INTRODUCTION

I. THE COMPANY PROFILE

The Arce Family business started in 1935 when Don Ramon Arce, Sr.,
father of Don Mauro, established the Ice Cream Business. Since then, Don Ramon
has espoused the policy that THERE IS NO COMPROMISE FOR QUALITY.
Don Mauro not only handed this philosophy down to the third generation of Arces
running the business, but added his own principle as well. MACHINES DON'T
MAKE MIRACLES, WHAT YOU PUT IN THE MACHINES IS WHAT
COMES OUT.
It is therefore guaranteed that all the ingredients that go into each and every
product of the ARCE GROUP OF COMPANIES are very well chosen. Unlike
other manufacturers who sacrifice the quality of their products when prices of raw
materials increase, the Arce Family rejects delivery of ingredients that do not pass
high quality standards, no matter how inexpensive.

III. HISTORY
The Arce Dairy Ice Cream Story

The manufacture of ice cream from fresh
carabaos milk and fruits was originally
conceptualized by Don Ramon Arce, Sr. and
Doa Carmen Arce in 1930.
Its first plant, established in 1935, was
situated in Novaliches, Quezon City. In 1938,
demand for the ice cream was so high that the
plant had to be moved to Lepanto St. in Manila,
making it more accessible to the consumers. The
existing plant at Selecta Drive in Balintawak, Quezon City under the stewardship
of Mauro C. Arce, Sr. was established in 1952.
In January 1990, the third generation of Arces outvoted the family of
Mauro C. Arce, Sr., and the brand name Selecta Dairy Product was sold to RFM
Corp.. However, the ice cream business and the
dairy plant were retained by the family of
Mauro C. Arce, Sr. lock, stock, and barrel.
The Arce Dairy type of ice cream, the
all-natural ice cream, has captured the hearts
of Manilanians through the decades of its
uniqueness and its old fashioned manufacturing
process. Tenacious requests from prominent

clients, captive loyal followers and food connoisseurs, demand for its return.
In January of 1995, the dairy plant resumed operations, and the family of
Mauro C. Arce, Sr. renamed the product Arce Dairy Ice Cream. This name was
so chosen because no other company can just call their product dairy ice cream
unless the butter fat content comes from milk. Only carabaos milk can pass the
butter fat content requirement for ice cream naturally, without any add-ons. On top
of this, the machines used in the plant at Selecta Drive allow the use of solid
chunks of fresh fruits for flavouring the old fashioned way, unlike the mass
production machines which use puree.
While the way of making this gourmet type of ice cream remains almost
unchanged for 7 decades, the corporate name has had several changes to wit; Arce
and Sons Co. till 1949; Arce Sons & Co. till 1977; Arcecon Dairy Products, Inc.
till 1990, and now the present being the Arcefoods Corporation under the
chairmanship of Mauro C. Arce, Sr..
Arcefoods Corporation has been honoured the Hall of Fame Award as
Outstanding Ice Cream Manufacturer by the Consumers Union of the
Philippines while ArceDairy Ice Cream has been awarded the 1999 Dangal Ng
Bayan Outstanding Ice Cream Product and the New Millennium Excellence
Award Most Outstanding Ice Cream Brand by the Parangal ng Bayan Awards
Foundation.

II. ROLE OF OPERATIONS MANAGER
The role of Operations Manager (OM) is to be responsible for all plant
manufacturing operations and improvements directing the technical performance
of raw materials receiving, inventories, distribution, processing, packaging,
sanitation, quality, maintenance, etc. An operations manager typically ensures
smooth operation of various processes that contribute to the production of goods
and services of an organization. Operations managers set goals and objectives and
establish policies for various departments in the organization. As stated in the blog
of Jared Lewis, the following are the core responsibilities of an Operations
Manager:
Policy Formulation
Formulating policy is one of the core duties of an operations
manager. Companies must operate and function on a daily basis within a
prescribed set of guidelines. These guidelines are generally established by
operations managers. These can include how different departments within the
company or organization communicate and cooperate with one another. Policies
can also include disciplinary actions taken when employees break company rules.
Planning
The planning of various company operations and activities is another
major concern of the operations manager. Operations managers tend to determine
which products are bought and sold, what prices they are bought or sold for and to
whom they will be marketed. The operations manager also helps plan and
coordinate activities between various departments such as determining what types
of sales promotions the company will engage in.

Controlling major company resources is yet a third major function of
an operations manager. Operations managers oversee the implementation of
payroll policies and procedures, how much employees are paid, how funds are
allocated for benefits packages and how other funds are spent to keep the company
operating smoothly on a day-to-day basis. Operations managers regularly review
financial statements to ensure that the company is operating as efficiently and as
profitably as possible.
Communication
A final core responsibility of an operations manager is
communicating with other management professionals within the organization to
keep the company running smoothly, and communicating with other companies
and organizations with which the company does business. Operations managers
are responsible for putting together reports and financial statements that are
essential for other top executives within the company or organization.

CHAPTER FOUR
PRODUCTION PROCESS
I. PROCESS CHART

Hardening
Before storage and shipping, the ice cream must be hardened to a temperature of -23C. The cartons are then stored in refrigerated warehouses until they are shipped to retail
outlets.



Packaging
The ice cream is then put in the ice cream cans manually, flatens it and covers it with plastic film and the main cover.
Adding Flavor to the Ice Cream
The ice cream mixture is pumped to stainless steel . Flavorings are piped into the vats and blended thoroughly.
Freezing
The mixture is piped back to the pasteurizer where cold water, approximately 1C, flows on one side of the plates as the mixture passes on the opposite side. In this manner,
the mixture is cooled to 2C in the batch freezers.
Pasteurizing
The blended mixture is piped to the pasteurization machine, which is composed of a series of thin stainless steel plates. The cold milk mixture is piped through on the other
side. The water warms the mixture to a temperature of 180C, which effectively kills any existing bacteria.
Homogenizing
The blended mixture undergoes the process where the milk fat globules are reduced in size and dispersed uniformly through the rest of the milk.

