YEAST BREAD & ROLLS

Inspired by my favorite Korean lady chef at Maangchis Real Korean Cooking!


[Makes 2 loaves of bread.]

Ingredients: Flour, Milk, Chicken Eggs, Egg Whites, Unsalted Butter, Salt, Sugar,
Yeast. Variations: Green Spanish Olives, Minced Garlic, Purple Shallots, 4 Cups
White Flour, 2 Cups Whole-Wheat Flour [*I use Bobs Red Mill products]. The darker
loaves shown are 1:1 on flour or 3 Cups White Flour and 3 Cups Whole-Wheat Flour.
Ideally you should use a large heavy pan with lid and mix all ingredients by hand or
with chopsticks. Sugar also proofs yeast, so if your mixture is not warm enough,
maybe proof your yeast by mixing it together separately with the sugar and a little
warm water, then add that component to the main mixture.
2 Sticks of Unsalted Butter Melted, then add...
2-Cup Milk [Buttermilk is okay, but it might change the consistency], then add...
8-Tablespoons of Sugar, then add...
1-Teaspoon of Salt, then add...
4-Large Chicken Eggs Beaten, then add...
8-Teaspoons of Yeast, then add...
6-Cups All Purpose Flour, then cover...
Let Rise 1 Hour until Doubled in Size.
Deflate and Kneed 1 Minute, then cover...
Let Rise 30 Minutes.
Deflate and Kneed on Floured Surface.
Divide Dough and form into Loaves within Greased and Floured Loaf Pans or Roll
into Ropes, Coil, and Place on Flat Baking Pan, then cover...
Let Rise 1 Hour.
Brush Tops Gently with Egg Whites [optional].
Bake at 350F until Golden Brown and Brush with Melted Salted Butter. Depending on
your oven and whether you are baking rolls [30-45 minutes] or loaves of bread [50-60
minutes]. When making olive bread, allow a full [60 minutes] to remove excess moister
content.

Yeast Bread: 1:1 Flour Balance using White and Whole Wheat with a
doubled quantity of this recipe. Baking four loaves works best for me.

Olive Bread: 5 Cups of White and 1 Cup of Whole Wheat Flours.

Rolls: 6 Cups of White Flour
