Kris Wright CPT NewFire Fitness

8303 Sierra College Boulevard, Suite 106-108 Roseville | (916) 757-2860

1. I have been a personal trainer for 6 years and started at California Family Fitness. I
have also worked for Spare Time Racquet Club and Lifetime Athletic. I currently work
for myself at a studio in Granite Bay called NewFire Fitness. I am certied by NASM
(National Academy of Sports Medicine) and ACTION. I also have my group exercise
certication, but currently do not teach classes.
2. Im not a big believer in tness trends. I believe in movement. Whatever you love
to do that helps you get t and also keeps you injury free, is my belief. The company
that I follow religiously for quality of movement and recovery/overall health is Functional Patterns. They are the gold standard in tness in my opinion.
3. Most people just exercise for the aesthetic benet. I truly believe that we should
exercise to improve the quality of our lives. If you dont take care of your body it wont take care of you. Focus on recovery just as
much as you focus on working out so when you get older you can still stay active and do the things you love to do. Most of all,
make tness and health a lifestyle
4. I do a lot of things that I have fun with. Whether it be mixed martial arts, basketball, swimming, or functional training; I make
sure that whatever I do improves my quality of life. Aside from that I do a lot of studying on how to recover correctly and improve
posture which helps my body stay in better shape.

1. I am a CrossFit Level 1 Coach at a local CrossFit Afliate. I have my CrossFit Level 1

Certicate. I am a NASM (National Academy of Sports Medicine) Certied Personal
Trainer. I have competed as a CrossFit athlete for six years.
2. I constantly read articles on how to reach different tness goals from TNation, Lift
Big Eat Big, CrossFit Main Site, CrossFit Times, and Box Life. I drop in to different
CrossFit Afliates and learn what different coaches and athletes are doing to reach
their goals and remain competitive. I learn from other trainers and nutritionists I work
with. I also use the latest gear and equipment to improve mobility and functionality.
3. Lead from the front. Know what youre doing and why youre doing it. The only
easy day was yesterday and it pays to be a winner.
4. I do CrossFit to stay in shape. I also do constantly varied, functional movements, performed
at high intensity. This means I do Powerlifting, Olympic Lifting, Gymnastics, Running, Rowing,
and Plyometrics all in an effort to increase work capacity across broad time and modal domains.

1. I have been a trainer for 16 years. I have received multiple certications over the
years as a tness trainer and sports performance coach. I grew up playing sports
year-round and practiced martial arts for many years.
2. I always like to read new books on tness and nutrition. Most current tness
trends are rehashed ideas from the past with slight twists or good marketing. On
occasion new tools or ideas on tness come up and I evaluate them. If they t my
tness training philosophy then I incorporate them into my clients workouts.
3. A tness program needs to be well rounded. If you only perform one type of tness training then you will limit yourself to that discipline. Weight training is great,
but if you only lift weights then your cardiovascular capacity will be weak. If you run
everyday and do not participate in weight training, then your muscle structure will be decient. I like to combine cardiovascular,
weight training, calisthenics and stretching for my clients training program. Every client is different and so is their training program, but all aspects of tness training are included. I also like to keep training interesting so lots of variety is also important.
4. I stay in shape by training myself the same way I train my clients. I have a well rounded training program that includes cardiovascular training, weight training, calisthenics and stretching.

1. For over 16 years, I have worked as a tness professional and executive level
manager. I have earned multiple credentials from the National Academy of Sports
Medicine, National Exercise & Sports Trainers Association and the Spencer School of
Business. I am also a Fitness Nutrition Coach and hold a business degree from University of Phoenix. I am a former instructor and current consultant to the Advanced
Personal Training and Exercise Science program offered by Bryan University.
2. Because Elite Athletics works with both general tness clients and athletes, each
of our tness trainers and myself keep up to date with industry publications, scientic journals and tending exercise types and approaches. We take the very best ideas
and research to create programs that deliver results.
3. At Elite Athletics, we design progressive and results driven programs based on an individuals current condition level and
ultimate goal. Each workout is intended to maximize activities with a safe, effective and fun approach.
4. First and foremost I manage my food intake because nutrition is the bedrock of performance and wellbeing. As for activities I
am an avid hiker, walker and general outdoorsman. Anything that gets me outside and in the wide open helps keep my body and
mind t. I also incorporate light resistance training for overall health.

