TRENDS
The more robust economic performance in the Philippines was instrumental in cultivating
value growth in consumer foodservice in 2012. With a high dose of optimism, the year saw
faster outlet expansion especially among chained players. Meanwhile, the faster-paced
lifestyle in the country coupled with Filipinos perception of eating out as an important social
activity for friends and families helped boost sales. By the end of 2012, sales from consumer
foodservice categories were estimated to reach Ps410.6 billion, 5% higher than the
performance reported in 2011.
Independent operators in the consumer foodservice industry are often located in stand-alone
locations. With the stronger position of chained players in the local market, a lot of
independent players are closing down due to tougher competition. This is notable especially
in categories such as full-service restaurants and cafs/bars. In 2012, stand-alone locations
continued to see slight decline in number of outlets as chained players are establishing
presence in high-traffic locations like shopping centres and retail centres. Value sales from
the category expanded by 3%.
Street stalls/kiosks has the most number of stand-alone outlets in consumer foodservice. In
2012, street stalls/kiosks accounted for 69% of all stand-alone outlets and 16% of value sales.
Most street stalls/kiosks are small eateries serving rice and viands called carinderias while
others feature fish ball stands and grills. Maintained by independents and serving small
neighbourhoods, these street stalls/kiosks are often located in front of the operators home
while others are at the road intersections. Other categories that have lots of stand-alone
outlets include cafs/bars and full-service restaurants, while fast food experienced the fastest
growth of 5% in 2012.
Because of the number of street stalls/kiosks operating in stand-alone locations, the average
value sale per transaction in stand-alone is lowest compared with other locations. It is
estimated that the average receipt for a stand-alone location amounts to Ps75.95, which is
nearly half of the second-lowest channel, namely travel, at Ps147.2. It should be noted that
consumers often buy small snack items in stand-alone outlets. However, some also buy full
meals from carinderias but still pay smaller prices compared with other consumer foodservice
outlet types because of the lower pricing strategy of these independent players. It should be
noted that a customer could often buy a full meal of rice, viands and beverages at a carinderia
for Ps45.

Lodging sees the highest value sales per outlet across all locations in the consumer
foodservice industry in the Philippines. Lodging is a semi-captive location, which often caters
to more affluent customers who are willing to pay a premium for products. It should be noted
that despite the more limited number of transactions in these locations, this location generates
the highest average receipt per transaction, which helps in bolstering its value sales per
outlet.
Consumer foodservice through retail follows lodging in terms of value sales per outlet. The
players in this location benefit from high footfall, most notably in shopping centres. Filipinos
often flock to shopping centres, not necessarily to eat but just to hang out with the family and
dine out. Retail is the choice of location for cafs/bars, and fast food and full-service
restaurants. In terms of outlets, retail accounted for 52% of outlets in cafs/bars, 45% of full-
service restaurants, and 56% of fast food in 2012.
In the Philippines, drive-throughs are available only for fast food chains mostly located in
stand-alone and travel locations. While eating out remains an important social activity for
families and friends, drive-throughs are appreciated by customers on the go, especially those
who work in urban areas or those who are on long journeys. Currently, drive-throughs serve a
niche and are not so significant. One of the most interesting developments in drive-throughs is
the opening up of a Starbucks drive-through in 2010. The success of its outlet encouraged the
brand to put up more drive-throughs within Metro Manila to serve the needs of on-the-go
customers.


COMPETITIVE LANDSCAPE
Among non-standalone locations, retail locations contribute to the largest portion of sales to
the consumer foodservice industry. Retail locations tend to be centrally making it easily
accessible to the public, making it the preferred location among consumer foodservice
businesses. Consumer foodservice through travel is becoming an important location for the
consumer foodservice industry. Travel locations contributed to about 8% revenue for the
industry and also experienced the fastest value growth at 9% in 2012. The notable increase in
sales can be attributed to the growing domestic and international tourism in the Philippines.
Concessions are very common in lodging and leisure locations. Most concession operators in
the Philippines are small-scale, serving only a small number of customers. Concessions also
operate in captive locations, especially in universities and hospitals. However, the market is
very fragmented because players often capture only a specific institution, establishment, or
location.
In order to attract customers, most retail locations especially shopping centres, community
centres and neighbourhood supermarkets feature popular consumer foodservice brands. The
most popular chains often lease spaces in these locations, assured of the very high footfall. In
2012, the increased number of shopping centres built to accommodate growing disposable
incomes in key provincial cities further strengthened the position of branded outlets in retail
channels. Meanwhile, both branded and non-branded operators are present in travel, leisure
and lodging. Among these three, travel has the most branded operators followed by leisure.
The dominance of local brands in Philippine consumer foodservice makes them the most
dominant in all locations. It should be noted that local brands dominate in stand-alone
categories due to the large number of independent carinderias, ambulant vendors and
domestic 100% home delivery/takeaway brands. Local operators are also more visible in
locations such as retail and travel, which also host independent players and concessions.

PROSPECTS
The Philippine consumer foodservice industry is projected to enter into a steady albeit slower
growth period in the next five years. Its constant value CAGR is set at 2% and will be
stimulated by the upbeat economy and faster-paced consumer lifestyle. The market will also
benefit from the growing number of middle-income consumers who are more adventurous and
are willing to try out other food offerings in the market. As Filipinos lifestyles become more
fast-paced, consumer foodservice categories such as 100% home delivery/takeaway and
street stalls/kiosks will continue to provide affordable food items for busy housewives.
Stand-alone outlets will continue to contribute to the largest portion of outlets in consumer
foodservice. Out of the 84,500 expected by the end of 2017, 54% of these will be accounted
for by free-standing outlets, most of which will be street stalls/kiosks, 100% home
delivery/takeaway and cafs/bars. Retail will be the second most sought-after location and will
represent 32% of total outlets.
Consumer foodservice through lodging is expected to report the fastest outlet growth over the
forecast period. The vibrant local tourism in the country will stimulate the establishment of
more lodging locations in key tourist spots. More consumer foodservice operators will be
flocking to hotels and motels in order to accommodate tourists. Outlet CAGR in lodging is
estimated to be at 2%.
Retail will also be posting healthy outlet growth in the next five years with a CAGR of 1%. It is
expected that the retail industry will continue to enjoy promising growth as huge chains such
as Puregold Price Club Inc, Robinsons Retail Group and SM Investments Corp look to
expand into promising neighbourhoods in Metro Manila and key cities in the provincial area.
Meanwhile, travel locations will also benefit from the vibrant tourism industry as well as the
governments effort in improving the transportation infrastructure in the country.
Major chains in the Philippine consumer foodservice industry are projected to take advantage
of consumers increasing spending on eating out through expansion strategies. It is expected
that operators will seek retail locations because of the high footfall. However, convenience
stores fast food brands such as Ministop and 7-Eleven will be keener on building stand-alone
stores in Northern Luzon.
