PRODUCTION PROCESS SCHEME OF GANACHE CAKE


a. Preparation process
The preparation process basically involves the preparation of the pasta
and noodle dough and also the sauces.
i. Preparation of the pasta dough

200 g Flour was placed on top


of the table and a crater was
made using finger

The mixture was mixed and scrambled


to mix the ingredients together until it
doesnt stick between one another

2 eggs were cracked inside


the crater

Addition of 1 tsp olive oil


and a pinch of salt

Aging of the pasta dough


for 30 minutes
The dough was kneaded until it is elastic (right)

ii. Preparation of the noodle dough

128 g Flour was placed on top

into the mixture inside the

Addition of 1/2 tsp salt into the


mixture inside the crater

The mixture was mixed and scrambled


to mix the ingredients together until it

Addition of 1-2 tbsp of water

Dusting of dough with tapioca


flour

The dough was kneaded until it is elastic (right)

b. Cooking Process
The cooking process is basically cooking the pasta and noodle with
their respective sauces.
i. Cooking the pasta sauce and carbonara pasta










15g Smoked Beef, 20 g Onion, 10
g Garlic, and 40 g Champignon
Mushroom were sliced













Addition of ladle of

beef, and frozen peas that
are firstly soaked in hot
water

Parmesan cheese



Placing of finished fettuccine with carbonara
sauce on plate

ii. Cooking the noodle sauce and chicken noodle












150 g Minced Chicken meat, 20 g
Garlic, 15 g Onion, 30 g Leek and
20 g Champignon Mushroom
were prepared and sliced



Minced chicken are
sauted until it turns
brown












Addition of a pinch of salt



Addition of 10 g sliced
onion and 20 g garlic












Addition of 2 tbsp. of soy
sauce



Addition of 2 tbsp. of
sesame oil












Addition of 2 tbsp. of
sweet soy sauce



Addition of 2 tbsp. of
oyster sauce













Placement of cooked noodle