1. I hold several National certications including: NASM (National Academy of

Sports Medicine) Personal Trainer, NASM CES (Corrective Exercise Specialist), FNS
(Fitness Nutrition Specialist), AFAA (Aerobics and Fitness Association of America)
Certied Group Fitness Instructor and Max Certied Fitness Instructor.
2. I am continuously reading articles and researching information from various
Personal Trainers and Master Trainers from both NASM and AFAA to improve my
knowledge and skill set. I also network with local trainers to discuss tness trends
and current training programs that they may incorporate into workouts with clients.
Additionally, I attend workshops and seminars to stay informed on new personal
training tools and information.
3. My personal training philosophy is about guiding clients to a healthier, happier life with safe, customized, fresh and fun workouts. I am here to motivate, educate and help clients maintain their health and achieve and maintain a high level of functional
ability. This should be among everyones highest priorities. You only live once, and both how long you live and that enjoyment of
life are directly affected by your health, and your physical capabilities. Exercise is one of the most important things you can do to
improve that life. Eating right and working out need to become part of youre daily routine.
4. I am a marathon runner and Ultra Trail runner, training several days a week. In addition to that I also strength train using body
weight exercises and lift weights. I enjoy cycling year round and water sport activities during the summer months.

1. All my life I have played sports and participated in athletics. Now that I am an older athlete, mobility and exibility
have become high priorities along with staying strong. Understanding the science behind conditioning and re-conditioning our bodies is my new passion.
2. I follow an integrated training approach. Meaning, that
exibly, core stabilization and strength, balance, plyometrics, coordination and resistance training make a complete
training program. I typically rely on the National Academy of
Sports Medicine for study related to current trends.
3. Consistency is what I preach. Our bodies were designed to be exercised everyday. Some days more intense than others but
some form of exercise everyday.
4. I workout 5 to 6 days a week and eat clean unprocessed food every 2 hours. I keep my alcohol consumption to a minimum of
2 drinks a week.

2. I am currently certifying in Precision Nutrition level 1 and read T-nation scientic articles and

3. Workout and train for your life. If you love golf, train golf skills. If you love to snowboard, train
snowboarding skills. If you love to be healthy, train in safe and mechanically functional manner.
Work smart, not hard.
4. To say in shape I snowboard, play basketball, sleep seven to eight hours a night, eat high
quality foods at the appropriate times and strength train two to four times a week. I am active

and Pilates workshops both locally, and worldwide.
3. I believe healthy eating and functional movement practice looks different for each
individual, but can be enjoyable for everyone. In my work with clients, I am dedicated to addressing each persons unique goals and needs in order to develop an
exercise and nutrition plan that will serve and sustain them in their pursuit of health.
4. I stay in shape through mindful movement and eating practices that are respectful

