On this page you will find the heart of our Whisky program; single casks or extremely small batch vattings sought out by us in order
to provide a singular expression of some of the worlds best Whiskies. Our philosophy is to hunt down barrels that provide a unique
flavor that identifies with the Distillery but does NOT merely mimic the blenders final concoction.

FH Glenfarclas Ferd in the Spey (Speyside, Scotland)

Specs: Single Cask # 6282, Special Release 2000, 2nd Fill Sherry, Non-Chill Filtered
Age:10yrs 6mos
ABV: 46.0%
Tasting Notes: Well use the description from the Independent Spirits Journal, September 2012, One of only 377 bottles.
Pretty orangey/topaz color; unblemished clarity. Opening aromas are gently sweet, slightly sherried & very delicate in
their fruity manner really lovely & engaging; another seven minutes of air contact release fragrances of Christmas
cake, sugar cookies, sweet breakfast cereal, malt & orange peel. Entry highlights the sherry sweetness and the cereal;
midpalate is all about fruit, in particular, orange peel & chocolate covered cherries. Concludes as gracefully & sweetly
as the entry & midpalate, w/ oodles of dried fruit flavor & charm. Another classic from this under-appreciated
distillery. *****/Highest Recommendation.
Suggested neat w/ a few drops of water.

FH Kilchoman Barrel Room Option (Islay, Scotland)

Specs: Single Cask, 1st Fill Sherry, Non-Chill Filtered


Age: 5yrs 6mos
ABV: 57.4%
Tasting Notes: So named as it was selected from a group of Whisky enthusiasts in our Barrel Room, this cask is
exceedingly rare & shows how exceedingly complex a young Islay Malt can be when married w/ Sherry. Whiffs of
smoke race up to greet you with malted barley/hay, toffee, honey & sherried fruits. Carefulthe peat smoke & sherry
work very well to mask the alcohol on this monster. Smoke lingers throughout over some barnyard haystacks, figs,
fruitcake & holiday spices.
Neat w/ water to taste.

FH English Whisky Co. Peated (Norfolk, England)

Specs: Vatting Casks 108,166, Non-Chill Filtered


Age: 4yrs 7mos
ABV: 46.0%
Tasting Notes: Nose is filled with sweet biscuits, ginger, white pepper and subdued smoke. Clean at first with the sweet
malt showing. Then the peat rises throughout the palate as expected with pepper, sweet, creamy chocolate cereals and
citrus flavors. The finish is relatively clean and lingers with a complexity that belies this Whiskys age.

BINNYS English Whisky Co. Peated (Norfolk, England)

Specs: Vatting Casks 108,166, Non-Chill Cask Strength


Age: 4yrs 7mos
ABV: 60.9%
Tasting Notes: Were not cheating here! This is a Binnys Selection, but a collaboration of the same casks so were
putting it here instead of with all of the others. Oddly, this cask has some more upfront smoke on the nose than the
46% edition. Also, the creamy texture reveals itself more prominently along with the ginger notes.

FH Buffalo Trace (KY)

Specs: Single Barrel
ABV: 45%
Tasting Notes: It took us longer than most to find our first bottling of Buffalo Trace. The nose reminds
us of Eggnog with some popped corn showing through the heavy vanillans. This is unabashedly a
creamy BT, with buttered corn coating the palate with a return to the spice of the nose leading into the
slightly cherry and orange peel finish.
Works best as a sipper shot or over ice.
FH Henry McKenna (KY)

Specs: Single Barrel #1001, Bottled in Bond
Age:10yrs 3mos,
ABV: 50%ABV
Tasting Notes: This nose is about wood & the spice therein. Classic caramels reside & follow through to
the tasting. Warming on the tongue & spicy throughout w/ some pencil shavings, a touch of cocoa &
finally some dark red berry fruits. Zesty & refreshing on the finish.
Suggested w/ one or two cubes.
FH Four Roses II Cask Strength (KY)

Specs: Single Barrel, OESQ
Age: 9yrs 3mos
ABV: 60.4%
Tasting Notes: We choose floral yeasts when choosing Four Roses and look for Barrels showing some
tropical fruit. The perfumy esters greet the nose on this barrel with a hint of banana, toffee and baking
spice. Apple pie filling mixes toasted pecans, dark cherry and vanilla, fading into a smoky cinnamonbanana-creamsicle.
Water or two cubes.
FH Corsair Triple Smoke
NA/NA/$11
Specs: Single Barrel #N30-13-0345
ABV: 62.6%
Tasting Notes: Three smokes with peat at the fore, sweetness and vanilla. Buttery broad flavor and a
long finish.
