Start Up

For hygienic and health reasons, it is


recommended to clean the machine
thoroughly before first operation.

CLE

For the first operation, we recommend the


selection of a baking program without using
any product so that cleaning materials are
completely burned off ( which may release
some odors or smoking ).

Switching the Oven On

Switch On the Oven with Key 1. The LED


of the program key will light up i.e.
the programs are not functional.
Please Note!
Activating the individual programs can only
occur when the baking chamber
temperature has reached the respective
programmed pre-heating temperature level.

Pre-Heating

The pre-heating temperature must be


reached before the baking program can
start!!
Press pre-heating Key 2 and select
Product Key 8 within 5 seconds.

A program can be started when the red


LED in the product key lights up.
An acoustic signal occurs when the preheating temperature of the selected
program is reached. The signal will stop
when the Stop Key 3 is pressed or the
door is opened.

Baking

Load the Oven, close the door and select a


program. After pressing the Product Key 8, the
Half-Load Key 4 flashes for 5 seconds and can
be selected if required. The selected program
can be stopped by pressing the Stop Key 3.
Stopping a program or changing it is possible any
time.

After Baking

When the program has ended, After Baking is


possible.
By pressing the After Baking Key 6, the last
selected program will continue for one minute.
This can be repeated 6 times i.e. each time the
key is pressed. After Baking continues for one
minute.

The After Baking can be stopped by pressing the


Stop Key 3 or by opening
the door.

Half-Load

If the Oven is only half full, the Half-load Key 4


can be pressed which will blink when the preheating temperature has been reached and the
product key selected.
When using Half-load, the baking time, baking
temperature and steaming will be reduced
accordingly.

To facilitate programming, place the enclosed


program screen over the control panel.

NOTICE !!

When programming, please always used the


WIESHEU standard program leaflets which are
attached to this operating manual. They simplify
programming and clarify the process.
It is important to input the various steps of the
program quickly since the program modus
disconnects automatically after 10 seconds if no
keys are pressed.
Please note that the program modus can only be
accessed when the oven is switched off.
Always program as follows:

- Programming with 3 program steps should always be


started on the first step.
The program will be saved automatically on confirming
the last input in the 3rd. step.
- For programs with 2 program steps, enter 000 in the
1st step and always start the required programming on
the 2nd step.
The program will be saved automatically on confirming
the last input in the 3rd. step
- For programs with 1 program step, enter 000 in the 1st
and 2nd steps and start the actual programming on the
3rd. step.The program will be saved automatically on
confirming the last input in the 3rd. step.

Programming is undertaken by pressing the product keys
P1 to P 10 on the key panel 8,
where P 1 is the digit 1, P 2 is the digit 2,.P 10 is the
digit 0.
Key 3 confirms the respective entry. The respective input
location blinks.
The minimum and maximum values are checked.

Selecting the Program Modus:

With the oven switched off ( Stand-by-Modus ) press


key 7 ( hidden key ) for 5 seconds.
The program menu will appear and the following indicators
are shown on the display:

Motor ( L slow / S fast ).

The subsequent steps 2 ( 2 C ) and 3 ( 3 C )
will be programmed as describes for ( 1 C ).

Saving the Program Data on the EPROM Key:

The program data will be automatically saved when the Motor Speed has been set in the last step.
The step number saved is shown on the temperature
display and the program number on the program display.
The Program Modus will disconnect when no key is
pressed for more than 10 seconds.

Data Transfer:
The DAPRO data transfer system can transfer program
data from the PC to the Oven or from the Oven to the PC.
The data for the Oven can be easily and quickly written and
modified on the PC and then transferred to the Oven.

Cleaning

Air Vents

For hygienic reasons, we recommend


cleaning the oven on a daily basis. Look
after the oven carefully.
Keep the oven clean. Remember that you
can only make hygienically perfect products
with a very clean oven. Therefore, advise
your cleaning staff accordingly.

The Air Vents should be cleaned from time to time as they can get blocked by dust and dirt.
The exterior surfaces of the oven should not be cleaned with a very wet cloth.
The exterior cleaning should only be undertaken with a damp, soft cloth.
( no running water ).

Do not use dry, scouring cleaning materials. The same goes for all electrical components.

NOTICE ! Baking Chamber / Prover Cleaning:

Apply the cleaning material in the Baking Chamber / Prover, let it soak in for 20 min. at a
chamber temperature of 50 C.
When the time has elapsed, clean thoroughly with clear water.

Attention! Electric Shock!


The control parts must not get wet or come in contact with oven cleaner!

The EUROMAT / TS must not be cleaned with a power cleaner or water jet.

