If you can, soak your millet with a pinch of salt in a covered bowl,
overnight or in the morning before you head out for the day. Rinse
and drain.
Add the millet to a small pot over medium heat and lightly toast the
grains for 1 to 2 minutes. Then, if your millet has been presoaked,
add 1 cup of water. If it hasnt, add 1 cups of water.
Cover and simmer over low heat for around 15 minutes if presoaked,
or 20 minutes if not, until the millet has absorbed the water (but
isnt too mushy!) Let it sit in a pot off the stove for around 5 more
minutes until its fuffable.
Cut the asparagus into small pieces. (Chefs tip: Before you chop the
asparagus, grab with your hands and break. Theyll naturally break
off at the point where only the edible and delicious tips remain
magic!) Peel and chop the onions. Peel or wash the carrots, then
grate. If youre using fresh garlic, chop into small pieces or thin
slices. If youre using regular garlic, peel and grate.
In a small pot, heat the coconut oil over medium heat. Add the
onions and saut for 1 to 2 minutes, until the onions become
translucent. Add the carrots, asparagus, spinach, peas, and any
other seasonal veggies you wish, and saut for just around 1 minute,
so they are tender, but still quite crispy. Turn off the heat. Add the
millet and mix together so the millet becomes warmed, but not hot
or mushy. Top with the arugula and fresh herbs and, just before
serving, mix in the lemon juice, olive oil, apple cider vinegar, and
nutritional yeast. Add salt/pepper to taste.

gluten-free and easily digested. Its also a great source of carbohydrates,
protein, vitamins B1, B2, B5, A and C, calcium, potassium, magnesium, sodium,
fuoride, silica . . . okay, Ill stop. Millet does everything you can imagine,
other than perhaps washing your dishes when youre done eating. (If you fnd
a grain that does this, please send it my way.) Millet is a beautifying food,
thanks to silica, which strengthens the nails, hair, and skin.
Millet on its own doesnt have much taste, but its the perfect food to highlight
whatever veggies or sauces you mix in.
