THIS SUMMER?
Why not escape the summer heat and head underground for some down
and dirty fun in Carolyns Caverns? This cave system is just a ten-minute
walk from Ledge View Nature Center in Chilton. This facility forms part
of the Calumet County park system, has 3 miles of hiking trails through
woodland and prairie habitats, as well as a 60-foot observation tower.
Access to the caves is by a naturalist guided tour and offers a hands on
opportunity to learn about Northeast Wisconsins geology, cave formation and ecology. This dolomite limestone cave system has a number of
large rooms that can be entered by stairs and ladders, or you can opt to
crawl through tunnels that go between caves. Most people agree that this
is the most adventurous option! Tours run throughout the summer at 1
p.m. on Saturdays and Sundays and cost $6 per person. An adventure
tour ($7) is offered on Saturday mornings at 9 a.m. for people seeking a
more physical caving challenge. Reservations for these tours are recommended as group size is limited.

re you in your 20s, 30s or 40s? You


might think that your hormones
wont begin to change until you
are getting close to age 50 or menopause.
The average American woman reaches
menopause (classically defined as a year
without a period) around 51.2 years of
age. You may not realize that how well you
feel today is strongly correlated to your
hormone balance even if you are in your
20s, 30s or 40s.
If you are experiencing fatigue, irritability, anxiety and insomnia your provider
may have told you that these symptoms
are not related to menopause or hormone
imbalances because you are too young.
You may also have asked your provider
to check your thyroid levels and to see
if you were anemic by running a blood
count. If these tests came back normal you
may think that there is nothing else that
can be done to help you feel better. This
is generally not the case, ladies! Please
note! Hormone imbalances can affect you
as significantly now as when you are your
mother or grandmothers age.

women are experiencing more symptoms
of hormone imbalance today due to hectic
lifestyles, high stress and unhealthy diets
and lifestyle choices.
Your hormone balance plays an important role in how you feel every day, in your
overall health and in preventing premature
disease. If your progesterone, estrogen and
testosterone arent in balance you may experience many common symptoms: Premenstrual Syndrome (PMS), Premenstrual
Dysphoric Disorder (PMDD), Polycystic
Ovarian Syndrome, uterine fibroids, fibrocystic breasts or breast tenderness, belly
fat, abdominal bloating, heavy bleeding,
migraines, mood swings, irregular periods,
fatigue, anxiety, difficulty concentrating,
decreasing sex drive and food cravings. If
you feel like you are out of balance, eating
a healthy diet and making simple lifestyle
changes such as exercising regularly will
definitely help. PMS symptoms can be well
managed with eating smaller, more wholesome meals (3 meals plus 3 snacks daily).
Include in your diet more lean sources of

protein, legumes such as lentils and beans,


foods with soy protein such as soy nuts,
soy milk or tofu (unless you have a thyroid
disorder), many raw and leafy vegetables
and fresh fruit, low fat milk, cheese and
yogurt, whole grain breads, cereals and
pasta. Avoid food stressors such as refined
sugars and fats, salty lunch meat, sausage,
bacon, high fat cheeses such as brie, white
bread, cake, cookies, jam, honey, molasses, high-salt snacks such as potato ships,
caffeinated drinks such as coffee, teas, soda
and alcohol.
You may also wish to consider having
your hormone levels tested and use bioidentical hormones to alleviate symptoms
as well. Individualized dosed, bioidentical
progesterone often helps women in their
20s, 30s and 40s to feel better. Progesterone
plays a vital role in helping many women
to feel calmer, less irritable and to sleep
more restfully.
What is Progesterone?
Progesterone is one of three main female
sex hormones in our bodies and it acts as a

work by binding to specialized areas of
cells called receptor sites. There they start a
chain of events in target cells or organs. For
example, progesterone has been known to
exert a calming effect in the brain, reducing anxiety. Each month progesterone
prepares the uterine lining for pregnancy
and progesterone levels rise after ovulation. Unless you become pregnant your
progesterone levels then drop and this
triggers menstruation. Progesterone also

balances out the effects of other hormones


in the body such as estrogen. When you
have too much estrogen and not enough
progesterone then you may experience
many uncomfortable symptoms. This is
often referred to as being estrogen dominant, a popular condition referenced in
many books written about menopause but
not an official medical diagnosis used in
conventional medicine.
Is there a difference between natural or
bioidentical progesterone and synthetic
progesterone?
Progesterone is a hormone that is
produced in your body. The term natural
or bioidentical refers to progesterone
that is chemically identical to the progesterone that is produced in a womans
ovaries. Natural or bioidentical progesterone is produced from a plant source
(Mexican wild yams or other plants) and is
modified in a laboratory to become identical in chemical structure to the human
progesterone. Synthetic progesterone
is called a progestin and does not have
the same effects on various body receptors outside of the uterus. Many women

River

ife is like a river, always moving


forward, never backward. I think
we know that, but sometimes it
becomes so obvious that we cant help
noticing! Here is a story about the flow
of life and synchronicity, a phenomenon that occurs when many things come
together in unexpected but amazing ways.
It is a story about following those inner
nudges, letting go and finding out what
happens next.
In 1977 Barbara Fitz Vroman wrote a
book entitled, Tomorrow Is a River. It is an
engaging novel set in the Tomorrow River
country near what is now Waupaca. The
story features a young couple who move
to the woods where the minister husband

intends to save souls. Very soon, he


disappears and his wife becomes the main
character in the story, along with a Native
American Indian woman and their children. Throughout the story runs an inspiring thread of hope and healing, despite
some major challenges. The setting includes
the Tomorrow River area, the Civil War, the
Great Chicago Fire and the Peshtigo Fire.
At the time of publication, the Milwaukee
Journal described this novel as Wisconsins Gone With the Wind. My mother gave
me the book for Christmas in 1979; I still
have it, with her inscription inside the front
cover. We both adored the book. I read it
repeatedly, and it remains one of my very
favorite books of all time.

Fast forward twenty years to 1999. I


read an article in Unity Magazine written
by this same author, Barbara Fitz Vroman!
I recognized her name immediately and
decided to write her a letter. She wrote
back! Later she and her husband Dale
visited my Unity Church, and from then
on, we had occasional contact, sharing our
spiritual journey until her passing in May
of 2012. My husband died just a month
later.
Three years after that, in the spring of
2015, I received a call at church from Kim
Pence Vroman, Barbaras daughter who
lives in Texas, and whom I had never met
before. She presented an idea to me, and
I was onboard immediately. Kim wanted

to do something for Unity in recognition


of my relationship with her mom and her
love of Unity. She proposed to bring some
books to Unity, including as many copies
of Tomorrow Is a River as we desired. The
idea was that we could sell the books as
a fundraiser for our church. Kim did not
know how much that book had meant to
me and my mom, so she was delighted
with my response, and I was on cloud 9
after receiving her call. On June 21, Kim
came to our church and we shared some
reminiscences with the congregation. The
books were available on a free-will offering
basis, and we sold quite a few the first day.
Now we are planning a series of book
discussion circles for the autumn, and we
are envisioning many residents of the Fox
Valley participating. Anyone interested in
getting a copy of the book and/or joining
a book circle can contact me at minister@
unityofappleton.org. The books and the
book circles are offered on a free-will offering basis. Since the circles will not begin
until September, there is time to read the
book, perhaps while on a vacation or relaxing in the backyard hammock, over the
next month.
Here are the dates and times for the
proposed circles: Friday mornings Sept. 4,
11, and 18, 9:30-11:30 a.m. Sunday afternoons Sept. 20, 27, and Oct. 4, 3-5 p.m.
Tuesday evenings Sept. 29, Oct. 6, and 13,
6:30-8:30 p.m. Perhaps other groups will
form; existing book groups might enjoy
selecting this title for their use.
The flow of this unexpected blessing
has been phenomenal, and we envision
it continuing to roll onward. It is a story
within a story. It is a wonderful example
of what can happen when we follow those
inner nudges. If you are looking for more
flow in your life, you might listen very
closely; what is your inner voice saying?
Life really is like a river, flowing forward,
never back. Blessings as you enjoy the
journey!