Condensation can build up if the oven was subjected to high temperature changes
during transport. For safety reasons, please let the oven stand for 1 hr.
Always take the ambient temperature into consideration during transport as the Safety
Thermostat activates automatically when the temperature falls below -5 C.

Ovens with build in Steaming must be


de-scaled regularly depending on the
water hardness.

1. Remove interior parts in the baking


chamber ( trays, rails and motor
cover ).

Lift the ventilation cover


and pull out sideways

2. Loosen Counter nut ( A ) with a 17


mm spanner.

Procedure:

1. Lift right rails and remove.

2. The same on the opposite left side.

3. Loosen the screw on the ventilation

4. Lift the ventilation cover and pull out


sideways.

5. Loosen the 2 nuts M4 ( Spanner 7 ) on


the pan holder and pull out the
holder to the front.( Please note when
re-assembling that the Thermoelement Type K is pushed back into
its groove on the pan ).
6. Take out the cascade segment and
place in de-scaling fluid over night.
Rinse the cascade segment with
plenty of clear water before reassembly.

De-scaling / Cleaning Safety Notice

- do not use a high pressure cleaner


- do not use acids or acid steam on the oven as this will damage the passive layer on the
stainless steel and possibly discolor the oven.
- observe the instructions on the manufacturers packaging.
- wear suitable protective clothing:
Safety Glasses, Safety Gloves.
- do not leave containers under pressure for long periods, open pump cap slowly to allow
pressure to release.
- rinse the jet, jet extension and jet ducts after every use.
- the cleaning bottle should be cleaned/rinse 2-3 times a week.
- apply 2-3 drops of oil to t pump spring.

Replacing the Door Seal:

The door seal is placed in a groove inside the


Baking / Prover chamber. If a seal has to be
replaced, pull-out the old seal. Clean any dirt
from the groove. Ensure that the seal is
properly inserted into the groove.
The door seal is grooved to make
replacement easier ( Picture 1 ).
Furthermore, the top and bottom of the seal
has to be punctures with a pin at the
connection piece to the front chamber ( as
described in picture 2 ) in order to allow
ventilation.
The door seal is only available in running
lengths. The stretched lengths are:
B4 E 200 A = 1600 mm
B8 E 200 A = 3200 mm

Procedure:
1) Pull the clear glass panel
( sealing panel ) away from the baking
chamber.

Attention:
Hot halogen bulbs can cause burns to
fingers. Wear suitable protective gloves
when replacing the bulbs.

2) Push the reflectors ( on the left and right


sides of the door frame ) aside and pull the
defective halogen bulbs out of the sockets
and replace with a new halogen bulb ( 12 V /
20 W heat resistance to 300 C ). When
replacing the halogen bulbs, ensure that no
sweat from hands get onto the bulbs, use
suitable gloves or the packaging material.
3) Re-assemble in reverse order.

Cleaning the Baking Chamber with the


fully automatic cleaning system
Pro Clean
These instructions are only for ovens fitted
with PRO CLEAN.
Before starting:

Danger Hot Surface! Let the oven


cool to 50!
The oven door must be fully in the
a position so that it is properly
closed. See section Opening the
Oven Door .
After starting Pro Clean
Check Door Lock!
Remove all large particles ( to avoid
blockage in the drain pipe ).

Check that the containers are filled


with cleaner and lime scale remover
and are properly connected. Ensure
that the plastic containers are
connected in such a way that no
vacuum can occur.
( Air vent opening )
Cleaner and lime scale remover
must not be confused! Please note
our Hazard and Safety Guidelines.
Screw the cleaning jet 1 into the
thread at the top of the baking
chamber.

Only tighten manually. Do not use a


tool. After every use, the jet should be
removed, drained and then replaced
to avoid dripping.
Check that the door seal is clean and
undamaged.

Important!
Handling silicon rubber coated baking
trays:

In general, trays with damaged coating


should not be used. Their use would infringe
the Foodstuffs and Consumer Goods Laws.
To avoid de-lamination or damage to the
coating, observe the following cleaning and

Special Features for the PRO CLEAN


Program:
It is possible to make changes while the
cleaning program is running:
1) Changing the Program Step:

- Press the hidden key 7 ( A ) again


- Select a new Program Step

Interrupting the Cleaning


Program:

- Press key 3 to stop the cleaning


process.
This display will be shown when the
program has stopped.
- When the program has stopped,
the rinse program starts
automatically.

Temperature is too High:

If the temperature of the


appliance is too high when the
cleaning program is started,
water is injected automatically to
cool it down. Only then will the
actual cleaning program start.

Over Loading:
The appliance is fitted with an over load
protection.
Possible reasons for an over load:

Dirty drains
Defective magnetic valve etc..

When the appliance is over loaded, it


switches off automatically and the door is
locked.