Jimmy Badra LHT Revolution Weight Loss Center

6891 Douglas Blvd Granite Bay | (916) 872-1046

1. I have won over 22 titles in the tness and bodybuilding arenas including Mr.
San Jose, Reno, California Gold Cup, Western U.S.A., Mr. Universe and Mr. World.
From calendars to greeting cards, my physique has graced newspapers from as far
as the U.S. to Canada and the Middle East. I have been featured on the front cover
of Muscular Development Magazine as well as appearing in three TV commercials
for heavyweight tness giants 24 Hour Fitness and Family Fitness. A popular motivator and speaker, Ive conducted numerous health and tness workshops across the
country. In addition, Im a seasoned entrepreneur, having founded six companies
throughout my career, including restaurants, gyms and most recently LHT Revolution (which I am franchising) Family Weight Loss Centers in Granite Bay.
2. I speak regularly with Doctors, health scientists and other top athletes in the industry. I read the internet a lot and subscribe to numerous newsletters from experts
in order to keep current. I nd the pace of information is ever changing, so as an expert giving advice to others I believe its extremely important for me to stay current!
3. Proper nutrition, rest and an exercise program that is balanced according to your individuals needs. The truth is that were all
unique and have different needs depending on our age, illness, if weve had, or currently have an injury etc. If youre striving to
lose weight, youll be on a different plan then if youre getting ready to go into a competition. Another big part of my philosophy
is hormone balance. There are a lot of middle age people out there that know very little about hormones and its important as
you get older to at least have a baseline so you can track your numbers to make sure they are optimal. I believe you should enjoy
your program and combine light and heavy weight workouts with aerobics.
4. I eat three to four meals a day with snacks and stay away from processed foods. I workout about four times a week and make
sure I get the proper rest. I listen to music, meditate and try to laugh as often as possible. I believe that the mind and body are
closely connected and its important we feed both!

certications with ACE (American Council on Exercise) and AFAA (Aerobics and Fitness Association of America) for Personal Training and Group Exercise and ISSA (International Sports Sciences Association) for Fitness Nutrition.
2. Keeping my certications current is a huge priority and I enjoy reading and researching, but attending live trainings and certications is my preference.
3. Strive for progress, not perfection. Discover movement that you enjoy and do it
every single day. Its the habits that we create and live by every single day that make
the biggest impact. What you do 2 percent of the time isnt going to make a big
impact, its the 98 percent that matters.
4. Weight lifting, weight lifting and more weight lifting.

1. My interest in the tness eld began after I became a registered dietitian. I realized how important both tness, and
nutrition, are in reaching ones health goals. This led me to my
role as Certied Personal Trainer through the NASM (National
Academy of Sports and Medicine). I later became a Performance Enhancement Specialist through (NASM), TRX certied
and just recently added pilates to my toolbox. I love learning
new information and hope to continue to explore new certications and techniques to ensure my clients get results.
2. Im a closet nerd and I love to research new trends and
research online. I would much rather read scientic articles
on health and tness, than watch TV shows. I also attend
as many different education courses and certications as I
can. Another great way to stay up to date on the latest and
greatest, is to work out with my fellow trainers. Personal Trainers tend to be very creative in their workouts and its great to
learn from each other new tips.
3. My training philosophy is work smarter not harder. Many people feel they need to push themselves to their limit in order
to lose weight. But over exercising or working out at too high of an intensity can lead to increased stress on the body, which can
actually increase weight gain and fatigue. Instead, I encourage my clients to get the right balance of weight training, cardio and
recovery. A good weight training program should go through different phases and be changed every few weeks, as the body can
adapt quickly to the same exact workout done repeatedly. Cardio can be made more efcient by working out in the right heart
rate zones to optimize fat burn. Your cardio program should include both days of sprint intervals, as well as long, slow burn cardio
days. And most importantly, listen to your body. If your body tells you that you need a rest day, then take it!
4. As a dietitian, as well as personal trainer, I maintain my shape through eating a clean diet 80 percent of the time. To me this
means avoiding foods that I am sensitive to and eating quality protein and vegetables at every meal. I stick to organic, hormone
and antibiotic free and wild caught, grass fed food as much as I can. I balance my workouts with four days of heavy weight lifting
days, paired with high intensity cardio intervals or long cardio days. To aid recovery and improve my core strength and posture,
I add in a day of Pilates. And most importantly, I try to sleep eight hours every night.

2. I am always continuing my education, learning and reading new material. I love

3. Fitness should be fun. Think healthy lifestyle as opposed to a quick x.
4. I work out three to ve times a week. I have a three year old daughter that keeps
me moving constantly, so anything outdoors is my favorite. I also fuel my body with
clean healthy options.