a person needs support, they can provide protection for
those living alone, theyre always willing to lend an ear
to problems, and many tend to offer unconditional love. Seniors
facing an empty nest or the loss of a spouse may find pets can
buoy their spirits. Studies have shown that seniors can benefit
both mentally and physically from having a pet around. Pets can
alleviate anxiety, depression and boredom.
While pets can provide comfort and companionship, they
remain a significant responsibility. Seniors should find an animal
that will fit in with their lifestyles. This is an important consideration for those seniors who travel frequently or have mobility
issues. In addition, men and women living in senior communities
or assisted living facilities should determine if there are any pet
restrictions in place.

Those seniors who have decided that a dog will be the best
fit can choose among several breeds that may be a good match
for their needs. When selecting a dog, consider both size and
temperament. Smaller dogs tend to be easier to handle and will
need less maintenance. They are easily carried and wont take as
long to bathe and groom. Smaller dogs also consume less food
than larger breeds, reducing the expense of dog food and the
hassle of wrangling large, heavy bags of chow. Temperament is
also important, as some breeds tend to be more easygoing than
others. Larger breeds may be preferable to a smaller breeds, which
tend to be hyperactive. However, always remember there are pros

The following are some dogs that can be


especially compatible with seniors.

Pug: Equally playful and willing to be a lap dog, the pug requires
little exercise and grooming. The breed is typically nonaggressive
and submissive. Pugs are good-natured and playful; they dont
often bark and are easy to train.
Shih Tzu: The Shih Tzu lives for attention, but this breed can
be dominant and difficult to train. The Shih Tzu will be alert
to its surroundings and, despite its small stature, can be a good
watchdog.

Pomeranian: Pomeranians look like big balls of fur and can bring
a smile to an owners face. The breed tends to be perky, can display
dominance and can be difficult to train. Because Pomeranians can
be dog-aggressive, they may be best as the only pet in the house.
Yorkshire Terrier: The Yorkie is a diminutive breed in size only,
as they tend to have exuberant personalities that dwarf their
stature. The ideal lap dog, Yorkies want to lie around and lounge,
though some do like to bark. If the fur is kept short in a puppy
cut, the dog can be easy to maintain.
Pembroke Welsh Corgi: This medium-sized dog hails from
Wales and typically requires only moderate exercise and little
grooming. They are easy to train and moderately dominant. They
dont bark excessively, and they often get along with other dogs.
Schnauzer: Available in three sizes, Schnauzers are good
companions and protectors. This is an intelligent and loyal breed
and will need to be kept amused to stave off boredom.
Brussels Griffon: These dogs do not shed, but they will require
professional grooming at least once every 3 months. If socialized
early, the Griffon can be a good companion but will likely remain
wary of strangers. They are good watchdogs and devoted to their
owners.

What to
know about
skin
cancer

kin cancer is the most common cancer in the United States.


One in five adults will get some form of skin cancer and
the majority of these occur over the age of fifty. The main
risk factors for skin cancer are cumulative sun exposure, including tanning and blistering sunburns, family history of skin cancer,
fair complexion, and having multiple moles. Since ultraviolet
radiation, whether from the sun or a tanning bed, is known to
cause skin cancer, it makes sense that cumulative exposure to this
increases your risk of skin cancer. Eighty percent of skin cancers
occur above the waist with the head and neck being especially
susceptible. As such, it is important to have a yearly skin exam by
a board-certified dermatologist.
There are three main types of skin cancer: basal cell carcinoma,
squamous cell carcinoma and malignant melanoma. Basal cell
carcinoma and squamous cell carcinoma are most commonly
found on the head and neck in sun exposed regions. About 3.5
million cases of basal cell and squamous cell carcinomas are diagnosed each year. Once diagnosed, there is a ten time higher risk
of having another basal cell or squamous cell carcinoma. Having
either of these also gives you an increased risk of getting malignant melanoma. It is for this reason that follow-up exams are
critical to diagnose and treat new skin cancers at an early stage.
The two most common skin cancers, basal cell and squamous cell
carcinoma, generally do not spread to lymph nodes or internal
organs, but can become very large and invasive, destroying tissue
and underlying structures if untreated.
If a dermatologist suspects a skin cancer, a biopsy is usually
performed in the office. If skin cancer is confirmed, surgery is the

usual treatment. If the skin cancer is located on the trunk or back,
an excision is usually performed to remove all of the residual
skin cancer. For high risk skin cancers, those located on the head
or neck, recurrent, or large, Mohs surgery is performed. Mohs
surgery offers the highest rate of cure at 98-99 percent of basal and
squamous cell carcinomas. It spares the most tissue and can facilitate a smaller defect, which results in a better cosmetic outcome.
The third and most dangerous type of skin cancer, malignant
melanoma, has the fastest increasing incidence rate in the world.
This cancer most commonly presents as a dark, irregular, changing, asymmetrical lesion on the body and can appear anywhere.
If diagnosed and treated early, the prognosis is excellent. If this
tumor is diagnosed at a later stage or deeper depth, it can spread
to the lymph nodes and organs and be life threatening. In 2014,
there were an estimated 76,100 new cases of melanoma diagnosed
and 9,700 deaths in the United States. This is more than one
person per hour dying from melanoma every day.

skin cancers can be prevented by using safe sun practices. This
would include wearing at least a Sun Protection Factor (SPF) 15
broad spectrum sunscreen daily, avoiding the mid-day sun and
all tanning beds, and wearing protective clothing like a broad
brimmed hat and approved sunglasses. No matter how healthy
you think you are, you should take your skin health seriously and
a yearly skin exam by board-certified dermatologists is a great
start.

to learn some of the top questions most often asked at floatation centers.

What exactly is floatation therapy?

Floatation therapy is also called floating or REST (Restricted Environmental Stimulus Therapy). When you float you are attempting
to restrict the amount of stimulus to your body and ultimately
your brain. You do this in a specially designed chamber with a
10-inch solution of Epsom salt and water. A floatation unit, pod,
or tank, contains anywhere from 800 to 1,200 pounds of Epsom
salt and 200 to 250 gallons of water, which is warmed to skin
temperature. These units are designed to block out sound and
light as well.

