1 (14.1-oz) box refrigerated pie crusts

Meal 1

1 (12-oz) bag salad greens


4 green onions, chopped
2 to 3 Roma tomatoes, diced
cup Greek or favorite dressing

Instructions:

Preheat oven to 400F. Place diced potatoes


in a small saucepan; cover with water. Bring to
a boil and cook 5 minutes. Drain; set aside.
Melt butter in a large ovenproof skillet over
medium heat. Add chicken, garlic salt, and
pepper; cook, stirring, 8 minutes. Add flour;
cook, stirring, 2 minutes. Stir in broth and soup;
cook 5 minutes or until slightly thickened. Add
vegetables, parboiled potatoes, and thyme; stir
in sour cream. Unroll pie crusts on a lightly
floured surface. Stack pie crusts, and roll
together into a 12-inch round. Place crust over
filling in skillet. Turn edges under, and crimp if
desired. Cut 4 (1-inch) slits in top of crust. Bake
25 minutes or until crust is browned and filling is
hot and bubbly.
Note:Pot pie filling can also be spooned into a
13-x 9-inch baking dish. Roll crusts to fit over
filling and bake as directed.

Boil corn according to package directions.


Serve with butter, salt and pepper. Place salad
greens in a bowl and top with avocado.Drizzle
with dressing just before serving.

Meal 3

Mashed Potatoes

Preheat oven to 350F.Spray a 12-count


muffin tin with cooking spray. Cook ground beef
with onions in a large skillet until meat is
browned and crumbly; drain and stir in
barbecue sauce. Prepare muffin mix according
to package directions.Pour 2 Tbsp of muffin
mix into each muffin cup.Top with beef mixture.
Bake 20 minutes, or until muffins are done. Top
with cheese and green onions; return to oven to
melt cheese. Serve.

1 lb fresh broccoli florets
tsp salt, tsp pepper
1 (9-oz) pkg dried potato flakes

Preheat oven to 350F. Stir together cracker


crumbs, cheese, parsley, salt, pepper and garlic
powder in a shallow dish. Pour melted butter
into a separate shallow dish. Cut chicken
pieces in half crosswise; pound to -inchthickness. Dip chicken in melted butter; dredge
in cracker mixture, coating both sides. Place in
a greased 13- x 9-inch baking dish; pour
remaining butter over chicken. Bake uncovered
20 to 25 minutes, or until chicken is done.

Preheat oven to 400F. Heat butter in a small


saucepan over medium heat, stirring constantly,
4 minutes or just until butter begins to turn
golden brown. Immediately remove pan from
heat, and pour butter into a jellyroll pan. Add
broccoli, salt and pepper, and toss to
coat.Bake 12 minutes or until tender. Prepare
potatoes according to package directions.

Instructions:

To make wing sauce, stir together cup


melted butter, hot sauce, 2 Tbsp vinegar, and
onion powder. Taste and add 1 Tbsp vinegar if
desired. Season chicken evenly with salt and
pepper.Place chicken in a lightly greased 6-or
7-quart slow cooker. Pour 1 cup wing sauce
over chicken; dot with cup butter
pieces.Cover and cook on Low for 6 to 8 hours.
Meanwhile, preheat oven to 400F. Place
potatoes on a large baking sheet; prick with a
fork.Bake 1 hour or until done. Cool potatoes,
and slit lengthwise, but not through bottom.
Shred chicken; serve over baked potatoes. Top
potatoes with desired amount of cheese, green
onions and blue cheese dressing.

Preheat grill to medium-high heat. Combine


ground beef, chorizo, onion, garlic, salt and
pepper in a large bowl; mix just until
blended.Shape beef mixture into 6 patties.
Place on a grill rack rubbed with oil.Grill 5
minutes per side or until done. Serve over
noodles.
Note:Burgers can be cooked in a skillet, if
preferred.

Instructions:

Heat oil and butter in a non-stick skillet.


Saut onion and pepper slices 5 minutes. Add
zucchini and saut 3 minutes. Season with
Italian herbs and garlic salt. Heat a panini
press, griddle or large skillet to medium high
heat. Divide vegetables among 6 slices of
bread. Top with tomato and cheese slices. Top
with remaining slices of bread. Press and grill
the sandwiches until browned and cheese is
melted.

once.