Blending
The milk arrives at the ice cream plant in their dairy farm. The milk is then pumped into 5,000 gal storage silos that are kept at 2C. Pipes bring the milk in pre-measured
amounts to 1,000 gal stainless steel blenders. And mixing the secret ingredients of the ice cream is also done in this process.

CHAPTER SIX
PRODUCTION CAPACITY
Arce Dairy Ice Cream manufactures its ice cream depending on the
purchase orders (P.O.) from its customers that the company received. Moreover, it
has a production capacity of a minimum of 80 batches per day and a maximum of
100 batches.
Generally, one batch of production contains 10 gallons of flavoured ice cream
with its special ingredients. Therefore, the total production capacity of the Arce
Dairys Ice Cream production per day is summarized below:

Minimum of 80 batches:

80 batches 10 gallons = 800 gallons of ice cream produced each day

Maximum of 100 batches:

100 batches 10 gallons = 1,000 gallons of ice cream produced each day

Chapter 7

Supply Chain/Channel of Distribution is a
concept that describes the movement of goods
and information between suppliers and
consumers. The information in a Supply Chain
relates to the amount of demand that exists for a
product. Demand is a measure of the ability or
desire of consumers to make a purchase.
Some products have Supply Chains that are far more complex. Consider ice
cream and the way in which demand for it can change rapidly from day to day.
While huge volumes of ice cream may be sold when the weather is hot, it might be
completely ignored during a cold spell. In business, such large and frequent
changes in demand are extremely difficult to cope with unless a well-managed
Supply Chain is put in place.

FINAL STOP
The company want to make sure that everything is as fresh as possible so they constantly monitor the
cooling systems in the ice cream case and remove products that have reached the standard sell by
date.

INSPECTION
Processing facilities undergo a variety of inspections throughout the production, packaging and
distribution process to ensure that the cans are safe.
TESTING
Milk, fresh fruits and cans is also tested to determine if it has been altered. This practice ensures
consumers receive the quality ice cream that produce in a natural way.
SANITATION AND PACKAGING
To create products that meet customer desires, processors follow milk hauling, pasteurization,
equipment sanitation, labelling the cans and ice cream packaging procedures.
THE PROCESSOR
When the tanker truck arrives at the company, the milk and friuts are tested before it is unloaded. If
it fails any of the multiple tests performed is immediately discarded.
THE HAULER
The hauler checks the temperature of the milk and fruits, inspects it, take a sample of it before he
pumps and put it into a stainless steel insulated trucks.
THE FARMERS
Milk and fruits on a farm enters into a sanitized system directly from the carabao and the fuit-
bearing trees and travels through more sanitized hoses and pipes into milk tanks and ultimately
containers for consumers..

II. SUPPLY CHAIN MANAGEMENT
The aim of the company is to facilitate the movement of goods in a manner
that is appropriate to their industry. The degree to which supply chain
management is used depends largely on the company.
The procedures needed are far more advanced systems for products like ice
cream that requires careful handling, have short shelf lives and/or for which
demand changes rapidly.
Food like fresh ice cream are particularly challenging in this regard. Indeed,
such products are often called Fast Moving Consumer Goods (FMCG) because of
their special characteristics. FMCG are purchased in large quantities, frequently
replenished, highly perishable, required over a large geographic area Supply Chain
Management
The company has adopted the End-of-Month system, to achieve higher
operational efficiencies and reduce inventory carrying cost. To achieve this, the
company has given preference to locally based suppliers. Over 75% of the
company's suppliers are located within reach.

TOTAL QUALITY MANAGEMENT
Arcefoods Corporation has been honoured the Hall of Fame Award as

Quality Control
Total Quality Management (TQM) refers to management methods used to
enhance quality and productivity in business organizations. TQM is a
comprehensive management approach that works horizontally across an
organization, involving all departments and employees and extending backward
and forward to include both suppliers and clients/customers.
Every mixture is randomly tested during the production process. Butterfat
and solid levels are tested. The bacteria levels are measured. Each mixture is also
taste-tested.
The production department also carefully monitor the ingredients that they
use in the production process. The milk, as it arrives in the production plant is
carefully blended, pasteurized and homogenized to ensure the cleanliness and
freshness of the main ingredient. It also passed numerous screening processes
before proceeding to the next stage of the cycle.

SUMMARY
The Arce Family business started in 1935 when Don Ramon Arce, Sr.,
father of Don Mauro, established the Ice Cream Business. Since then, Don Ramon
has espoused the policy that THERE IS NO COMPROMISE FOR QUALITY. It
is therefore guaranteed that all the ingredients that go into each and every product
of the Arce Dairy Ice Cream is very well chosen. Unlike other manufacturers who
sacrifice the quality of their products when prices of raw materials increase, the
Arce Family rejects delivery of ingredients that do not pass high quality standards,
no matter how inexpensive.

Arce Dairy Ice Cream is known to be the oldest Ice Cream Manufacturing
here in the Philippines, though it is not that popular as Nestle, Selecta and
Magnolia. They say that it is not so popular because of its price. But the Arces
defends their product as they say that it is delicious and high quality even though it
is expensive.

The process in doing their main product includes blending, pasteurizing,
homogenizing, adding the flavour and freezing. A simple and same as the general
manufacturing of ice cream but as according to them, every step that the milk
undergoes has its own uniqueness which brought it out to be the best ice cream in
the Philippines.