What do I wear when I float?

You wear nothing but your freshly laundered birthday suit. Naked
as a Jay Bird. In the buff. A salty bathing suit will start to dry and
get crispy and the wet suit can detract from your float. Bathing
suits can also introduce bacteria into the water. Clean bodies are
a must and float centers generally require users to shower on site.

and a few other unique floating necessities. If you are unsure of


what will be provided call ahead before you float.

Who benefits from floating?

Lots of people! If you like meditating, you probably will enjoy


floating. In fact those who meditate make natural floaters! Athletes
benefit because floating helps muscles to relax and recover faster.
Floating is thought to be more beneficial than napping for knowledge retention. Those with chronic pain issues like fibromyalgia
can discover the pain reduction side of floating. People with back
pain find relief with floating as well. Some people just want to find
out what its like to be in a zero gravity, low sensory atmosphere.

How are the tanks cleaned?

The salt solution is pumped, filtered and sanitized. Most float


centers sanitize the solution with special UV lights, hydrogen
peroxide, ozone or a combination. These are approved methods
as recommended by the U.S. Floatation Association. Filters are
routinely cleaned as are the inside surfaces of the units.

How long do sessions last?

Sessions are usually at least 60 or 90 minutes, but they can last as long
as three or more hours. First time floaters may appreciate a 90-minute
session because when you start floating it sometimes takes 30 to 45
minutes to become accustomed to the floating environment before
you really begin to relax and start to enjoy your session.

How often should I float?

To get the most benefit out of floating it is recommended to float


as frequently as you can initially. Many people start out by floating
weekly for 3 or 4 weeks in a row. There is a slight learning curve to
floating and when you float in quick succession your brain acclimates to each successive float quicker.

How will I know when my session is over?

Many floatation units have speakers built into them and centers will
turn on nice music at the end of your session. It is possible to fall

asleep in the tank, and in some cases an attendant may have to enter
the room to knock on the tank to rouse a sleeping floater. Sometimes
floaters appreciate having music played for 15 or 20 minutes at the
beginning of their session to help adjust to the floating experience.

What else should I know before my first float?

Common pre-float recommendations include: not having a heavy


meal nor an empty stomach before you float, avoiding caffeine a
couple hours before your float, not shaving 6 to 8 hours before your
float, and not floating while you have skin wounds that cannot
be covered with waterproof bandages and/or a liquid bandage
product. You will be required to fill out an intake form and sign a
waiver at most float centers. Plan on arriving 15 minutes early for
paperwork, using the restroom and a brief orientation.

Exercise
benefits the
brain,
too

egular exercise can benefit the body in many ways, helping


men and women maintain healthier weights and lower their
risks for developing potentially deadly diseases. Though
many people are quick to associate exercise with its physical benefits, those hours spent on the treadmill also can boost brain power.
According to Dr. Barry Gordon, professor of neurology and
cognitive science at Johns Hopkins Medical Institutions and coauthor of Intelligent Memory: Improve the Memory That Makes You
Smarter, exercise has a direct impact on the brain. Thats because
exercise works directly on brain tissue, improving the connections
between nerve cells, creating new synapses, growing new neurons
and blood vessels, and improving cell energy efficiency. So while
many people may begin an exercise regimen with a goal of trimming their waistlines or toning their bodies, they might be happy
to know that those physical benefits are accompanied by several
cognitive benefits as well.
As the American Psychological Association acknowledges, the
connection between exercise and mental health is hard to ignore,
and the APA notes that the following are just a few of the mental
benefits men and women might reap from regular exercise.

Improved mood

Many people feel great after exercising, especially if that exercise


comes at the end of a particularly stressful day. However, those extra
laps on the track or those hours spent on the treadmill dont just
pay short-term dividends. In a controlled trial overseen by Duke
University researcher and clinical psychologist James Blumenthal,
sedentary adults with major depressive disorder were assigned into
one of four groups: supervised exercise, home-based exercise, antidepressant therapy, or a placebo pill. Those in the exercise and antidepressant groups had higher rates of remission than those in the
placebo group, and Blumenthal concluded that exercise was generally comparable to antidepressants for men and women with major
depressive disorder. In addition, in following up with patients a year
later, Blumenthal found that those who continued to exercise had
lower depression scores than those participants who were less active.
Blumenthals study was not the only one to conclude that exercise
can have a positive impact on mood. In a review of 11 studies that

examined the effects of exercise on mental health, Boston University professor of psychology Michael Otto and his colleagues found
that exercise could be a powerful tool when treating clinical depression, and even recommended clinicians include exercise as part of
their treatment plans for depressed patients.

Antidote to anxiety

Some researchers, Otto included, have begun to examine the


effects of exercise on treating and possibly preventing anxiety. The
bodys nervous system responds quickly when people feel frightened or threatened, often causing the bodys heart rate to increase
and sweating and dizziness to occur. Those people who are especially sensitive to anxiety respond to these feelings with fear, and
that makes them more likely to develop panic disorders. But Otto
and fellow researcher Jasper Smits of the Anxiety Research and
Treatment Program at Southern Methodist University studied the
effects that regular workouts might have on people prone to anxiety.
Since exercise produces many of the same physical reactions, such
as sweating and an elevated heart rate, the body produces when
responding to fear or threats, Otto and Smits wanted to determine
if exercise might help people prone to anxiety become less likely
to panic when experiencing fear or threats. In studying 60 participants with heightened sensitivity to anxiety, Otto and Smits found
that the subjects who participated in a two-week exercise program
exhibited marked improvements in anxiety sensitivity compared to
those participants who did not take part in the exercise program.
Otto and Smith concluded that this improvement was a result of
the exercise group participants learning to associate the symptoms
common to both fear and exercise, such as sweating and an elevated
heart rate, with something positive (exercise) instead of something
negative (anxiety).

would make up a significant portion of their diets. But parents
know they must make kids culinary choices for them so
youngsters get all of the vitamins and nutrients they need to grow
up strong and healthy.
Parents also tend to know how difficult it can be to convince
kids to embrace healthy eating. Healthy eating habits can help
kids live healthier lives and perform better in the classroom while
setting them up for a lifetime of making the right choices at mealtime. Though encouraging kids to eat healthy may not always
be easy, the following are a few tips for parents hoping to foster
healthy eating habits in their children.

