ESTIMATION OF PROTEINS, FATS AND CLEARNESS OF THE FRESH MILK OF COW AT MILKWEED KABI IN

Estimation of milk must do it on base of contain of total fats and proteins and according to the clearness, total number of mikroorganism and cells elements. This manner has advantage because
increase the quality of milk and their products.the milk take from to locality(village) : Perlepnica and Pogragja. The milk take at December 2012 and july 2013. At december at first locality Perlepnice
the cow fed by silage and fodder, in their milk the percentage of fat are 4.35% and for proteins are 3.48 %, while at second locality Pogragje, where the cow feed by hay, the percentage of fat and
proteins are low, the fats are 3.75 % and for proteins are 3.25 %. At july at first locality Perlepnice the cow fed by silage and fodder, in their milk the percentage of fat are 3.75% and proteins are
2.85 %, while at second locality Pogragje where the cow feed by hay, the percentage of fat and proteins are low, the fats are 2.35 % and for proteins are 3.05 %. Filtration of milk, done by fermer ,
will affect in decrease of microorganism for 3-5 time, while the number of somatic cells will decrease for 28-35 %. Filtration of milk done by milkweed Kabi the number of microorganism decrease
1.5- 2 time, while the somatic cells decrease for 15=20 %.

Introduction
Milk is with white color, nontransparet, greatfully test and characteristic aroma depends
of animal species. It is food product with completed substrat for calfs of mammalian and
for man for all age, because contain high amount of material food(, 2003).
Milk present good substrat for developing of bacteria, because the milk contain
proteins, carbohydrates, minerals and vitamins. Milk in normal conditions has pH 6.4-
6.8, while oxido-reducing potencial is 0.30 volt, and this offer good condition for
developing of microorganism.
Material and methods

Abstract

Samples of milk taken in village Prlepnica and Pogragj, nerbay Gjilani city. The samples taken
during winter season 2012 and july 2013..
Amount of milk for analysis it was 500 ml. Analysed the physico-chemical and microbiological
parametrs
Analysed microbiological parametrs are : total microorganism
Analysed Chemical parameters are : fats, proteins, density, point freezing, temperature,
conductivity, lactosis, pH and percentage (%) of water.
Results and discussion
At table 1 we present the results obtained during the winter (month december) season
2012, in 2 village Prlepnic and Pogragj.
As it show fat at milk cow from village Prlepnica (4.35 %) dominate compared with the
milk cow from village Pogragj (3.75 %) and with standard value(3.2 %). Dry
material(SNF) it was higher at milk from village Prlepnic (9.12 %) compared with milk at
Pogragj (9.06%). Proteins also it is higher at milk cow from prlepnic(3.48 %) compared
with milk from Pogragj(3.25 %) , compared with proteins(2.85 %) at milk in village
Prlepnic.
Conductivity it was higher at milk from Prlepnica(3.85), while at milk in village Pogragj is
3.62.

At table 2 we present the results obtained during the summer(month july) season 2013, in 2
village Prlepnic and Pogragj.
As it show fat at milk cow from village Prlepnica (3.75 %) dominate compared with the milk cow
from village Pogragj (2.35 %) and with standard value(3.2 %). Dry material it was higher at milk
from village Pogragj (8.41%). Proteins also it is higher at milk cow from Pogragj(3.05 %) ,
compared with proteins(2.85 %) at milk in village Prlepnic.
Conductivity it was higher at milk from Prlepnica(4.15), while at milk in village Pogragj is 3.88 .

Results of this investigation presented in table 1 ,2 (physico-chemical parameters) and table 3,4 (microbiological parameters).

At table 3 we present the microbiological results obtained durin the winter season 2012 and summer season 2013.
As it show at table 3, the total number of microorganism and number of somatic cells in milk, it is higher before filtration compared with milk after filtration, during winter and summer season.

Same results obtain and during the summer season 2013, where the number of microorganism and number of somatic cells it is higher before filtration compared with the number after fitration

Conclusions Refrences:

According to the results we can conclude as below :
1. The percentage of fats in milk cow from village Prlepnic (4.35 %) during wintr season
2012 it is higher compared with milk from village Pogragj(3.75 %) and standards value(.3.2
% )
2. Value of proteins it is higher during winter season 2012, in both village, compared with
summer sesoan 2013.
3. Dry material it is higher during winter season 2012, in both village, compared with summer
sesoan 2013.
4. Value of lactosa it is higher during winter season 2012, in both village, compared with
summer sesoan 2013.
5. Number of microorganism it is higher before filtration compared with number after filtration
6. Numebr of somatic cells it is higher before filtration compared with number after filtration
