mangers in the restaurants do a daily stock count at
the end of the day to keep a track of the available things and things that have to be ordered. The food
processing units of future should be able to deliver in JIT.

Good manufacturing practice: Product specifications with process control, product control, production
documentation and production records; product recall systems can add good value to production.These
practices tracks the performance and also helps in improving the performance. The food processing
Industries in developed countries like UK,US are working heavily on this aspect.

Quality and food safety management systems: The concepts of quality management like quality assurance
quality control, concept of quality management systems concept of food safety systems, quality and food
safety system standards International Standards Organisation ISO 9001, Hazard Analysis Critical Control
Points (HACCP), ISO 22000, quality and food safety audit; cost of quality measurement and analysis are
been incorporated in food industries to deliver better qualities at lower cost. The quality concepts of
manufacturing Industries are now adapted by Food processing Industry also.

Process control: The need for reasoned design and control,systems approach to process design and
management; process specifications; statistical process control; packaging process control have urged the
Industries to adopt those practices. The use of key performance indicators are also been adopted to control
product improvement in certain Industries.

Process improvement: Production concepts like 3-sigma and 6-sigma process control; DMAIC; concept of
Lean Manufacturing; origins of Lean Manufacturing and Toyota Production System; Just in Time;
identification and elimination of waste; 7 wastes; Five S; Kanban; Poke-a-Yoke; Kaizen; automation;
standard operating procedures are also practiced.

Problem solving tools and techniques: They can recognize problems and turn it as the source of
opportunity by developing analytical and critical skills. The problem solving tools and techniques; brain
storming; Ishikawa diagrams; decision trees; critical path analysis, value stream mapping help to reduce the
mistakes and issues that is encountered in the processing industry.

Environmental management: With more concern towards environment food processing Industries will try
to bring more environmental friendly practices. The food processing plants now Identify and categorize
waste,waste management (containment, storage) and disposal; waste reduction; water balance; water
management and reduction of use; effluent management and treatment are managed now. Getting a ISO
14000 with environmental audit are must to Industries of future. The concepts of tracking carbon foot
printing & measuring environmental impact are helpful to reduce waste due to logistics & supply chain.

The main challenge in these industries are Quality and cost and by following the Operation
management practices the firms can Improve their Quality of Production without compromising
the cost.