STICK TO A SCHEDULE. Parents should establish a regular


eating schedule, for both meals and snacks, so kids learn the
importance of not skipping meals. Kids who learn to eat at regular
intervals are more likely to continue doing so as they grow older.

should help them stay attentive at school and be more engaged in
their extracurricular activities.
INVOLVE KIDS WHEN CHOOSING THE MENU. Kids might
be more excited about eating healthy when you involve them in
choosing the menu. Invite them along on trips to the grocery store
and allow them to choose one of their favorite foods for the meal
in exchange for eating the healthy fare you have chosen. Parents
may end up eating a lot of side dishes of macaroni and cheese, but
their youngsters will also end up eating their vegetables.
PLAN HEALTHY DESSERTS. Dessert is often considered an
unhealthy indulgence, but theres plenty of nutritious desserts that
are so delicious kids likely will not realize theyre eating healthy. A
dessert of fresh fruit and a small serving of yogurt can provide the
same post-meal refreshment as ice cream or cake, but it does so
with much fewer calories and a lot more nutrients and vitamins.
Whats more, kids will come to look at dessert as a chance to eat
fresh fruits instead of an opportunity to load up on ice cream or
other, less healthy alternatives.
SERVE HEALTHY PORTIONS. Sometimes its not just what is
on the plate but how much is on the plate that can be healthy or
unhealthy. When doling out portions for the family, create healthy
portions so kids are not encouraged to overeat. Kids who grow
up eating healthy portions are more likely to continue doing so
into adulthood. Overeating is one of the culprits behind being

overweight and obese, so kids who learn to control their portions
are much less likely to overeat and gain excess weight.
DONT REWARD KIDS WITH FOOD. Some parents try to

reward youngsters with food, allowing kids to indulge in unhealthy


fare in acknowledgement of a good report card or something
else kids should be proud of. But using food as a reward is an
unhealthy eating habit that can lead to problems down the road as
kids become adults responsible for their own eating habits.

SET A POSITIVE EXAMPLE. Kids are more likely to eat healthy

when mom and dad are healthy eaters. If your first choice at snack
time is to reach for a bag of potato chips, then dont be surprised
when your kids opt for chips over healthier fare like a piece of
fruit. Do as I say, not as I do is a tough sell to youngsters when
it comes to their eating habits, so parents should set a positive
example for their kids by ensuring their own diets are healthy.

system, inhibits the oxidation of LDL cholesterol and


nourishes gum tissue.
CoQ10 is the sparkplug of the cells
and is essential for cellular energy production. New breakthroughs in the science of
CoQ10 manufacturing have created CoQ10
that is up to eight times more bioavailable
than the CoQ10 currently used by most
people. Providing greater levels of CoQ10
to the body is important because recent
studies indicate that higher levels of CoQ10
produce superior results.
CoQ10 occurs in two forms known as
ubiquinone or ubiquinol. It is a biologically active quinone, related in structure
to vitamin K and vitamin E. 90 percent of
the CoQ10 in your body is in the ubiquinol
form. It is found in most tissues in the body,
and in some foods. It can also be made in
the laboratory.

Benefits of CoQ10

CoQ10 is found primarily in the energy


producing parts of our cells and contributes
to the production of ATP, the bodys main
energy molecule. CoQ10 improves the use
of oxygen at the cellular level, particularly in
the heart muscle cells. CoQ10 helps protect
LDL cholesterol from oxidation, maintain
healthy blood vessels and reduce the risk of

taking statin drugs should


take CoQ10 because statin drugs
reduce CoQ10 production.
According to Dr. Andrew Weil, recent
studies have also shown that CoQ10 may
be beneficial for diabetics and Alzheimers
patients. High doses of CoQ10 may prevent
recurrence and increase survival in breast
cancer patients. It is being
studied in the treatment of cancer and in
the relief of side effects caused by some
cancer treatments. Other conditions that
have been studied and show promising
evidence are migraine headaches, muscular
dystrophy and Parkinsons disease.
Ubiquinol is the form that is preferred
and used by the body. There have been
numerous studies that have demonstrated
dramatic anti-aging effects of Ubiquinol
compared to both placebo and conventional CoQ10. Studies on Ubiquinol have
been conducted in both animals and
humans. For example, one recent peer
reviewed study measured the absorption in
humans supplementing with either 150 or
300 milligrams of this new Ubiquinol form
of CoQ10. Results showed that it takes eight
times as much conventional ubiquinone
CoQ10 to achieve the same blood levels
as with a much lower dose of Ubiquinol.

lot of people are talking about


the benefits of The Paleo Diet. All
diets sound convincing at first, but
before you start eating mostly meat and
giving up on your carbohydrates, I invite
you to consider the following:

1. Not all carbs are your


enemy.

As humans, we actually need complex carbohydrates for brain health, muscle energy and
emotional health. And women in particular
will feel the urge for carbs at different times
throughout their cycle. These cravings dont
mean you are bad and out of control; they
mean your body needs something specific
for nourishment. The carbs you dont want
are the simple carbs and those in processed
food. Passing on the sugar, cookies and bread
to avoid the refined carbs is a healthy choice
for sure but that doesnt mean you need to
stop eating all carbs.

2. Our quality of meat is


questionable.

The Paleo Diet is based on our heritage of


being hunter/gatherers. The problem is,
the meat we eat today is very different from
the meat our ancestors used to hunt. Back
then, cows were not roaming the woods.
Factory farm animals are high in toxins

and very inflammatory to the body. Unless


you have access to completely grass-fed,
free-ranging meat or wild game, its best to
stick to predominately plant-based sources
of protein and fish low in mercury. The
philosophy to take away from the hunter/
gatherer approach is to eat seasonally and
locally for the best quality of nutrients.

3. Whole grains and legumes


also go way back in history.

Avoiding all starch may lead to quick


weight loss at first, but its not whats best
for your long-term health. So often as a
nutritionist I see people struggle to omit
food groups and instead end up binging
on them when they no longer can do the
strict diet plan. Choosing starches from
whole grains and root vegetables can be
very nourishing for your sweet tooth, not
just your body. Grains, legumes and root
vegetables have been sustainable dietary
choices for centuries.

4. The most important


thing to remember is how
you eat does not have to
have a name.

Diets that take a rigid approach to eating


dont work long term because they are
static, and you are a living organism.

They dont take into account how your


daily life changes last minute or how
your body needs different foods at different times. Sometimes your body will
need more complex carbs. Other times it
will need more healthy fats. Sometimes
it will need more protein. At least everyone agrees on eating more vegetables and
avoiding processed foods.
Letting your body guide you is much healthier than letting a diet guide you. Remember,
a one-size-fits-all approach does not truly
fit all. It doesnt even fit you all of the time!
Sustainable weight loss happens when you
focus on health first. What foods are you
not eating that could benefit you? Take that
approach versus what to eliminate!

Northwoods Casket Company owner Jonas Zahn
promises sustainability to future generations

THE AVERAGE PERSON takes more than


600 million breaths in his or her lifetime. Those
600 million will soon be a little easier, thanks to
Jonas Zahn, who is pledging his own impressive
number: 10 million trees.
Zahn is founder of Northwoods Casket
Company, a Beaver Dam-based business that
creates sustainable caskets from locally sourced
and environmentally friendly materials. For each
casket Northwoods crafts, Zahn has pledged to
plant 100 trees. That means the company will
need to craft 100,000 caskets to achieve the 10
million tree mark.
This is no lofty aspiration; for Zahn, it is a very
real, personal mission.
Our commitment to plant 10 million trees is
much more than a goal. It is a commitment, a
promise. It is a promise I have made to my children and the state of Wisconsin, he explains.
I have every bit of confidence that we will
achieve this.
His pledge echoes through his and his

companys actions: Zahn is drafting a memorandum of understanding in relation to his treeplanting goal that he will share with the Wisconsin Department of Natural Resources and the
state legislature.
All 10 million trees will be planted in accordance with the Wisconsin Department of
Natural Resources Urban Forestry initiative.
(An urban forest is all of the trees and other
vegetation in and around a community essentially, the plant life found in the locations where
the majority of Wisconsins population lives,
works and makes its carbon footprint.) This
means Northwoods isnt seeding row upon row
of plantation pines; its working to replenish the
specific native tree species the state DNR has
identified as needed to create a diverse tree
population. Diversified forests mean less of a
chance that large numbers of trees will die from
unexpected diseases and pests.
These efforts are already being recognized. Last year, Zahn and Northwoods Casket