Ive been continuing my coaching experience and education

primary areas of focus. My education includes a Master of Science in Exercise Science, Sports Performance-Injury Prevention and a Bachelor of Science in Sport Management, Fitness

Weightlifting Level 1 Olympic Coach.
2. Im well connected with the National Academy of Sports Medicine (NASM) and the National Strength and Conditioning Association, which continually sends me new research on tness and performance. Attending workshops and talking to other trainers
are always great ways to increase knowledge and understanding. Life Time Athletic provides us with ongoing education in areas
of nutrition, metabolism, and strength improvement.
3. If you want to be strong, strength train. If you want to be healthy, eat well. If you want to be a cardio beast, increase frequency

1. I started my tness journey during treatment for an eating disorder. Through tness, I have been able to gain 50 pounds, much of it in muscle, and nd strength
and self-condence. I became certied through the National Academy of Sports
Medicine (NASM) after several years of educating myself in weightlifting and bodybuilding. I have a background in Jazz and Ballet as well.
2. Social Media is an extremely useful resource for personal trainers and anyone
interested in tness. Its a platform to share ideas, opinions, videos, tips and more.
Im able to continually learn new things from tness professionals around the globe
and bring ideas back to my clients by adding my own spin.
3. My training philosophy is, Keep it fun, keep it high energy, and keep it consistent. If you enjoy your workouts, youll stick to your program and have fun while
getting in shape.
4. I switch up my workouts every single day. No two workouts are the same. In fact,
my New Years Resolution is to try something new in the gym each week. I typically do bodybuilding style weightlifting with minimal rest to keep my heart rate up. These days, Im focusing on adding more functional movements into my routine to increase
the fat burn. Box jumps, kettlebell swings, TRX and stability ball work have been keeping my body guessing.

2. I am apart of a thriving pilates community of instructors. I spend 2 weeks a year

functional body. I do this through body
sculpting, balance, stability and core
training.
4.Currently, I do this by teaching eight hours of group tness classes weekly, and one hour on the Reformer daily.

1. I have worked for Life Time for four years as a trainer, weight loss coach, metabolic specialist,
nutritionist and assistant manager. I have a degree in Personal Training and the following certications: NASM - Certied Personal Trainer, NASM (National Academy of Sports Medicine)
Corrective Exercise Specialist, NASM Performance Enhancement Specialist and Precision Nutrition Sports Nutritionist.
2. I follow a number of exercise blogs to stay current on a daily basis. I also do continuing education credits through IDEA to maintain myself on the cutting edge of tness.
3. Slow and steady. Programs that tout high intensity exercise will get fast results but the results
will fade just as fast. In order to create long lasting change, there needs to be consistency and
organized progression based on a particular persons current tness abilities to avoid injury and
create life long habits
4. I do four days of lifting weights in an undulated progression through the week to hit all the
energy systems and increase strength while losing body fat. I do low intensity cardio 2-3 times
per week (primarily running/walking) to maintain my heart health

1. Ive been a personal trainer for over 16 years now. I was

always involved in sports from an early age. I was interested
in transforming from a skinny athlete into a well-muscled,
yet still agile individual. Once I stopped playing competitive
sports, I felt that personal training was the best eld to be able
to do what I was passionate about. I was condent that once I
increased my knowledge in tness and nutrition that I could
denitely help others achieve their goals. I worked as a personal trainer, training supervisor, and training manager for a
large tness corporation for close to 10 years before starting
my own personal training business in 2009. I am NASM (National Academy of Sports Medicine) and CPR certied.
2. I continue to take continuing education courses to be able
to stay current with what I am teaching my clients. I also make
a point to do online research on different and new exercise
techniques as well as to get new ideas on how to vary our nutritional planning for my clients. Its also important to explore
new tness trends that clients may be exposed to that might
not be in their best interest.
3. My training philosophy is to provide clients with a positive
place and energy to implement my individualized tness
and nutritional programs. I believe in always having a goal.
I also believe that clients can achieve their dream bodies
while xing their muscle imbalances and postural deviations
caused by their work and everyday lives. I want clients to look
and feel their absolute best. I stress that it is not going to be
a quick process, but its truly worth the struggle. My motto,
Nothing we do is easy! is seriously the truth.
4. Ive always believed that if Im asking clients to do all the
little things necessary to get in shape, I have to do all of those
things myself. I have to work out 4-5 days per week, without
fail. I have to prepare my meals for half the week on Sundays,
and do the same thing on Wednesdays for the remainder of
the week. I have to put myself and my goals rst in order for
me to be best father and husband for my family. This also allows me to be the positive light that my clients need to feed
off of. If youre not happy with yourself, I dont think you can
truly help others.

