8 oz sharp cheddar cheese, grated

3 Tablespoons of unsalted butter, room temperature


1 Tablespoon vegetable shortening
1/2 teaspoon salt
1/4 teaspoon paprika
1 cup flour
2 Tablespoons ice water
oarse salt for sprinkling
Process
1! ombine the cheese, butter, shortening, and salt in the bowl of "our mi#er fitted with the
paddle attachment or into a food processor fitted with a dough attachment! The mi#ture
will be crumbl"!
2!$lowl" add the flour mi#ing to combine! $lowl" add the ice water! %ou ma" add a few
more drops of water to help it come together but be careful not to add too much as "ou
don&t want a wet dough!
3!'ivide the dough into 2 discs and wrap in plastic wrap! hill for at least 3( minutes!
4!)reheat oven to 3*+ ,!
+!over "our work surface with a silicone mat or a piece of parchment paper! -oll each disc
to be a 1/8 inch thick rectangle! .sing a pastr" wheel or pizza cutter, cut into 1 inch
s/uares! .se a toothpick to punch a hole into the center of each s/uare! $prinkle the
crackers with salt prior to transferring to a baking sheet! 01f "ou have difficult" separating
and transferring the crackers onto the baking sheet, place the mat back into the
refrigerator for 1( minutes2
3!4ake for 5613 minutes or until puffed and 7ust browning around the edges! 8ust be
careful not to let them get too dark, it can happen /uickl"!

2!1n a large bowl, mi# together the flour, sugar, brown sugar, and salt! 9ake a well in the
center and add the oil and "east mi#ture!
3!<nead the dough until smooth, about * to 8 minutes or use a stand mi#er with the hook
attachment! =hile the dough is coming together, watch it to see if it is looking dr" so "ou
can add a tablespoon: of water! 01 added about 2 tablespoons2
4!;ightl" oil a large bowl and place the dough in the bowl! ;ightl" coat the dough with oil
as well! over with plastic wrap and let rise in a warm place until doubled in size, about 1 >
2 hours!
+!=hen the dough has risen, preheat "our oven to 4+( degrees!
3!)ut the risen dough on a lightl" floured surface and divide into 12 e/ual pieces! -oll each
piece into a rope 0do not re6knead2 and cut into 1? > 1 1/2? pieces!
*!@nce all of the dough is all shaped, dissolve the baking soda in ver" hot water in a bowl!
8!'ip each pretzel bite into the baking soda mi#ture and place on a generousl" greased
baking sheet! $prinkle with the ever"thing bagel topping!
5!4ake in preheated oven for 368 minutes, until lightl" browned! $erve warm with dip or
mustard! 4est the first da"!