THE ROOTS
Zahn hasnt always been in the casket-crafting
business. He studied civil and environmental
engineering in college and afterward became
what he characterizes as a serial entrepreneur.
He worked in high-tech startup companies
for the past 20 years, including one recently
acquired by IBM.
Zahn eventually craved a new direction in
his career one outside of high-tech, one
not focused on technology. He chose casketmaking specifically for this reason, as well as
the challenge of breaking into the surprisingly
monopoly-dominated industry.
While the careful craftsmanship of Northwoods caskets is dear to Zahn, the green and
sustainable messaging [and] building a social
entrepreneurial-focused company is something
thats a personal passion of mine. It brings me
great joy to write out paychecks to people who
really are committed to what we do and how we
do it. We dont have to build this business on the
backs of labor, he explains. Im doing this to

prove that we can build a sustainable business:


one that isnt focused on profits, but focused

in Wisconsin and doing something right by the

I get teased, mostly by my dad, that were a treeplanting company and we craft caskets to fund
such operations which is partially true.
Zahn is on a mission to leave the earth better

isnt good enough: He aspired to make Northwoods a carbon-negative company meaning
the business removes more carbon dioxide from
the planets atmosphere than it adds.
Zahns already able to cross this goal off his
to-do list.
We are a truly carbon-negative company

a profitable company, and we are growing, he
says.

ugust is National Breastfeeding Awareness Month and


there are hundreds of articles and blogs supporting
breastfeeding moms circling about. Here is another!
First, I, of course, support breastfeeding moms. But, I also
support formula-feeding moms as well. Breastfeeding is an
amazing experience and great for babies when it works, but it
saddens me when I see moms feel guilty or disappointed if they
use formula. I mostly formula fed my first kiddos and they have
turned into wonderful, intelligent, happy 6 year olds. No guilt
here. We all do what is best for each of our children, and need to
support and encourage each other.
How many of you are working moms who breastfeed? Well, Im
right there with you. Its hard, but so worth it if you are successful.
Below you will find a list of my favorite pumping and breastfeeding facts and lessons I have learned along the way.

Facts

1. Did you know it is a federal law that companies with over

50 employees are required to provide a location (other


than a restroom) and sufficient time for expressing milk

2. In Wisconsin, you can breastfeed (it is illegal for anyone to
ask you to move or cover up) your child anywhere it is legal
for you to be. So, dont break into a Taco Bell to breastfeed;

3. Most health insurances will supply a breast pump for

breastfeeding moms!

Lessons

You can pump anywhere. The airport at empty terminals

(although certainly, a strange man will sit next to you when


every other seat is available). Bathroom stalls. The car. Even
during oral exams through school/training. Pump through
the awkwardness, my friends.
Like other articles have pointed out, your pump does talk;
hopefully it just has nice things to say.
The milk you bring home each night really is liquid gold, and
only other moms can understand how it feels to lose, spill or
forget that precious milk. In fact, my entire supply of frozen milk
was thawed because of a faulty circuit this summer. I was sobbing.
Your older children may become very interested in breasts
and attempt to breastfeed your newest addition. This is
endearing, but can be embarrassing in public.
While being a working mother who breastfeeds certainly has its
struggles it is also a very rewarding experience for not only myself,
but for my little one as well. Remember ladies: you are not alone
when it comes to breastfeeding we are here to help, support and
encourage you through your breastfeeding journey!

people will be diagnosed with some form of

What really causes cancer?

What we thought we knew is wrong. There

For example, it was assumed that cancer


is a purely genetic disease. We now know
that 95 percent of cancer is caused by the
environment (chemicals called carcinogens) and only 5 percent of cancer is
caused by damage to DNA through inherited traits. In recent years, a common link
has been discovered in all forms of cancer:
inflammation. The subject is quite complex
but the Cliff Notes version is this: chronic
inflammation stimulates the conversion of
normal cells to cancer cells and worsens
the prognosis of existing cancers.

The common belief is that when you are


first diagnosed with cancer, treatment must
start right away seemingly every minute
counts. But, is this really true? The short
answer in most cases is: no. It is a fact that as
you read this article, cancer cells are swimming around in your body. If your immune
system is working properly and you do not
have chronic inflammation, your body will
rid itself of the cancer. When something
goes haywire, you start to accumulate cancer
cells. Your doctor usually does not look
at how long you have had cancer (in some
cases many years). They convince you that if
you do not start treatment immediately, you
will soon die. This is a business and you must
understand their financial motivations.

The key to treating and preventing cancer is diet.


Lets look at the current
conventional ways to
treat cancer:

Surgery. Cutting out cancer does not


reduce inflammation or address underlying causes for cancer. The cancer is likely
to return in 30 to 40 percent of cases.
Chemotherapy. Did you know chemo
drugs cause cancer (just read their labels!)?
How can something that causes cancer cure
cancer? Pharmacists that prepare these drugs
often die of cancer because spillage is inevitable. Nurses that administer chemo wear
masks and gloves. Upwards of 90 percent of
cancer specialists surveyed said they would
not personally take chemo if diagnosed. The
cure rate with chemo is about 2 percent.
Radiation. Really? Radiation causes
cancer! It also causes heart damage in many
cases, which is something youll never hear
about until your ticker malfunctions.
Genomic testing and treatment. Ah,
yes, the latest buzzword! The problem is
that (as we discussed above) only 5 percent
of cancers are due to genetics.

Are there other ways to treat


cancer or prevent it?

Most definitely! The key to treating and


preventing cancer is diet. Here are some
key points:
Avoid sugar at all costs. Sugar is like
gasoline to cancer cells. It is the only fuel
they can use. A low carb diet is also very
important for the same reason. Carbs are
converted to sugar in the bloodstream.
Avoid the inflammation produced by
pro-inflammatory omega-6 oils. Everyone knows that omega-3 oils are good
for you; omega-6 is the evil counterpart. This means to avoid using canola,
corn, peanut, safflower and soybean
oils. The good fats are olive oil, coconut
oil, butter and lard. Buy certified
organic oils whenever possible.
Buy organic produce. A recent study
found a family of five who were eating
traditional foods. Their urine readings of pesticides, fungicides and
other toxins were very high. They then

may have told you to avoid natural


remedies as it can interfere with your
treatment. This is simply not true.
Recent studies show that certain herbs
actually boost the effect of chemo and
speed healing from radiation damage.

they went back to their traditional
foods, their urine toxins went sky high
again. They now only eat organically.
Plant extracts, such as curcumin,
quercetin and ellagic acid are effective

cancer cells) and preventing angiogenesis, which is the process in which new
blood vessels grow from existing blood
vessels (this is essential for cancer to
grow). Drugs designed to alter these
processes have mostly failed.

is that youll have a hard time finding a
doctor in the USA to do it. Some doctors
have been threatened with revocation of
their licenses by the FDA for performing
this therapy since it competes for dollars
with the megalopolis cancer industry.
Another form of vitamin C called liposomal vitamin C is an oral way to get it
without causing untold diarrhea. It is a
good second alternative.

