Beddis Blue - British Columbia - From Moonstruck on Saltspring Island, this semi-soft blue cheese is made from
Jersey cows. It is aged for 4-6 weeks. It is a delicious and intense blue cheese.

Riopelle (Unpasteurized) - Quebec - This is a bloomy rind, triple cream cheese made with cow’s milk. Swiss-Brown
cows feed on hay from the salt marshes of the islands. The single variety of cows (with low volume production and
high quality milk) and the salty grasses give the milk a distinctive flavour.

Tomme du Grosse-
Grosse-Ile (Unpasteurized) - Quebec - This cheese is a light cream coloured cheese with small air holes.
It provides full and rich dairy taste with a sharp edge. As above, the cows are fed on hay from salt marshes.

Tomme du Haut-
Haut-Richelieu - Quebec - This cheese is washed with a cultured brine solution every-other day for 4 to
6 weeks. If Canada has a specialty in fine cheeses it is washed rind cheeses. Fritz Kaiser, a Swiss cheese maker
moved his family to Canada– persuaded by the quality of the milk. His specialty is washed rind cheeses. He draws
on his cheese making knowledge from Switzerland.

Le Clos St-
St-Ambroise - Quebec - This cheese is a semi-soft cheese which is rind washed with St. Ambroise beer.
The fruity and nutty flavour is reminiscent of St-Ambroise beer.
