What is tannin?
Wine dryness, which provides palate-like structure for red
wine, comes from tannin, a natural chemical compound of grape
skins, seeds, stems, and oak. Its a key component of red wine
and, if uncontrolled, gives wine harshness and astringency. It can
do the same to wine as it does to a cup of hot tea after it cools
down make it bitter and hard to drink.
The majority of wine tannin is extracted during juice
maceration and fermentation. Naturally, red wine, by virtue of its
longer contact time with grape skins, has significantly more
tannin, that is, dryness, than white wine. A secondary source of
tannin comes from the oak barrels in which wine is aged. Wood

The California State Fair found the perfect recipient for the 2015 Wine
Lifetime Achievement Award in Paso Robles legend and Eberle Winery founder,
Gary Eberle. This distinguished award recognizes the individuals who have
pioneered and cultivated the California wine industry.
For over three decades, Garys passion for quality fruit, vision for a premier
wine region, and insight on varietals like Syrah and Cabernet Sauvignon have
been steady and unbroken. Eberles contributions to the California wine trade
are significant. He co-founded the Paso Robles AVA in 1983 and Eberle Winerys
Cabernet Sauvignon was the first wine to use the Paso Robles American
Viticulture Area (AVA) designation on its label. Gary Eberle was also the first to
plant the Chapoutier clone of Syrah on the Central Coast and make a 100%
Syrah in the United States. These milestones have proven to be important, as
both Syrah and Paso Robles have become significant forces in Californias wine
industry.
Im honored to receive this recognition. I pursued wine enology because it
fascinated methe vineyard aspect of growing grapes and the technical art of
making age-worthy wines. Its taken me on a journey that Im still enjoying
today, says Gary.
Visiting the Eberle Winery tasting room is essential to an authentic wine
tasting in experience in Paso Robles. Driving up to the tasting room, which is
situated on a small hill with picturesque 360-degree views of vineyards and the
Santa Lucia Mountains just off Hwy 46 East, guests immediately feel at home.
Flip a coin into the iconic bronze wild boar fountain before entering the warm
and eclectic tasting room (Eberle translates as wild boar in German). Chances

the world, especially in California
where wineries and tasting rooms
abound. Mostly, wine tasting is a
matter of doing a little research and
planning your day. Here are some
tips that have proven to be helpful
and are designed to help make the
sensory adventure of wine tasting all
the more enjoyable.
Before you start off, pack a few
essentials. Water (plenty of water)
and something to snack on
crackers or a baguette. Many
wineries have picnic areas and there
are plenty of delis and bakeries that
can make up a lunch for you, or
make your own.
Be sure to nibble during the day and
make time for lunch. Two tips: drink at
least twice as much water as you do
wine, and remember that you dont

2013 Olivers Vineyard Chardonnay
At Talley Vineyards in Arroyo Grande, tasting room associates
are experts at pairing Talley wines with delicious dishes. This
months recipe, crusty-baked halibut, pairs particularly well with
Talley Vineyards 2013 Olivers Vineyard Chardonnaya 100%
Chardonnay that sees only 20% new French oak during its 14
months of barrel aging on lees. The process allows the
Chardonnay to exhibit a robust texture and full mouthfeel,
without being overpowered by the oakperfect for the richness
of this meaty fish, seared and then baked in olive oil and butter.

Directions:
1. Preheat oven to 350 degrees.
2. Place filets and seasoned flour in a bag and shake to coat the fish.
3. Heat a non-stick skillet until hot (2-3 minutes). Add the olive oil
and butter.
4. Carefully place the fillets in the hot skillet and sear for 30 seconds
on each side. This gives a wonderful crust to the fish.
5. Remove to a baking dish and place in the oven for 8 minutes.
6. Turn the skillet to low; add the juice of half the lemon, sherry or
vermouth and diced linguica, then stir. Turn up the heat to
medium, add the parsley while continuing to stir.
7. Spoon the sauce over the crispy fillets and serve on a bed of rice,
risotto or egg noodles. Garnish with lemon slices and enjoy with a
bottle of Talley vineyards 2013 Olivers vineyard Chardonnay.

Wine Tasting in
n the southern end of the Central Coast appellation, lies Santa Barbara Countys historic
wine growing region. The first vineyard production in these rolling coastal hills dates
back to 1782, when Junipero Serra planted vines on Mission land. About a hundred years later,
there was 260 acres of luscious vineyards and seventeen winemakers in Santa Barbara
County. Sadly, the Prohibition Era destroyed many of these historic vineyard sites and mostly
put an end to winemaking in the regionas was the case in many of the beautiful winegrowing regions across the state. With that being said, the spirit and passion for winemaking
never left Santa Barbara County, and this wine growing region is alive and well today. Talented
winemakers are producing outstanding and pure terroir driven wines from the five American
Viticultural Areas (AVAs), planted mostly to Burgundian, Rhne and Bordeaux grape varieties.
Although the movie Sideways is said to have put San Barbara Countys wine growing
region on the map in 2004, especially the Santa Maria Valley AVA, it is the high quality of the
wine across the county that has continued to uphold this bountiful regions reputation.
Sprawling vineyards and gently rolling hills create a picturesque scene for visitors and locals
alike, who visit the many wineries, tasting rooms and wine bars in the area. In the five AVAs,
wine tasters will find a nice range of wine styles amongst the Burgundian, Rhne and
Bordeaux varietals that are produced.
In the more northern region, cool climate Burgundian varietals reign, such as Pinot Noir
and Chardonnay, due to the maritime influence. This ensures a long temperate growing
season which the Burgundian varietals crave. With ample amount of sunlight, the grapes ripen
very slowlyperfect for producing terroir driven wines with pure varietal characteristics. In
the southern region, there is more of a diurnal shift with warmer nights and cooler days. This
area sees less fog and has different soil types than what is found closer to the coast. The
Bordeaux and Rhne varieties flourish in this warmer climate and the sandy soils with limestone and chalk impart a wonderfully desirable minerality in the wines.
The wineries in Santa Barbara County boast a concentration of incredibly passionate and
talented winemakers; join them year round at their many events, celebrations and festivals, as
well as in their tasting rooms.

parking passes are available online for $20.