What being a pole


teacher
has taught me

n 2007 I walked into a pole studio in Sydney, Australia, went for


my first spin and fell in love with the sport. After moving back to
the U.S. in 2010 I opened my own pole exercise company to share
my love for pole with the Fox Valley. For 5 years Ive had the privilege
of teaching amazing women how to pole dance. My students have
given me the nickname drill sergeant cheerleader because I push
them, hard; I expect them to achieve; I believe in them; and no one
is more proud than I am when they accomplish their next goal. But
what my students likely dont know is that they inspire me as much as
I them. They have taught me as much as I them. These are two of the
most important lessons Ive learned teaching pole.

1. Size does not matter. Really. Picture this: two women walk in, a
model skinny lady who cannot lift all 80 pounds of herself and a
curvy lady who has no problem lifting her 250 pounds upside down
and holds on with one hand. I see this all the time in the hundreds
of women who have walked through my doors. One of the most
frequent questions Im asked is Is there a weight limit? My answer
is always NO. Our equipment doesnt have a limitation, so the only
limitation is the belief in yourself. What does matter is how well
your stabilizing muscles are supporting your weight, whatever it
may be, and your attitude. Women who are successful tend to have
an attitude of Ill work on it when they dont get a trick right away.

They work on the strengthening moves to build up to the cool trick


and spend time focusing on technique. With proper technique and
the strength built through use of that technique anyone can become
a successful pole dancer. Yes, there are limits. I personally will never
be one of the super bendy members of society that can have my butt
touch my head, but there is a lot I can do. And so can you. And
every other woman who chooses to work at it.
2. Weight loss happens in the kitchen; body composition happens
in the fitness studio. Another question Im asked all the time is
How much weight will I lose doing your 8-week beginner pole

this lean body youve created is very much dependent on what you
eat. I see womens bodies change during our courses. I see back
muscles become defined (this is one of my favorites since they
cant see their backs as easy!) I see their biceps grow. Seeing an
obvious increase in muscle is common but the amount of visible
change is not solely in the hands of your fitness trainer. I really like
food. If it has a lot of sugar (cake!) or has been deep fried (cheese
curds!) I like it even more! So am I as visibly thin as I am strong?

No. Not even close. I accept this because I like food. In a culture
that wants quick fixes, where we see ads for wraps that make you
thin or popping a pill to lose weight, people have the notion that
weight loss and control is easy. Come on. Do you really think you
can eat a donut while you have something wrapped on you and
lose weight? The tried and true method (not to mention, safe) is
to cut your portion size to a reasonable amount, eat everything in
moderation, and have an exercise program that makes you happy
so you do it. Functional strength training gives you a lean look.
Pole will change your body composition, what your body looks
like as a result will be dependent on the fuel you use to feed it.

n celebration of Dr. Usuis 150th birthday, lets revisit Reiki as


the tried and true healing modality that it is. Those already
familiar with the healing arts know what I know. Dr. Usui
is credited with introducing Reiki in the late 1800s as an energy
healing method. With all of the new healing modalities available
these days, it is important to remember that Reiki is not only a
solid foundation, but a constant source for deep inner healing and
energy balancing and has been around for thousands of years.

As each of us go through painful experiences in our life we


automatically try not to feel the pain. At a very young age we were
taught not to cry and not to express our emotions or feelings. This
was considered inappropriate behavior and instead of allowing our
natural feelings and emotions to rise to the surface so we could release
them, we stuffed them in the depths of our subconscious mind or
energy field blocking our inner healer. These frozen moments of
pain remain in our energy field if we do not allow them to fully be
felt and expressed. All of these frozen moments create disharmony
by blocking the natural flow of our inner healers healing energies.
Without realizing it, we create our own illness and disease through
our own unprocessed emotions, feelings and negative thoughts.
As Deepak Chopra says, Our bodies are the battleground for the
wars we rage in our mind. Your mind exists not only in the brain
but also throughout your entire energetic and physical being. Your
mind is your complete human computer system. It is the body as
well as your aura that extends 2-3 feet around your body. Therefore,
negative thoughts, feelings and emotions are not just in the brain.
They also collect in the various locations throughout the body and
aura or energy system.
The places where negative thoughts and feelings collect is
where energy is restricted in flow, therefore negatively affecting
the physical organs that exist at these locations. If the negative

thoughts, feelings and emotions are not eliminated quickly we
create disease and illness.

distortion in the human energy field. If this imbalance or block
is not released it will work its way through the many layers of the
energetic field and make its way to the physical body creating a
symptom or pain. Once it has made its way to the physical body,
doctors, surgeons, and pharmaceuticals are absolutely necessary.
Unfortunately, these methods only treat the effect of the energy
distortion and never get to the root cause of the illness. Often
times, this leads to additional surgeries and a lifetime dependency
on medicine.
Modern medicine is just now beginning to acknowledge that
humans are both energetic and physical beings. Many hospitals
are beginning to incorporate Reiki practitioners in their medical
practice. In fact, Dr. Oz uses two Reiki practitioners in the operating room while he performs open heart surgeries. He understands
that during an operation, patients lose vital life force energy. By
having Reiki practitioners charge up the patients energy field
during an operation their pain will be reduced and they will have
a quicker healing response. Instead of a depleted energy field, they
leave the operating room with higher levels of life force energy
greatly assisting the patients ability to fully recover.
Reiki works on all levels of your being: physical, emotional,
mental and spiritual. Reiki is a full spectrum healing modality
treating both the cause and the effect of the energetic imbalance.
During each Reiki session your entire energetic and physical

system is charged up with a high level of universal life force energy,


which some people call God/Spirit/Source.
This is the energy that animates all living things. When our
life force energy is high we are energetic, healthy, creative and
vibrant. When our life force energy is low, we are more susceptible to illness and we feel depleted, depressed, unhealthy and
exhausted. Naturally as we age, our life force energy begins to
fade. In addition, our lifestyle choices also affect our supply of life

n an era of escalated airline ticket prices and extra travel


expenses, road trips have emerged once more as a popular
and cost-conscious mode of vacationing for individuals and
families.
Nearly 80 percent of leisure trips in 2012 were made by car, says
the U.S. Travel Association. Fodors Travels advises taking road
trips across Canada in the summer, when temperatures average 74
degrees Fahrenheit (23 degrees Celsius) and snow and slush are
a distant memory. Various trips exist that can take you through
urban or rural areas.
Those making road trips may be concerned about keeping costs
down, particularly if saving money is the catalyst behind the road
trip vacation.

The following are a few tips to stretch dollars


that much further on your next road trip.

