Sdecki Bartnik apiary is a family business, which is run by Anna and Janusz

Kasztelewicz, for whom beekeeping is more than merely an occupation- it is their

passion for the fascinating tradition of beekeeping. The farm is situated in Stre,
a town in the South of Poland, in the heart of the picturesque mountains of the
Beskid Sdecki. The apiaries of this nearly 2000-hive farm are all situated in the
region, an ecologically clean area allowing one to obtain top quality honey varieties,
both delicate springtime ones and the dark one such as honeydew.
The company was established in 1973, and from the first small scale operation, the
company went on to develop rapidly after 1989. All of Bartnik activities center
on beekeeping.
The apiary yields a variety of top quality honey and other bee products, such us
pollen, royal jelly, wax, bee glue and beebread. To guaranty a high output, the bees
are rotated through many different pastures through honey production season.
Sdecki Bartnik apiary also deals in the purchase, purification, packaging and
sale of any and all bee products. Thanks to its well-equipped laboratory and highly
qualified technicians Bartnik can boast a world class standard for quality honey.
The Bartnik brand is a sign of quality within the EU as well as the USA.
Bartnik provides service to beekeepers all over Poland through the sale of industry standard equipment, regular trainings which are led by specialists within the
field of beekeeping and honey production; as well as through the sale of healthy
high quality queens, which are bread and incubated in the newly renovated brood
apiary.
Since the turn of the millennium the Beekeeping Museum has been the crown
jewel of the company. The museum, which is open to visitors year round, exhibits
a diverse variety of hives made from logs, figures and box hives, as well as antique
beekeeping equipment. It is here that the guests gain insight on the life of a bee
within colony and the apiculture of yesterday and today. Teenagers who visit Sdecki Bartnik make friends with bees during beekeeping workshops and actively
learn about the secret world of bees.

Moreover, for several years now, the company has been publishing books and making films about bees, including handbooks for specialists, books bout value of honey in maintaining a healthy lifestyle, albums, reprints and even training films.

Every year the bee farm organizes Biesiady u Bartnika [Feasts at Bart-

nik] on the first Sunday of July, drawing thousands of bee and honey fans. Academic lectures, presentations of the newest achievements, numerous events to savour,
fairs and artistic events are meant to popularize both beekeeping and the region.

Sdecki Bartnik participates actively in prestigious trade and fair events

in Poland and abroad, e.g. in MTP - Pozna, SIAL - Paris, Grne Woche Berlin, INTER MID Moscow, ANUGA Kln. Since 1995 they have
successfully participated in the International Congress of Beekeepers Apimondia,
winning: golden medal for the album Hives and apiaries in Poland, silver medal
for mead granted in Durban in South Africa and golden medal for the stand and
bronze medal for the film about beekeeping granted in Antwerp.
The dynamic development of the company brought the title Agrobusinessman
of 1998 to the owner of the business.
In 2005 our company received the Economic Price of the Pesident of Poland for
the best farming enterprise, and in 2006 was honoured by the Polish Promotional
Programme Foundation Poland Now.

Carefully selected products, consistent striving for top quality of the pro-

ducts allowed the company to achieve the Top Quality Certificate of the European
Quality Institute, which was preceded by the 2001 implementation of the quality
management systems ISO 9001 and 14001, as well as the HACCP system.

Everything that Sdecki Bartnik deals in is subject to the strengthening

of the brand, propagating beekeeping, cultivating the best traditions of Polish forest
beekeeping via education and culture preservation.

Mixed-flower Honey
As the name itself indicates, this honey comes from nectar gathered by bees from different plants, both cultivated ones and those growing in meadows, forests, lowlands
and mountains. It is a light creamy colour, or sometimes pale yellow. It crystallizes
quickly, the colour turning to light grey or light brown. It has a characteristic
rather strong waxy aroma, dependent on the mixture of nectars brought to the
hive. The curative properties of honey depend on the plants the nectar has been
collected from, but only the bees know this for sure. Mixed-flower honey is
particularly suitable for people with allergies since it contains pollens that act
as antigens.

Honeydew Honey
Honeydew honey, from coniferous trees. Its colour can be grey green, brown, or
even black, depending on the tree species the honeydew is obtained from. It
crystallizes rather slowly, becoming lumpy in the process. Th e smell
is slightly spicy and the taste is mild and not very sweet. Honeydew
honey from coniferous trees has anti-infl ammatory, disinfecting,
expectorant and antibiotic eff ects. It contains more active substances, especially
biologically active iron, than nectar honeys. It is useful for upper respiratory
tract diseases and in cases of lowered immunity. It also supports the treatment of
rheumatic, skin and nervous diseases.