Julie Compton CorePower Yoga

1. My initial background is in dance and gymnastics.

Growing up in Roseville allowed me many opportunities to
perform inside my passion of exploring movement in my
body. Finding CorePower Yoga in San Diego in 2010 led me
to receive my formal training where I am a 200 Hour E-RYT
(Experienced Registered Yoga Teacher). Since 2010 I have
had the privilege of leading thousands of students through
personal transformation both on and off the mat, through
CorePower Yoga classes and Lifestyle Programs such as
Power Yoga Teacher Training. CorePower Yoga is an intensely
physical workout rooted in the mindfulness of yoga and I am
thrilled to return to my hometown to share the gift of yoga to
the Sacramento Region.
2. CorePower Yoga is an amazing resource for anything
trending, current, or up-and-coming in the yoga worlds. We
truly have the best instructors nation-wide and I learn so much
from being on my mat. I also listen to my body. A daily practice
is always in uctuation, so my biggest tool often comes from
how I feel that day, whether I push and advance myself forward into challenging posture or nd more of a quiet, moving
meditation that day.
3. Have fun! I have to admit; I dont actually enjoy working
out. I like nding exercises that motivate me to feel something new or different in my body in a manner that brings a
smile to my face. I love Yoga Sculpt at CorePower Yoga. It is
to date, the most fun class Ive ever taken! Power Yoga poses
infused with free weights, cardio and driven by music is denitely my jam.
4. For me, its a matter of balance. To stay in shape in yoga
means a balance of body, mind and spirit. To nourish my body,
I stay committed to being on my mat. To nourish my mind,
I journal daily. To nourish my spirit, I surround myself with
people who will uplift me and remind myself of the same
message I remind my students yoga is not performance or
perfection yoga is a practice.

What you need

to know about selecting
your next floor covering.
By Donnie Gupton
Precision Flooring is celebrating its
30th year of business and has been a
leader in helping homeowners find the
flooring solution that best suits their
needs. With our years of experience we
have learned a thing or two and below
we will share some of that with you.
1. Lifestyle is most important There
are thousands of flooring options, some
better than others. How you and your
family live on the floor will be a major
factor on which floor you select. There
is no perfect floor but being educated
and having expectations set properly is
a huge key to the overall experience.
Dogs and kids add a lot of traffic and
will require a more durable floor.
Families that take their shoes off before
entering their home experience longer
last flooring. A single individual might
be able to make any floor work with
their lifestyle. Its pretty simple the
more the traffic that faster the floor
wears. Make sure you know all the
preventive maintenance tips.
2. Hardwood still rules Hardwood
flooring is still king of the industry.
Hardwood flooring is very durable but
there is a lot to know. Should I buy solid or engineered? Is engineered hardwood real hardwood? What species of
wood is right for me? Is hardness of the
wood everything? What types of finishes are available? What types of textures
should I consider for my family and
home? All of these are great questions
and there are a ton more to know.
The trends in the hardwood world are
always changing. Here are a few of the
top trends. Wider is better. A lot of
wide plank flooring is on the market
today. Board length is becoming more
important and the lengths keep getting
longer. Consumers are more ok with
natural characteristics of hardwood
than ever before. Knots and mineral
streaks are now a thing of beauty.
Matte finishes are being purchased
more and more. The lower the sheen
the less imperfection you see.
Knowing all your options and being
educated about hardwood is extremely
important before purchase. Not all
options are good for every lifestyle and
can leave you unhappy if you dont
know what you are buying.
3. Carpet is getting softer Carpet is
carpet, but now carpet manufacturers
are seeing how soft they can make
them. With nylon fibers like Stainmaster Tru soft and Tactesse Nylon you
have plenty of comfortable options.
Even your low pile carpets feel softer
to the touch.