Dine out sparingly. Road stops and drive-thru food expenditures can quickly add up during the course of a road trip. Therefore, pack the majority of the food you will eat in a cooler. Not
only will this save money, it will mean food is at the ready when
hunger strikes. Food need not be all cold snacks, like sandwiches.
Frozen burgers or refrigerated frankfurters can be cooked on a
camp stove or tossed on a grill at a parks picnic area. Save restaurant dining as a special treat during the vacation.
Look for inexpensive lodging. While on a road trip you may
need to compromise some of the comforts of home to save some
money. Motel rates are another trip budget-buster. But by mixing
overnights at motels with less expensive options you may be
able to mitigate costs. Camp out at a safe campsite and purchase
a shower ticket so you can enjoy a cheap, hot shower the next
day. Spend a few nights under the stars; just be sure you have the
right gear. Some also like to plan road trip routes between where

relatives live and make pit stops at a friend or family members


home. When seeking motels, try to bargain and see if youre eligible for any rebates or coupons due to age or military status.
Map out cheaper gas stations. Todays smartphones have
apps that enable you to find nearby gas stations. Such apps may
even shed light on which filling stations offer the best prices on
gasoline.
Dont speed. In addition to being illegal, speeding wastes gas.
Stick to the speed limit to avoid potentially costly tickets and
improve fuel efficiency.
Bring friends along. Friends will not only make the trip more
fun, but they also can take turns driving and sharing the costs of
the excursion.
Join a roadside assistance club. Vehicle problems are inevitable if you are a frequent road-tripper whos driving an older car.
Avoid potentially costly towing costs by joining a roadside assistance club that will pay for your vehicle to be towed if necessary.
Have the proper paperwork. Keep a current copy of your car
registration, license and proof of insurance with you on a road
trip. This makes it much easier to deal with traffic stops along the
way. Individuals and their passengers planning on visiting another
country should have their passports available and follow the laws
regarding bringing food or goods over the border to avoid fines.

Road trips can be enjoyable excursions that cost far less than other
vacations. Road-trippers can stretch funds even further with
some handy tips.

fat-free diet is recommended by both the American


Diabetes Association and the American Heart Association. In the past no one has questioned these two expert
organizations. Many are questioning them now, however, and I
think it is a good thing.
In my memory, the American Heart Association recommended
that we all give up butter and eat margarine because of cholesterol.
Margarine is a trans fat (fake fat) that the body cannot handle. The
FDA recently said all trans fats must be removed from processed
foods within three years. They are now considered unsafe for
human consumption. They clog arteries and cause many deaths
from heart attacks.
The American Diabetes Association recommends a fat-free diet
that is quite high in carbohydrates including starch, sugar and
flour based products. Starch such as rice and potatoes and all flour
based products, including whole grains, raise blood sugar more
than any other food. Triglyceride fat, often quite high in diabetics
also clogs arteries. High triglyceride fats in the blood are caused
by starch, sugar and flour products. Eliminate these foods from
your diet and the triglyceride level in your blood will drop. You
will very likely be more successful in losing weight if that is your
goal. Your blood sugar levels will drop for sure.
Try it and you will see for yourself. Cut out all trans fats
(partially hydrogenated fats) mostly found in processed foods.
Cut out all rice, potatoes, sugar and flour products as well. It is
not that hard to do.

Nitric oxide

itric oxide (NO) is a naturally occurring molecule


produced in the blood vessels that sends important
signals to every part of the body. It has a wide range of
functions, which include supporting the immune system, aiding
in wound healing and maintaining cardiovascular health. One of
the most important roles of NO is its ability to reduce the risk of
stroke and heart attacks. By causing the smooth muscles around
blood vessels to relax, nitric oxide allows blood to flow more
easily. This keeps arteries flexible and prevents high blood pressure, which is a major risk factor for stroke and heart attacks.
So what else can this molecule do? The benefits of nitric oxide
seem to be endless. It has been shown to increase exercise tolerance, to improve blood flow, to reduce swelling and inflammation, to assist the immune system and limit damage caused by the
sun. Studies have linked deficient nitric oxide levels to depression,

Our body produces nitric oxide by several different mechanisms.


One way is by utilizing the nitrate and nitrite from our diet and
converting it to NO. Foods rich in these compounds include fruits
and vegetables, and mainly dark green leafy vegetables. It has also
been shown that foods containing polyphenols, including pomegranate juice, apples, dark chocolate, and black and green teas can

Tips on
planning a
Celebration
of
Support

Celebration of Support event is a one day event


that is a fund/spirit raiser for individuals and their
families struggling with a medical crisis. Making
sure the Celebration of Support is successful is crucial
in the emotional and financial well-being of the family
you are helping. Having the knowledge and tools can make that
difference!

Tip 1: Permission

Getting the individual and familys permission to hold the event


is VERY important. You are displaying their personal information
out there to the public. In order for it to be successful emotionally,
you need to know they are excited and happy about the event and
getting their permission will help with that as well.

Tip 2: Planning

Planning a Celebration of Support event is not an easy task but


very rewarding, so be prepared to give of your time in order to
make it a successful one. A Celebration of Support is a one-time
event so it is important to get it right the first time and not have
the mindset of whatever we raise is better than nothing, since it
is vital to raise the amount they need to survive their financial
medical crisis. You have one shot to do it right and they are counting on you! Average planning time for the event is three to four
months and you will need 5 to 10 people on the planning team.
The more you are prepared, the easier the planning and the day of
the event will go.

Tip 3: Location/Date

Location is very important in the success of getting and holding


attendees. Items to consider: making sure the venue you hold
the event in is a key location where the majority of the familys
support system is located, making sure the venue has enough
room to hold 200 to 300 attendees at a time, and has room to set
up tables for the different activities (silent auction, raffles, bake
sale, food, etc.). The two best days to have an event are a Saturday or Sunday. Stay away from weddings, family reunions, Packer
games, and big public events such as fairs and carnivals dont
try to compete. Maximum hours to hold the event is between 4
and 5 hours. Questions to ask the venue: will they let you bring
food in, do they have a discount on food, or can we bring in food
donated by other restaurants, do they give you a percent of the
sales from the bar and most importantly will they give you the
place for free.

Tip 4: Promoting

Promoting the Celebration of Support is vital. If you have no


attendees then there is no fund/spirits that are being raised for the
family that you are planning the event for. There are 5 key components to creating awareness for the event: Compose a solicitation

letter to solicit for donation, create a postcard invitation to send to


family, friends, coworkers, etc., create a poster for awareness to the
general public and create a Facebook page and a webpage to invite
people that will have the capability for people to donate online or
know where to donate. Remember this isnt like a wedding where
you only invite a certain amount of people, this is where you invite
as many people as you can, even people you dont know to come
and support the family. It is key to remember to put the majority
of the focus on the familys support system in getting them to be
aware of it and attend, then it is to focus on the general public.