Lime-blossom Honey
This has a distinctive strong aroma that resembles the smell of a lime tree. The taste is
sharp, slightly bitter. In the liquid state, the honeys colour is greenish-yellow to light amber.
The intensity of colour and taste differ depending on the region the honey comes from. On
crystallizing, the honeys consistency is fine-grained and the colour becomes white-yellow
or golden yellow. Lime-blossom honey exhibits expectorant, diaphoretic,
antipyretic, sedative and antispasmodic properties. It is applied in the
treatment of acute and chronic diseases of the upper respiratory tract, the
throat and the sinuses, in throat infections and for bronchitis. Due to its
high antibiotic activity, it is also applied in urinary tract diseases, rheumatic
affections and neuroses.

Buckwheat Honey
Similarly to acacia honey, buckwheat honey contains a lot of fructose. Its colour is dark,
even brown. When stored for a long time in conditions exposed to light, it changes colour
to dark brown, even black. It crystallizes into coarse, hard crystals that sediment out
in fluid honey. The taste is sharp, even slightly burning. Buckwheat honey contains
a particularly large quantity of easily assimilable magnesium, therefore, it is recommended as a component of an anti-cancer diet. It is applied in the treatment of
circulatory system diseases, especially those of sclerotic origin, as well as in liver
diseases. This particular type of honey is recommended in cases of sight, hearing
and memory impairments. It also supports the cardiac muscle function.

Acacia Honey
It contains a large quantity of fructose, therefore it crystallizes very slowly. The colour of pure acacia honey is light creamy, turning neutral. White or straw-coloured
after crystallization. The taste slightly resembles that of acacia flowers. Fully mature
acacia honey is characterised by a higher content of sucrose than in other
honeys. Acacia honey is applicable in the treatment of chronic gastric and
duodenal ulcer diseases, of hyperacid gastritis, mucous membrane inflammations and spasmodic conditions of the intestines. In the case of ulcers,
acacia honey accelerates regeneration of the tissue of existing erosions and
ulcerations. It also affects intestine peristalsis and is characterised by a
low biotic activity.

Creamed Honey, Spring Dandelion Honey, Rapeseed Honey,

Nectar & Honeydew Honey, Heather Honey
Creamed honey- natural bee honey changes its consistency from liquid to solid over the course of time. The
crystals are large and hard. Creamed honey- created by long and gentle mixing- crystalizes much more
slowly than other types of honey. The product retains all its original benefits: the activity of biologically
active compounds, great taste, pleasant aroma and nice consistency. Creamed honey with its fluffy consistency is easy to remove from any container and it spreads splendidly on bread.
Liquid heather honey is red-brown. It crystallizes quickly and takes on a jellylike consistency. Its aroma is
strong and resembles that of heather flowers. The taste is not very sweet, sharp, and slightly bitter. Similarly to buckwheat honey, it demonstrates a considerable phosphatase activity. Heather honey is recommended in urinary tract and prostate diseases, in renal calculosis as well as in intestinal inflammation
and diarrhoea. Dandelion honey smells like dandelion and its colour is light yellow to light orange. It
finds application in particular in liver and bile duct diseases, as well as in anaemia and conditions
of psychophysical exhaustion. The choline contained in dandelion honey reduces the level of liver
lipids and intensifies cholagogic effect. Rapeseed honey when liquid is colourless or straw-coloured
and turns creamy white after crystallization. It crystallizes quickly due to its high glucose content
and takes on a greasy consistence. The smell is weak, close to that of a rapeseed plant in flower. Rapeseed honey is applied in circulatory system diseases (sclerosis), in liver diseases, in inflammatory
conditions of the upper respiratory tract, as well as in skin diseases. It compensates for potassium
deficiencies, lowers blood pressure, as well as counteracts sclerosis and improves oxygen and nutrient
supplies to the cardiac muscle. When applied externally to burns, it prevents blister formation and
related infections. It accelerates the development of granulation tissue and, as a consequence, the
healing of wounds.

Organic honey comes from apiaries with a special certificate confirming their green methods of bee
keeping. First of all, such apiaries must be located in areas where concentrations of harmful air, soil and
water pollutants are at their minimum level. The apiaries are also situated among organic farms or
in the wild. In those apiaries usage of any antibiotics is strictly prohibited. Hives in which the organic
honey is produced must be constructed from natural materials such as wood or straw. All this does not
change the fact that the primary filter, which purifies the nectar of any pollution, is the bee. Choosing bee
products we should remember that.

Beebread
Beebread is pollen gathered by honey bees, mixed with honey and a secretion from the bees salivary glands, stored in honeycomb
cells and subjected to milk fermentation in anaerobic conditions in the bees hive. Beebreads nutritive, prophylactic and curative
values are much higher than those of pollen due to its richer composition, preservation process and high assimilability.

