NEW SEASON, NEW MENU, NEW FOOQ'S



MIAMI (November 2, 2015) Rolling in with the Fall season in Miami is a whole new era
for Fooqs. Owner David Foulquier and newly installed Head Chef, Bryan Rojas, former
chef de partie at Michael Schwartzs Cypress Room, have constructed a new menu while
maintaining the homey, farm-to-table atmosphere and a number of signature dishes that
we all know and love at Fooqs.

Fooqs has always been a place where worlds of flavors collide. Chef Bryan Rojas, trained
by renowned Chef Roel Alcudia, focuses on the restaurants French and Persian roots
while adding unexpected flavors to the new Fall menu. Chef Alcudia has stayed on board
as consultant for the restaurants transition, and will stick around until December,
contributing his immeasurable experience to the project and guiding his protg in getting
ready for the leading role.

What excites me about Fooqs is the restaurants energy. I feel like I am part of a young,
innovative family and I am honored to have Roel Acudia, my mentor, guiding me through
this new endeavor. Adds Rojas.

The additions feature elevated options on both the lunch and dinner menus. The new
items continue to reflect Fooqs tradition of using only the freshest and highest quality
ingredients. The Fooqs Salad with cucumber, grapes, hummus, feta, and olive oil, is a
light and crisp dish that pays homage to the classic Mediterranean flavors that are an
essential part of Fooqs new menu. The Moules Frites, mussels served with white wine,
chilies, garlic broth, and hand-cut fries, is a novel twist to the high-end French classics,
and is part of a culinary tradition that is important to Foulquier himself.



On the dinner menu, Foulquier and Chef Rojas have introduced an essential aspect of
rustic, fine dining that seemed to be missing from the original menu like a classic
Bouillabaisse; the traditional Provencal seafood stew includes delicate clams, daily fish,
saffron, fennel, potatoes and aioli. They have also added a 15 oz. Persian Lamb Shank
to be served family style (for 2). The dish is served bone-in, with harrisa hummus, herb
yogurt, zataar Naan bread, and natural jus.

The restaurants renaissance reflects Fooqs two-fold values of tradition and
modernity. From design and atmosphere, to the featured menu items that honor culinary
traditions with a novel a twist, these values have always been a vital part of the
restaurants undertakings. Chef Rokas contributions will add to this practice of honoring
traditions and welcoming cutting-edge change that Fooqs is known for.

ABOUT FOOQS: Located in the heart of Downtown Miamis Arts & Entertainment District,
Fooqs is a restaurant serving Feel Good Food in an urban, yet distinctly cozy setting.
A concept created by restaurateur David Foulquier, Fooqs brings a new definition to
comfort food that sparks the sentiment of feeling right at home. The farm-to-kitchen fare

at Fooqs, features international menu selections that change seasonally, a daily blue-

786.536.2749. Fooq's will be open for lunch 12:003:30pm daily and dinner 6:00
10:30pm Friday - Saturday. Saturday will be exclusive for dinner. Parking lot is available
