Recipe Ideas based on Survey Results,

Limitations & Criteria for Success

Ingredients:
1 boneless skinless chicken breast halves
1/4 to taste salt and pepper
1/8 cup Italian breadcrumbs
1/4 egg, beaten
1 teaspoon butter
1/2 cup spaghetti sauce
1 slice mozzarella cheese
1/4 teaspoon grated parmesan cheese

Method:
1. 1. Pound chicken to flatten.
2. Salt and pepper to taste.
3. Dip chicken in egg; then in bread crumbs.
4. Fry in butter in hot skillet, turning and browning for 5. 10 minutes or until chicken is done.
6. Remove from skillet.
7. To skillet add spaghetti sauce.
8. Heat thoroughly.
9. Add chicken.
10. Place slices of mozzarella on top of chicken.
11. Sprinkle with parmesan.
11. Cover and cook until cheese is melted.
12. Serve with a side of spaghetti.

Chicken Parmesan is my dish of choice as it suits many of the results, gathered and evaluated in my
survey. It fits well when considering limitations and criteria for success. Chicken Parmesan has the
element of the favoured protein, chicken and also has the inclusion of spaghetti pasta and a bolognaise
based sauce in which people enjoy. Another benefit is that this recipe is can be classified as Italian
cuisine which pleases many. This recipe is also a suitable size portion for a main meal and is cooked in a
suitable preparation and cooking time for the situation. I have of an hour to create my dish and wash
up. This then gives me extra time and won't allow me to fall behind. Other alternatives to this dish could
be changing the bolognaise sauce to a creamy sauce or the type of pasta used. Ingredients such as
beans or carrot can also be added to create a different alternative. I will need to practice before hand
to assist me in preparing this dish as I have never made it or tested these skills before.

Ingredients:
2 skinless chicken breasts
1 tsp sunflower oil
2 Little Gem lettuces

2 tbsp low-fat crme fraiche or Greek yogurt
1 tbsp grated parmesan, plus a few shavings, to serve
Squeeze lemon juice
1 tsp caper, roughly chopped
2 thick slices of bread
1 small garlic clove, cut in half


Method:
1. 1. Heat a griddle pan. Rub the chicken with the oil, season with salt and pepper, then griddle for 7 mins
each side or until cooked through. Set aside to rest.
2. 2. Meanwhile, separate the lettuce leaves. Mix the crme frache, parmesan, lemon juice and capers
with 1 tbsp cold water, then season to taste.
3. 3. Toast the bread and rub with the cut side of the garlic, then crush the garlic and add to the dressing.
Slice the warm chicken breasts on the diagonal, then top the toast with lettuce leaves, sliced chicken
breast and a drizzle of the Caesar dressing. Finish with a few shavings of parmesan.
The open chicken Caesar sandwich is a simple and easy to make dish, allowing me to complete the dish
easily on time. This would be an ideal meal for people on the go or a basic lunch sandwich. Open
chicken Caesar includes many of the ingredients that people indicated they liked in my survey. This
includes the protein chicken, the favoured Caesar salad and enjoyed dressings such as lemon
juice. Although this dish is simple it can have many alternatives. Some alternatives include different salad
and dressings but also types of bread and techniques in ways it can be cooked e.g. Baked, stir fried. In
preparation for preparing this dish, I need to practice the skills of grilling the chicken and serving the
sandwich so it looks appealing.

CHICKEN AND PINE NUT SALAD-

Ingredients:
1/3 cup pine nuts
150g snow peas, trimmed, sliced lengthways
1kg smoked chicken, skin removed
3 green onions, thinly sliced diagonally
3 sticks celery, thinly sliced diagonally
1 small cos lettuce, leaves torn
1 tablespoon extra-virgin
olive oil
2 tablespoons lemon juice
crusty bread, to serve
Method:
1. Toss nuts in a small frying pan over medium heat until golden. Set aside.
2. Cook snow peas in a small saucepan of boiling salted water for 15 seconds. Drain. Refresh in cold
water. Drain. Pat-dry with paper towels.
3. Remove chicken flesh from bones. Slice into 1/2cm-thick pieces. Place into a bowl.
4. Add nuts, snow peas, onions, celery and lettuce to chicken. Drizzle with oil and juice. Toss to combine.
Serve with bread

Chicken and pine nut salad also is easy to prepare and make in a school situation. It is of a suitable size
portion and quick to make. Positives in this dish is that chicken is used and salad which is a favourite in my

survey. Pine nuts are also used which add flavour and are not classified as a nut because they are seeds
off a tree. This dish will be easy for me as I do have a skill in toasting pine nuts. This is demonstrated in my
cooking techniques video under independent research. Although I have limited skill on poaching
chicken so this can easily be replaced with the chicken being cooked differently such as pan fried. The
salad dressing can also be changed. For practice I may practice steaming chicken or different
techniques for improvement.

HONEY MUSTARD BEEF STIR FRY

Ingredients:
650g rump or topside steak
2 teaspoons vegetable oil
1 clove garlic, crushed
2 onions, cut into wedges
1/3 cup Dijon mustard
1/4 cup honey
250g green beans, trimmed
steamed rice, to serve

Method:
1. Trim the steak and cut into slices.
2. Heat a deep non-stick frying pan or wok over high heat until very hot.
3. Add the oil, garlic and onions and cook for 2 minutes.
4. Add the steak strips and cook for 4 minutes or until well browned.
5. Add the mustard, honey and beans and toss to coat.
6. Cook for a further 2-3 minutes or until the beans are just tender.
7. Serve with steamed rice, if desired.


Honey mustard stir fry appears to be a great dish to prepare, to ensure I please the people who
completed my survey. This dish is of a good size portion (medium) of which people wished for. I chose
this dish as apart from chicken many people enjoy beef and this dish creates variety. This dish can also
be changed with the addition of salads, chips or crunchy noodles. The beef flavour can also be
changed with sauces such as Chinese beef or Satay to create more variety. A disadvantage to this dish
is that time will be pushed because cooking time is quiet long. Although if I am well prepared this dish
could be easily achieved.



SPAGHETTI WITH GARLIC BUTTER AND BACON

Ingredients:
60g unsalted butter, softened
2 garlic cloves, crushed
2 teaspoons lemon juice
1/4 cup chopped basil, plus extra to serve
400g spaghetti
1 tablespoon olive oil
4 bacon rashers, chopped
500g green prawn meat, roughly chopped


Method:
Pound butter, garlic, lemon and basil in a mortar and pestle (or mash with a fork in a bowl) to combine
well. Set aside.
Cook pasta in a large pan of boiling water to packet instructions.
Meanwhile, heat a small amount of oil in a shallow fry pan over medium heat. Cook bacon, stirring, for 4-5
minutes until starting to crisp. Remove and place on paper towel.
Return pan to heat and melt half the butter. Add prawns and stir for 2-3 minutes until just cooked. Drain
pasta, then add to frypan with bacon and remaining butter. Toss, season and serve with extra basil.


Spaghetti with Garlic butter and bacon is categorised under the Italian cuisine in which many people
enjoy I discovered after evaluating my survey results. This dish also includes all the healthy aspects and
nutrients in a dish. This dish is also limiting me in time as it takes 25mins to cook leaving limited time to
serve and clean up efficiently. In preparation I will need to be prepared so I can complete the dish in the
time provided. It is of a good portion size and can easily be varied with other ingredients such as beef,
chicken and different flavoured butters.