Pollen
Pollen is a bee product gathered by worker honey bees from flowers of plants, mainly entomphilous ones. It is distinguished by its high content of B group vitamins, monosaccharides and polysaccharides, as well as amino acids, including
arginine. It has antiaggregation (anticoagulant) effects. It also contains other nutritive and biologically active substances.
It is called a vitamin bomb because of its composition. It finds application particularly in convalescence, lack of appetite, vitamin deficiency, alimentary system and liver diseases. For several years, pollen has been successfully applied in
prostatic hypertrophy. Pollen treatment improves general feeling of well-being, enhances fitness and boosts immunity.
Pollen from different plants and from different picking periods demonstrate differentiated effects. Those coming from
the largest possible number of plant species are the richest in mineral elements. Pollen is commercially available in the
form of dried pollen, tablets, granules and in the form of a honey mixture. Children can be given ground pollen added
to blackcurrant juice.

Propolis Bee Glue

Propolis, also called bee glue, is a balsamic and resinous substance gathered by worker honey bees from buds of poplars,
birches and other deciduous and coniferous trees. It is composed of a number of biologically active substances showing
very strong bactericidal and analgesic effects. It exhibits high activity against some fungi and protozoa. It accelerates
cell metabolism and has a general detoxication effect. It regenerates bone and tissue, cartilage, epithelium and prevents
scar formation. Propolis is applied in particular in treatment of bedsores, burns, ulcerations, slow-healing wounds and
stomach ulcers, as well as in chronic ailments of the alimentary tract. It is successfully applied in chronic throat inflammations, tonsillitis, and, in the form of suppositories, in gynaecological and haemorrhoid treatment. When applied with
antibiotics, it enhances their effectiveness.

Herbal honey products are made from plant extracts or herbal infusions of sucrose solution, processed by honeybees until it reaches honey consistency. Herbal honey produces
a variety of effects (depending on the species of herbs used for their manufacture) and a
significantly higher content of micro-and macro-nutrients than natural honey. Herbal
honey has healing properties of herbs from which it come, interacting with substances
such as those added by bee enzymes and organic acids. We recommend that Herbal honey is mixed with water at temperatures below 40C, or (similar to honey) to be served
with bread.

The main active ingredient of both of these products is royal jelly. In addition, Apivit P is enriched with a second
active ingredient of floral origin, namely pollen. Royal jelly is a product made by adult worker bees for the nourishment and the queen and bee larvae in the first three days of their lives. Pollen is produced by bees from the
anthers of flowers. Royal jelly contributes to the functioning of the body by supporting normal metabolism, maintains vitality and strengthens the human bodys natural resistance to infection. In addition, the content of pollen
in the Apivit P increases the products value because, as proven in worldwide medical laboratory tests, pollen is a
rich source of vitamins, including all the B type vitamins, amino acid and a number of other biologically active
nutrients. Products such as Apivit and Apivit P are recommended to people who work actively, are physically
and mentally weakened and to the elderly.

Mead is an alcoholic beverage obtained from fermentation broth, i.e. an aqueous solution of bee honey. Mead
is produced as a result of fermentation of raw (not boiled) honey solution, whereas fermented mead is obtained
through fermentation of previously boiled honey. There are many types of meads, depending on the ratio by volume of honey and water in the solution:

- ptorak [one-and-a-half mead] 1 part of honey to 0.5 parts of water (58-610 Blg.)

- dwjniak [double mead] 1 parts of honey to 1 part of water (48-500 Blg.)

- trjniak [triple mead] 1 part of honey to 2 parts of water (24-360 Blg.)
The proportions are referred to litres or hectolitres, whereas the Bailling degree (abbreviation: Blg.) indicates
in the food industry the density of an aqueous sugar solution 10 Blg. corresponds to 1% by weight of sucrose
solution. The fermentation process of the broth may be more or less turbulent and the maturation time depends
on the type of mead. Consequently: quintuple meads [pitak] and quadruple meads [czwrniak], i.e. dry meads,
mature for 6-7 months, triple meads for 2-3 years and one-and-a-half and double meads are ready for consumption no sooner than after 8-10 years. With the passage of time their aroma and taste improve.

The Bogdan Szymusik

Apiculture Museum
at the Sdecki Bartnik [Sdecki Bee-Keeper]
A.&J. Kasztelewicz
Bee-Keeping Farm in Stre

The museum in Stre, which is situated on the Tarnw-Grybw-Krynica route, was established in 2000 by Mr and Mrs Kasztelewicz, the owners of the Sdecki Bartnik Bee-Keeping Farm,
people who are keen on bee-keeping.
Apart from a rich collection of exhibits of apiculture, the museum also houses a display of everday objects used by villagers in
the Sdecki Region.