Tip 5: Raising spirits and funds

It is important to raise the funds needed for the family to survive


the medical crisis. It helps to have the family work with a financial
planner to assist them in coming up with the amount needed and
then giving it to the planning team so they and the supporters
have a goal in mind. It is important for the team to figure out what
activities they will do in order to raise the funds needed. Such
ideas for activities are silent auctions, bake sales, games, food, live
auctions or raffles (but remember in the state of Wisconsin it is
illegal for anyone to hold a raffle unless they have a Wisconsin
Dept. of Gaming license). Having a credit card machine at the
event will encourage attendees to spend more. Give the attendees opportunities to spend their money by having many different
activities. It is also about raising spirits! Some ideas to make it a
celebration are having a personal theme logo and decorations that
fit the recipients likes and interests such as a theme logo, Fishing
for Support for Tom with fishing decorations or In Honor of
her Royal Highness Brooklyn and have castles and royal attire.
Other ideas are having a photographer and videographer capture
the event, along with a message board for the attendees to write
messages on, to be a continued remembrance of that joyous day.
Having the planning team, volunteers and family wear T-shirts
shows great support along with it being a great keepsake.

Beyond this excellent state resource, the US Environmental Protection Agency (EPA) also has a wealth of resources for
environmental learning and education. Similar to WDNR, the
EPA offers activities and ideas for both educators and students.
Amongst the materials available for teachers are lesson plans,
teacher guides, community service project ideas and science fair
project ideas. Resources are available for grades K-12, and each
plan identifies the appropriate grade level range. Environmental
topic areas include air, climate change, ecosystems, energy, health,
waste and water.
For kids at the EPA site, fun games and quizzes are offered,
again broken down by grades. For science and social studies
schoolwork, there is also a homework resources section, which
offers help in the same environmental topic areas as the teacher
resources above. Finally, EPA offers an entire Student Awards and
Contests section, which features the Presidents Environmental
Youth Award, among other science and environmental awards for

Homemade ice cream makes


for
the perfect summer treat

ce cream is synonymous with summer, when rising temperatures and vacations from school and work call for some
refreshing celebration. Those who want to experiment with
homemade ice cream may want to consider the following recipe
for Dulce de Leche Ice Cream from Lou Seibert Pappas Ice
Creams and Sorbets (Chronicle Books).

Dulce de Leche Ice Cream

Makes about 1 quart


2 cups half-and-half or milk
4 large egg yolks
1/2 cup sugar
12 ounces butterscotch chips, divided
1 cup heavy whipping cream
1 teaspoon vanilla extract
Prepare a large bowl or pan of ice water.
In the top of a double boiler, heat the half-and-half over

simmering water until steaming. In a bowl, whisk the egg yolks


until blended, then whisk in the sugar. Whisk in about half of
the hot half-and-half and pour the yolk mixture into the pan of
half-and-half. Stir with a silicone spatula or spoon and cook over
simmering water for about 8 minutes. Stir in 1 cup of the chips
and continue stirring until blended in and the custard coats the
back of the spatula, about 2 minutes more. Immediately place
the custard pan in the ice bath and stir the custard occasionally
until it cools to room temperature. Transfer to a container and stir
in the cream and vanilla. Cover and refrigerate until thoroughly
chilled, about 3 hours.
Freeze in an ice cream maker according to the manufacturers instructions. When the ice cream is almost frozen, add the
remaining 1 cup chips and churn until blended in, about 15
seconds more. Transfer to a container, cover and freeze until firm,
about 2 hours.

Medical Crises

here do people in the Fox Valley and surrounding


areas turn when they struggle with a medical crisis?
Who is there to help with the financial cost and the
emotional devastation? Is anyone available for spiritual advice?
Thankfully, we have Community Benefit Tree, Inc. (CBT), a
501(c)3 non-profit organization governed by Christian values and
set up specifically to help individuals or families get through a
medical crisis. Eleven years old in June, Community Benefit Tree
has already helped more than 500 families with funds for medical
and living expenses.
The concept for the non-profit started when Heidi Frederickson, executive director, recognized the need for an organization
to help friends and family raise funds for individuals in financial
need as the result of a medical emergency. She started the business
with her mother, Karla Wolfinger, to meet that need.
Community Benefit Tree helps teams plan and implement
one-day Celebrations of Support to help individuals celebrate the
financial and emotional support they receive from those close to
them and from the community at large. Events are always open
to the public.
In addition to Celebrations, CBT sets up funds for direct donations, often for those who are unable to participate in an event.

Frederickson soon realized that people in medical crises need


more than just financial support. Lengthy medical struggles may
deplete them emotionally and cause spiritual struggles as well.
She and her staff partner with area churches, helping people get
connected if theyre looking for a place to call home. They receive
prayer requests and pray for them, as well as providing resources,
like a Bible or inspirational materials.
Practically, CBT can set individuals up with a financial advocate coach for help with budgeting or estate planning or a will,
so theyre prepared for any outcome. They can connect them
with resources to help them apply for Social Security Disability
if necessary.
CBT also provides education to local businesses. They teach
employers how to help employees during medical crises, providing helpful tools and information, and teach employees how to
survive such a crisis. A big part of education is informing people
about support resources of various types. Community Benefit
Tree, Inc. is there to meet the needs of those experiencing a
medical crisis.

Garlic
Allium sativum


arlic is the edible bulb from a plant in the lily family. It has
been used as both a medicine and a spice for thousands of
years. Garlics most common folk or traditional uses as a
dietary supplement are for high cholesterol, heart disease and high
blood pressure. Other folk or traditional uses include prevention
of certain types of cancer, including stomach and colon cancers.
Garlic cloves can be eaten raw or cooked. They may also be dried
or powdered and used in tablets and capsules. Raw garlic cloves
can be used to make oils and liquid extracts.

What the science says

Some evidence indicates that taking garlic can slightly lower


blood cholesterol levels; studies have shown positive effects for
short-term (1 to 3 months) use. However, an NCCIH-funded
study on the safety and effectiveness of three garlic preparations
(fresh garlic, dried powdered garlic tablets and aged garlic extract
tablets) for lowering blood cholesterol levels found no effect.
Preliminary research suggests that taking garlic may slow the
development of atherosclerosis (hardening of the arteries), a
condition that can lead to heart disease or stroke.
Evidence suggests that taking garlic may slightly lower blood
pressure, particularly in people with high blood pressure.
Some studies suggest consuming garlic as a regular part of the
diet may lower the risk of certain cancers. However, no clinical
trials have examined this. A clinical trial on the long-term use
of garlic supplements to prevent stomach cancer found no effect.

Recent NCCIH-funded research includes studies on how garlic


interacts with certain drugs; its effects on liver function and the
dilation and constriction of blood vessels; and the bioavailability
(how well a substance is absorbed by the body) of allicin, the main
active compound of garlic.

Side effects and cautions

Garlic appears to be safe for most adults.


Side effects include breath and body odor, heartburn, upset
stomach and allergic reactions. These side effects are more
common with raw garlic.
Garlic can thin the blood (reduce the ability of blood to clot) in
a manner similar to aspirin. This effect may be a problem during
or after surgery. Use garlic with caution if you are planning to have
surgery or dental work, or if you have a bleeding disorder.
Garlic has been found to interfere with the effectiveness of saquinavir, a drug used to treat HIV infection. Its effect on other drugs
has not been well studied.
Tell all your health care providers about any complementary
health approaches you use. Give them a full picture of what you do to
manage your health. This will help ensure coordinated and safe care.
