Recipe of Lomo Saltado
Ingredients
- A piece of beef, 500 grams (sliced).
- 2 cups of vegetable oil.
- 5 large potatoes (sliced)
- 2 large onions (sliced)
- 2 peeled tomatoes (sliced)
- 2 yellow pepper (aj Amarillo)
- cup of vinegar
- 2 spoons of soy sauce
- Some salt, pepper to taste
- 1 spoon of chopped coriander
- Cooked rice
Directions:
Step one:
Fry the sliced potatoes in a pan with plenty of vegetable oil until they look well browned.
Step two:
Heat some vegetable oil in a frying pan. Season the sliced beef with salt and pepper to taste.
Fry the meat until just cooked, and the juices begin to release. Remove the meat from the frying
pan, add some oil if necessary then fry the onions, until they are transparent. Add the tomato
and yellow pepper; cook until the tomato softens. Pour some vinegar and soy sauce, add the
fried potatoes, cover, and cook until the beef is done, about 3 minutes. Season to taste with
some salt and pepper, and sprinkle with a little chopped coriander to serve. Serve with some
cooked rice.
