Whats in a Name?
Sustainable, Organic & Biodynamic Defined
Its a question that can drive even longtime wine and wine-trade
insiders crazy: what really is the difference between the terms
sustainable, organic and biodynamic? And, do the distinctions matter
at all? Whats really being asked, in my opinion, is how much is
marketing magic and how much is winegrowing truth; how much is
it everyone drinking from the same grapeaid versus a reflection of the
realities of commercial wine production? Its a mixture of all of the
above, of course! And given that there any plenty of organic or
biodynamic producers who dont reveal this as part of their
marketing because its easier not to, letting the focus be on the wines
themselves, its a very complicated situation. But what in wine isnt?
Everyone, perhaps, by now understands what organic means in
terms of not using chemicals or ecologically disruptive practices, but
in the context of wine, it gets a lot trickier especially for small
wineries, which is why there are way more wines labeled made with
organic grapes than straight up organic wines. It is considerably
easier to get certification showing that the organic-ness of the grapes,
is preserved through the winemaking, than to get a winery or wine
certified as wholly organic. It is not impossible, but it is costly, takes
multiple years, and leaves little room for error in the cellar. Among a
number of technical issues, there is an absolute limit on sulfite usage,
which knocks out most commercial wines because of the larger batch
process in which they are produced, and the necessity to have
preservation of the wines, once bottled. Because of all of the
regulations and paperwork, some people practice these ideas without
preaching them, intentionally not denoting what theyve done.
Biodynamic focuses on the land and resulting wines one better.
Based on the writings of Rudolf Steiner, proponents of what is an
agricultural philosophy argue for integrative methods akin to organic
practices but also place those strategies within a system of naturebased energy throughwhich the goal is to recharge the land

With Lucas & Lewellen wines, its all about choice, diversity and keeping it
local. Between Lucas & Lewellen Vineyards tasting room, and its sister tasting
room, Toccata, guests can choose from a total of 42 different wines crafted from
23 grape varieties, including one of the few Mthode Champenoise style
sparkling wines made on the Central Coast. All grapes are grown on their 400
estate acres in Santa Barbara, incorporating three distinct microclimates, all of
which add up to an amazing mix of wine. How does a winery make so many
wines and make them well? Having a third-generation grape grower who has
farmed the region since the 1970s helps. We hear time and again that what
makes us unique is the consistent quality we bring across a wide range of
varieties, says Mike Lewellen, director of business operations. This allows our
guests to really explore the best of Santa Barbara.
Lucas & Lewellen grapes are hand picked and sustainably grown in their
Santa Ynez Valley estate vineyards, and even their Winemaker, Megan McGrathGates was educated locally and grew up in the Santa Ynez Valley. But how did
two friends end up becoming one of the most iconic wineries in Santa Barbara?
Thats a question Im often asked, laughs former Superior Court Judge, Royce
Lewellen who performed the wedding ceremony for Louis Lucasbefore the
winery even existed! Louis told me over lunch he was considering selling one or
the other of his two vineyards, and I told him I wasnt interested in buying a
vineyard but Id buy a half interest in the two vineyards if he would do the

farming. By the end of that lunch, Lucas & Lewellen Vineyards was
born. Megan McGrath Gates, a Cal Poly San Luis Obispo soils
sciences graduate who earned her Certificate in Winemaking from
UC Davis, came on board as Winemaker in 2006one of the few
female winemakers along the Central Coast. I am extremely
fortunate to be a part of the Lucas & Lewellen team. It defines the
best of Santa Barbara County wine grape growing and winemaking.
The qualities that our wines are frequently recognized for begin in
the vineyard with Louis Lucas, she says.
They farm several different vineyards including Goodchild, High 9
and the Old Adobe Vineyards in the Santa Maria Valley, located along
the Foxen Wine Trail. Home to mainly Chardonnay and Pinot Noir,
the soils vary from clay and gravel river deposits to hillside and
hilltop sites reminiscent of the great vineyards of Burgundy.
There is also the Los Alamos Valley vineyard, which stretches for
over a mile along Highway 101. These vineyards are home to over
20 varieties of grapes including traditional Rhne, Burgundy and
Bordeaux grapes, as well as Italian varieties for their sister label,
Tocatta. And then there is the idyllic Valley View Vineyard that slopes
towards the Santa Ynez River, planted to what many consider Santa
Barbara County's best Cabernet Sauvignon.
In the Lucas & Lewellen tasting room, both kids and dogs are
welcomed and the ambience is warm and friendly. They offer a Fun
List where guests can enjoy only fun wines from sparkling wine to
Ros, and decadent late harvest wines to the award-winning Silver
King Port in an edible dark chocolate shot glass.

which are named after the proprietors daughters, like their Lindsays
Pinot Noir a hard harvested beauty which spends 11-14 months in
barrel to give it additional complexity, and Courtneys Chardonnay.
Courtneys Vineyard is one of Santa Barbaras most historic

For the most part, going wine
tasting is about the easiest thing in
the world, especially in California
where wineries and tasting rooms
abound. Mostly, wine tasting is a
matter of doing a little research and
planning your day. Here are some
tips that have proven to be helpful
and are designed to help make the
sensory adventure of wine tasting all
the more enjoyable.
Before you start off, pack a few
essentials. Water (plenty of water)
and something to snack on
crackers or a baguette. Many
wineries have picnic areas and there
are plenty of delis and bakeries that
can make up a lunch for you, or
make your own.
Be sure to nibble during the day and
make time for lunch. Two tips: drink at
least twice as much water as you do
wine, and remember that you dont
have to drink everything poured
into your glass.

Ingredients:
1 sprig fresh rosemary, 1 sprig fresh thyme
and 1 dry bay leaf
3 whole veal shanks (1 lb ea), trimmed
Sea salt and freshly ground black pepper
All purpose flour, for dredging
1/2 cup vegetable oil
1 small onion, diced into 1/2 in cubes
1 small carrot, diced into 1/2-inch cubes
1 stalk celery, diced into 1/2 inch cubes
1 tsp garlic, chopped fine
4 tb (1/2 stick) butter
1 tb tomato paste
1 cup dry white wine
3 cups veal or chicken stock
3 tb fresh, flat-leaf Italian parsley, chopped
1 tb lemon zest
cheese cloth and kitchen twine
Directions:
1. Place rosemary, thyme, bay leaf and cloves
into cheesecloth and secure with twine;
this will be your bouquet garni.
2. Pat the veal shanks dry with paper towels
to remove excess moisture.
3. Secure the meat to the bone with the
kitchen twine. Season each shank with
salt and pepper. Dredge the shanks in
flour, shaking off excess.
4. In a Dutch oven, heat vegetable oil until
smoking. Add veal shanks to the pan and
brown all sidesthree minutes per side.
Remove browned shanks and reserve.
5. In the same pot, add the onion, carrot,
celery and garlic. Season with salt; saut
until soft and translucent, about eight
minutes.
6. Add the tomato paste and mix well.

Wine Tasting in
n the southern end of the Central Coast appellation, lies Santa Barbara Countys historic
wine growing region. The first vineyard production in these rolling coastal hills dates
back to 1782, when Junipero Serra planted vines on Mission land. About a hundred years later,
there was 260 acres of luscious vineyards and seventeen winemakers in Santa Barbara
County. Sadly, the Prohibition Era destroyed many of these historic vineyard sites and mostly
put an end to winemaking in the regionas was the case in many of the beautiful winegrowing regions across the state. With that being said, the spirit and passion for winemaking
never left Santa Barbara County, and this wine growing region is alive and well today. Talented
winemakers are producing outstanding and pure terroir driven wines from the five American
Viticultural Areas (AVAs), planted mostly to Burgundian, Rhne and Bordeaux grape varieties.
Although the movie Sideways is said to have put San Barbara Countys wine growing
region on the map in 2004, especially the Santa Maria Valley AVA, it is the high quality of the
wine across the county that has continued to uphold this bountiful regions reputation.
Sprawling vineyards and gently rolling hills create a picturesque scene for visitors and locals
alike, who visit the many wineries, tasting rooms and wine bars in the area. In the five AVAs,
wine tasters will find a nice range of wine styles amongst the Burgundian, Rhne and
Bordeaux varietals that are produced.
In the more northern region, cool climate Burgundian varietals reign, such as Pinot Noir
and Chardonnay, due to the maritime influence. This ensures a long temperate growing
season which the Burgundian varietals crave. With ample amount of sunlight, the grapes ripen
very slowlyperfect for producing terroir driven wines with pure varietal characteristics. In
the southern region, there is more of a diurnal shift with warmer nights and cooler days. This
area sees less fog and has different soil types than what is found closer to the coast. The
Bordeaux and Rhne varieties flourish in this warmer climate and the sandy soils with limestone and chalk impart a wonderfully desirable minerality in the wines.
The wineries in Santa Barbara County boast a concentration of incredibly passionate and
talented winemakers; join them year round at their many events, celebrations and festivals, as
well as in their tasting rooms.

during the festival. each guest receives a beautiful Lara Crystal wine glass,

Guests in attendance are also invited to
participate in the Every Cork Wins raffle,
where all participants win a prize. For $30 to
pull a cork, participants are guaranteed to
win a prize worth at least $30, many of
which are valued at $50 and above. All
proceeds from this event benefit the
museums exhibits and education programs.
In efforts to control traffic in and around
the museum on the day of the festival, the
museum is offering free parking at three
designated offsite parking lots, and round
trip shuttle service to and from the festival.
For those guests who prefer to park in the
museum lot, a limited number of parking
passes are available online for $20. We
recommend that guests walk, taxi, Uber, or
be dropped off as the best ways to get to the
wine festival.

Scott Cellars did not set out to become a Sangiovese house, it just
happened. It was more of an evolution. Owner and winemaker Peter
Scott Fraser started making the usual Chardonnay, Pinot Noir, Syrah,
etc. However, in 2007 his wife Jennifer suggested Sangiovese after his

fermented Chardonnays and signature Syrahs, there are also

After more than thirty years in the field, winemaker Stephan
Bedford is still full of enthusiasm. He enjoys the hands-on mechanics
of winemaking. Using time-honored techniques, he creates wines
with personality and depth. Eclectic, off-beat and forgotten varietals
fuel his passion and creativity. His limited edition wines are available
primarily at the tasting room, which is open daily from 11:00 a.m.
to 5:00 p.m., sometimes longer depending on the season.
The tasting rooms rustic ambience invites you to focus in on the
wines and encourages dialog on a variety of topics with the well-read
Bedford staff. A generous garden courtyard is well suited for a relaxed
picnic. This is what wine tasting should be: wines that are not main
stream, an unrushed, intimate atmosphere and great conversation.
Bedford Winery is also known for out of the ordinary events.
From Mushrooms Gone Wild and historical readings with era specific
food, to original theatrical presentations by the talented Bedford
Players; plan on enlightened stimulation, smiling and thinking while
sipping Bedford wine.
Take the path less traveled and visit tiny downtown Los Alamos.
This quirky but friendly town harkens back to a bygone era, and now

Every wine region has that one specific place, an area that clearly
defines the whole of the region in terms of how itOrcutt
best expresses and
interprets the wine. In Santa Barbara County that wine region is 101

Foxen Canyon. The Foxen Canyon Wine Trail is home to 15 tasting
rooms along its languid path, all of which are flanked by row upon
row of vineyards, which is one of the reasons people flock here, to
get the full wine country experience.
But unlike other wine trails, Foxen Canyon is still agriculture
driven. You wont find any stores, gas stations, restaurants or

shopping. What you will find are bucolic lazy roads which undulate
into flat valleys and ascends to hilltops where the views of open land,
roaming cattle, quail and turkey vultures, verdant vineyards, mature
oak trees and blue skies beckon; a postcard to the past of what

showcasing the assortment of grapes that thrive here.
Most of the wineries have picnic areas; some large and open and
some small and secluded you just need to take your pick. When
visiting the trail its advisable to bring water with you and food as
there are no restaurants and many of the wineries are spread out. By
visiting this unique wine trail youll get in touch with the exceptional
wines of Santa Barbara and at the same time, step back into historic
California.