In the museum there are more than 100 various hives: log hives, figure hives, frame hives and straw hives. The collection is completed by a set of apiculture tools, such as smokers, honey extractors, swarm traps, comb foundation presses, objects
used for growing the queen and others. A number of exhibits are real rarities, e.g. a log for five bee families form the turn of
13th and 14th centuries, which is called the King, or an incubator for growing queens from the end of the 19th century.
The museum also contains a number of interesting books on apiculture.
The Kasztelewiczs constantly build up their collection. They have acquired two African hives recently.

The essential part of the collection is formed by the exhibits purchased from Bogdan Szymusik, a bee-keeper from
Cracow, who started amassing objects connected with apiculture in 1953 and who managed to assemble one of the most remarkable collections in Poland. In the 1990s the employees of the Ethnographic Museum in Cracow catalogued the collection. In
May 2000 Mr B. Szymusik decided to sell his collection to the owners of the Sdecki Bartnik because of his poor health and his advanced health. Thanks to this decision the collection
was not divided and it can feast tourists eyes.

The owners of the enterprise, helped by Franciszek Palka, a sculptor, prepare new
attractions for the visitors every month, which pleases lovers of bee-keeping.

28

The SDECKI BARTNIK Bee-Keeping Farm

Sdecki Bartnik runs its own apiary, which consists
of over 1000 bee families. The company is mainly
engaged in obtaining, dividing, packaging and
selling bee products which are important for
human health and life, such as different
types of honey, pollen, milk, propolis and
wax. It also specialises in growing bee
queens which are really appreciated by
experts.
Sdecki Bartnik expands its business
in various areas. For a few years it has
been publishing books and making films
on apiculture. Readers especially enjoyed
such works as the album entitled Hives and
Apiaries in Poland or an anthology entitled
Verses about Bees, Honey and Bee-Keepers. Also
the films Beauty Enchanted in Hives and Following
Dzierons Traces have been a great success.
ATTRACTIONS

The musemu has prepared a lot of attractions for its visitors.
In the exhibition area there is an open-air display of hives, Exhibition
Cottages which show bee-keeping objects and an original smithy. In the
recreational area there is a small zoo and a playground for children called Pszczela Wioska [Bee Village]. Karpacka Bar Milenijna [the
Karpatian Millenium Beehive], a monument devoted to the bee, which
is a dozen or so high, is the pride of the museum.
The museum buildings are placed in the typical scenery of the Sdecki
Region, which is magnificent at any season of the year. The Zarembw
Park which formerly belonged to the manor, the pond, the stream, the
fields and orchards full of bees are all the boast of the museum in Stre.
On the first Sunday in July every year the museum organises the Feast
at the Bee-Keeper which is especially prepared for its visitors. Honey
harvest, including the tasting of honey, is the high spot of this event. At
this garden party bands and groups perform folk music and regional
meals are available.
Tourists, who are always welcom, can be served at the Information
Desk and Shop, where bee products, souvenirs and books published by
Sdecki Bartnik can be bought.

The
beekeeping
Farm Sadecki Bartnik
continues to develop and
expand. As proof of this
a new hotel was opened
a few months ago. However, it is not just one of many
- the hotel at Bartnik is one
of a kind.

What is so special about
it? It has a unique character thanks to
its stylish furnishing and modern equipment.
The inn at Bartnik shows that the balance between
tradition and comfort can be achieved and all of it in good taste.
One look will convince you that no other hotel has so much to offer.

Each and every room has its own name that is depicted in the interior decoration. For example, the Clover room will
amaze you with its green freshness and Raspberry room will really make you feel like you are in heaven.
The hotel accommodates 50 guests with single and double rooms as well as family rooms which accommodate up to four people.
Each room has its own bathroom, air-conditioning and access to the Internet. There is also a place to dine, watch TV or just indulge
oneself by relaxing on the porch, admiring the fantastic local neighbourhood.

What is more, the hotel at Bartnik, though completely new, has also quite an interesting history. It has its origins in an
old parish school that was located in a nearby village Krulowa. The school was built at the end of the 19th century and eventually,
just before the demolition, became a model for the hotel. And that is yet another reason for preserving the spirit of the past here in
the realm of Bartnik.

All in all, the hotel at Bartnik is an ideal place for stay not only for travellers hoping to get some rest and relaxation after
their long and tiring journey, but also for those visitors to the Beekeepers Cabin Restaurant who wish to refresh themselves between
partying sessions.
