7.1Packaging
Ifthecansarelithoprinted,oncefilledtheycanbepackedintomastercartonsafteraninterimstorageperiod.Plain("bright")
cansshouldbelabelledandthenpackedintocartons.
Thelabellingisusuallydonebyanautomaticlabellingmachinehoweverwherelabourisrelativelycheap,manuallabellingis
sometimespractised.
Thecartonscanbeglued,stitchedortapedononeend,andlatertheyareusuallytapedorgluedattheotherend.The
packingoperationscanbeautomatic,semiautomaticormanual.
Thecartonsareusuallyprinted,howeversometimeslabelsareattachedtotheoutsideofthecartons.
Thecartonsarehandledmanuallyortransportedonpalletsbyforkliftstothestore.
Amoreeconomicmethodistouseasimplebaseplateofcardboardwith30mmhighrims.Theplateonwhichthecansare
placedisthenshrinkwrappedwithplasticsheets.Theplasticshouldnotsealthetrayscompletely,asthiswillpreventair
circulation,whichmaycausemoisturetobetrappedandcorrosionofthetinplate.
Toidentifythecanneryandtheproductionbatch,thecanendsarecoded.
AccordingtotheRecommendedInternationalGeneralStandardfortheLabellingofprepackagedfoods(CAC/RS11969)
thefollowinginformationshouldbeusedinlabelling:

Thenameshallindicatethetruenatureofthefoodandnormallybespecificandnotgeneric.
Listofingredients
Acompletelistofingredientsshallbedeclaredonthelabelindescendingorderofproportion.
Netcontents
Thenetcontentsshallbedeclaredineitherthemetric("SystemInternational"units)oravoirdupoisorbothsystemsof
measurementasrequiredbythecountryinwhichthefoodissold.
Nameandaddress
Thenameandaddressofthemanufacturer,packer,distributor,importer,exporterorvendorofthefoodshallbe
declared.
Countryoforigin
Thecountryoforiginofafoodshallbedeclaredifitsomissionwouldmisleadordeceivetheconsumer.
Optionallabelling
Anyinformationorpictorialdevicemaybedisplayedinlabellingprovidedthatitwouldnotmisleadordeceivethe
consumerinanywaywhatsoeverinrespectofthefood.
Gradedesignations
Ifgradedesignationsareused,theyshouldbereadilyunderstandable,andnotbemisleadingordeceptiveinanyway.

7.2Storage
7.2.1Storageoffinishedproducts
Thecansshouldbestoredinstorage,incartonsorcontainers,aftersterilizationandwashing.
Thisprocedurewillfacilitatetheinspectionofthecanstoensureappropriatequality.Thedurationofthestoragemustbeat
least4weeks.Duringthisperiod,inspectionforswollencontainerswillrevealthemajorityofmicrobiologicallyunsoundcans
thatmayhavebeenproducedanddamagetocans.
Thefinalstorageforcannedproductsmustbedryandwithgoodairventilation.
Cannedproductsshouldbestoredneitheratextremelyhightemperatures(>40C)noratfreezingtemperatures.
Cannedproductsmanufacturedandstoredundernormalconditionsusuallyhaveashelflifeofatleasttwoyears.
Thespacerequirementswilldependontypeofcommodity.Asageneralrulethestorageroommusthavesufficientspace
for46monthsnormalproductioncapacityhoweverascostsrisemanymanufacturersattempttoreducetheirinventories.
Utilizationof.andneedforstoragespacedependsonthenumberofproducttypesandthestoragesystemadopted.
Whenstoringwithoutaracksystem.threetofourpalletscanbestackedontopofeachotherinthestoreroomwithout
damagingthecans(withtinplatecans).Thestoragedensityisapproximately3tonspersquaremetre.Transportand
workingareasinthestorearenotincluded.

Ifhumidityisveryhigh.spaceshouldbeprovidedtoallowaircirculationandtopreventexternalcorrosionofthecans.
Astoragesystembasedonracksenablesthebestutilizationofthestoreandgivesgreaterscopeforarrangingthedifferent
typesofproductsseparately.
ThestorevolumeshowninFigure30willcontainapproximately315palletswithdimension0.8m1.2m(theEuropallet).
Withapproximately800kgoneachpallet,Thestorewillcontainapproximately250tonsoffinalproducts(packagingmaterial
included).

7.2.2StorageofIngredients
Generallyingredientsshouldbestoredinaclean,dryandpreferablecoolplace.Howevercannedtomatosaucecanbe
storedunderlesscontrolledconditions.Similarlydrycommodities(e.g.,flour,spices,saltanddriedvegetables)andoilfor
canningwhenkeptinsteelcans(drums),willalsowithstandvariablestorageconditions.
Itisrecommendedthatpasteurizedmilkbeheldinchilledroomsand/ortanks.
