RESUMEN
Inicialmente se realiz una prctica simple que consisti en colocar una pieza del
alimento (muslo de pollo) en una sartn a diferentes niveles de fuego para
observar las propiedades sensoriales en crudo y en cocido, como color, olor,
textura y jugosidad.
Posteriormente, se prepar la receta Pollo Virginia, para la cual se emplearon
muslos de pollo, rodajas de jamn, mantequilla, leche, harina de trigo, azcar,
pimienta y sal. A travs de esta receta se pudo reconocer el mtodo de
transferencia de calor por conveccin en coccin mixta, y a partir del producto
final, analizamos las caractersticas organolpticas del alimento, el valor
nutricional, aporte calrico, rendimiento o merma del producto, el tamao de las
porciones por grupo etario segn las Guas alimentarias basadas en alimentos, y el
costo de la preparacin total y por porcin.

ABSTRACT
The present report is about the experience in the laboratory with preparations of
poultry, through which it was possible to identify the effects of heat treatment on
food and recognize the energy and nutritional content that provides the recipe
made.
Poultry meat, in this case chicken, is a widely consumed food in many countries.
Its nutritional intake, especially protein, many times it makes an essential part of
the important dishes on a set menu.
Initially, it was made a simple practice that consisted of placing a piece of food
(chicken leg) in a pan at different levels of fire, in order to observe the sensory
properties such as color, smell, texture and juiciness in the raw and cooked way.
After that, it was prepared the recipe 'Chicken Virginia', for which it was needed
some chicken thighs, sliced ham, butter, milk, flour, sugar, pepper and salt.
Through this recipe, we could recognize the method of heat transfer in mixed
convection cooking, and from the final product, we analyzed the organoleptic
characteristics of the food, nutritional value, caloric intake, food performance, size
of the servings per age group according to Guas alimentarias basadas en alimentos,
and the cost of the total preparation and serving.
Finally, it can be concluded that poultry meat is rich in nutrients, in which the
protein content is highlighted. It is important to identify the different ways to cook
chicken, in order to obtain higher performance and lower loss of nutrients.

Procedimiento:
1. Seleccione un muslo con piel de pollo.
2. Lave.
3. Limpie.
4. Pese, anote.
5. Evale color, jugosidad y textura.
6. Calienta una sartn.
7. Someta a fuego lento hasta que tenga apariencia de cocido.
8. Observe la apariencia y jugosidad a medida que avanza la temperatura.
9. Tome el tiempo de coccin.
10. Pese el producto frio.
11. Realice la misma experiencia a fuego moderado y alto.
Elaboracin de Pollo Virginia.
Para el proceso de la elaboracin de Pollo Virginia tenga en cuenta las
siguientes recomendaciones:
