Introduction to MacPhail Tasting This is a perfect introduction to their
amazing wine portfolio, featuring a tasting flight of current release wines,

Single Vineyard Tasting This seated tasting includes a selection of up to
six single vineyard wines, from different appellations, featured in an
educational tasting, which highlights attributes of each unique growing area.

Soil Pairings Winemaker James MacPhail created a Soil Wall in the Tasting
Lounge showing 8' cross sections of 4 vineyards: Toulouse, Pratt, Sundawg
and Mardikian. This informative tasting highlights three of the most important
components in winemaking - soil, clonal selection and vintage (the Mother
Nature part). $30 per person, with one fee waived for every two or more

Library & Reserve Tasting This special tasting includes a flight of older
vintage library, vertical or reserve wines from the vaults. $50 per person,

Artisanal Experiences The McPhail team selects a new local cheesemaker
each month and works with them to create a selection of cheeses to perfectly

(SERVES 6)
INGREDIENTS:
Six boneless salmon filets (Whole Foods sells a frozen pack
of six salmon filets that work perfectly for this recipe)
cup of diced red onion
Two cedar smoking planks
Wood smoking chips and a metal grill-top smoker box
MARINADE:
2 tablespoons honey
2 tablespoons Dijon mustard
1 tablespoon soy sauce
1 teaspoon fresh ginger or ginger paste (We use Gourmet Garden Ginger Paste)
PREPARATION:
Soak cedar smoking plank(s) and wood chips for a minimum of four hours, preferably
six to eight hours or even overnight. Be sure to weigh down the wood planks so they
are fully submerged during soaking.
Preheat grill to 500 with wood chips (in smoke box) placed on top of burners along the
side of the grill. Prepare marinade as grill heats.
Warm honey in microwave for 20 seconds at half power to soften. Mix mustard into
the honey first and then mix in ginger and soy sauce. Place salmon filets onto watersoaked cedar planks and brush marinade on salmon filets. Sprinkle cup of diced
red onions over salmon. Place planks with salmon on grill. Make sure to avoid placing
the planks directly over the box of wood chips, in case the box flares up with a fire.
Grill the salmon for 12 minutes. Be careful not to overcook. Twelve minutes goes by
fast! We like to serve the salmon on a bed of balsamic drizzled arugula alongside new

The Napa Valley Wine Train Announces
Championship Wine Flight To Celebrate Super Bowl 50
The Napa Valley Wine Train is scoring another touchdown with
wine fans. Now through the end of football season, the historic
Napa Valley Wine Train kicks off its new Championship Wine
Flight featuring wineries founded by such NFL greats as Charles
Woodson, Dick Vermeil and Rick Mirerall in anticipation of
Super Bowl 50to be played February 7, 2016 in Santa Clara, CA.
The Napa Valley Wine Train offers a 36-mile, round-trip journey
from Napa to St. Helena through beautiful Wine Country vineyards
and past famous and historic wineries. Traversing on the original
rail line built in 1864, guests of the Napa Valley Wine Train
experience one of Napas most distinctive fine-dining restaurants,
savoring multi-course meals while traveling in a museum-quality
antique train.
We are delighted to welcome locals and visitors to join us on
the Wine Train to enjoy our Championship Wine Flight, and we are
equally thrilled to welcome Super Bowl 50 to the Bay Area in
2016, said Anthony Giaccio, Napa Valley Wine Trains CEO. It has
been our vision since the Wine Trains inception to offer local wines
that complement our fresh cuisine and reflect the heritage of the
Napa Valley.
The Championship Wine Flight in honor of Super Bowl 50 will
be offered on lunch and dinner trains to accompany the delicious
menu selections now until the end of February 2016. The
Championship Wine Flight is $20, with $1 of those sold donated to
the NFL Hall of Fame Players Foundation.
The Napa Valley Wine Train offers an award-winning wine list
recognized for supporting the local wine community and featuring
wines predominantly from the Napa Valley. Executive chef Kelly
Macdonald suggests a wine pairing for each menu item while
offering wines by the glass and by the bottle. Additional wine

Calistogas Winter in the Wineries Passport Series, Through February 7
Winter may not be the first time of year that pops into your head
when thinking about a visit to Californias premier wine region. But
wine country is enchanting and beautiful throughout the year.
Winter, with fewer crowds and cooler temperatures, is a great time to
visit.
With Calistogas Winter in the Wineries passport series running
now through February 7, visitors to the northern Napa Valley town
and its surrounding areas will be treated to great wines, special
restaurant offers and discounts to area lodging and shopping.
For $50, passport holders have access to 15 wine tastings
throughout the two months of the series at some of the regions large
and boutique wineries, including Castello di Amorosa, Sterling
Vineyards, Bennett Lane and August Briggs.
Sterling Vineyards, one of the best-known stops on the Winter in
the Wineries Passport Series and located at 1111 Dunaweal Lane, 300
feet above Calistoga, offers visitors sweeping views and highly
regarded wines. An aerial, solar-powered tram carries visitors from
ground level up to its winery estate modeled after the architecture
found on the Greek island of Mykonos. Visitors will not be
disappointed spending a few hours indulging in its offerings.
Bennett Lane winery, located on Highway 128, just north of
Calistoga, is a family-owned winery that is home to the Maximus

the aromas jump out of the glass with notes of fresh plums,
boysenberry, caramel, dried blackberry and hints of cola spice. The
palate opens with creamy notes of boysenberry syrup, plums, fresh
figs, with intriguing aromatics of fall spices and complements with
a long finish. Our 2013 Pinot should age nicely over the next three
to seven years, and should pair superbly with grilled steak, steak au
poivre, beef bourgogne, chicken and rice, mushroom risotto and
the likes.

Founded in 1992, today Frank Family owns 380 acres of the finest vineyard land
in Napa Valley and has one of the biggest word-of-mouth followings in the wine
country. First constructed as the Larkmead Winery in 1884, the historic stone
building on the property was refinished with native sandstone from the nearby
hills in 1906. The massive stone edifice is considered one of the finest structures
in the Napa Valley; it appears on the National Register of Historical Places and is
listed as a Point of Historical Interest in the state of California.

The Tradition and Elegance of Martin Ray Pinot Noir
Founder Martin Ray was considered a pioneer back in the 1940s by
producing and bottling 100% varietal Pinot Noir, Chardonnay and
Cabernet Sauvignon in the Santa Cruz mountains near Saratoga, CA.
Owned by the Benham family since 1990 and located at its new home
since 2003, Martin Ray Vineyards and Winery sits on the historic site of
the oldest continuously operated winery facility in Californiahaving
produced wines here since 1881. The winemaking team is continuing
the tradition of Martin Ray by producing its own 100% varietal Russian
River Valley grown Chardonnay and Pinot Noir. From vineyards located
on and adjacent to the winery, they have just released 2014 Estate
Grown Pinot Noir [$50] sold exclusively at the winerys tasting room.
These 12 acres of vineyards include seven blocks of Dijon-clone Pinot
Noir including one acre of the highly-prized, Merry Edwards clone.
Elegant and fresh, this limited-release overwhelms with aromas of tart
cranberries, fresh Bing cherries and wild raspberriesunderscored by
notes of orange blossoms, rose petals and a graphite minerality. Bright
acidity and a slight suggestion of well-integrated vanilla and caramel
from the French oak make this offering juicy and clean, but definitive
and cellar-worthy.