Just like every other part of the industry, durability and longevity is always at
the premium. Carpet has made great
strides with these characteristics as
well. Solution died nylons are making
carpets more stain resistant than ever.

The new designs available are incredible now, as it is becoming more and
more difficult to tell the difference
between hardwood and premium laminates. The best laminates have the least
pattern repeat from box to box.
Formaldehyde is a dangerous compound to bring in to your home and
laminates are notorious for having
a high count of formaldehyde. As a
consumer, make sure you are buying
CARB compliant laminate.
5. Luxury Vinyl is the new player in
town. Vinyl flooring has always been a
great product for the home, it is one of
the most moisture resistant floors that
you can buy. Until a few years ago vinyl
tiles and planks did not exist in the
residential market because of vinyls
natural tendency to shrink. With new
technologies this no longer a concern.
The vinyl tiles and planks are some of
the best looking alternative flooring
options on the market. The luxury
vinyl tiles are warmer underfoot, softer,
quieter and easier to install than stone
or ceramic tiles.
The planks provide a nice hardwood
look and the visuals continue to improve. Like hardwood you will see a lot
of wide plank options. You get the look
of wood with the moisture resistance
of vinyl.
6. Is this all we know? There are a ton
of flooring options out there. This is
just scratching the surface of information available.
Precision Flooring offers hardwood,
carpet, laminate, vinyl, cork, bamboo,
rubber and water proof products. Our
consultants are equipped with specialized knowledge on how to select the
best flooring for your home & lifestyle.

4. Is that Laminate? Laminate is one

of the more durable flooring options
you can put in your home. You need to
make sure you know the AC rating on
your laminate so you have an idea of
durability. As durable as it is, laminate
is not a lifetime product and it is not
easy to repair at all.

in Charleston, Ill. in 1983, by then
19-year-old Jimmy John Liautaud in a
converted garage, according to Jimmy
Johns spokesman Nathan Louer.

The shop was opened by franchisee Phil

Hornstra, who hails from Naperville, Ill.,
the same state Jimmy Johns originates
from. Hornstra also resides in Roseville.
He has partnered with his brother Glen,
and the pair are planning to open 13
Jimmy Johns in the Sacramento area.

According to the story attributed to Liautaud on the Jimmy Johns website,

he graduated second to last in his high
school class and his options for college were slim to none. With a loan of
$25,000 from his father to start a business of his own, Liautaud originally set
out to open a hot dog stands, according
to jimmyjohns.com.

Jimmy Johns boasts meat and vegetables that are sliced daily, and bread
that is no more than four hours old
from oven to sandwich, said Hornstra, and the shop also delivers as

He didnt have enough money (for a

the next option, Hornstra said.
The converted garage Liautaud started
Jimmy Johns in was in an alley, according to Hornstra.
The rst day no one came and thats
why he started doing deliveries, Hornstra said.
The Roseville Jimmy Johns has been
doing an average of 40 deliveries daily,
said Hornstra, but expects that number
to grow to 150 to 200. Residents within
a ve minute drive of the shop have an
alternative to pizza delivery.
If you order two pizzas for a family it
costs $45 to $50 with the delivery fee.
With us you can get the same food for

$30 to $35, Hornstra said. Youre getting something different than pizza, you
could get a sandwich with chips, a drink,
cookies, and its still less than pizza.

mark is sometimes used to make samples for local businesses, according to franchisee Phil Hornstra. (Photos by Stephanie Dumm)
continued from page 39

Our value is quick service, so youre

not going to wait in line, Hornstra
said. We make the sandwiches in 30
seconds, and more than half the time
we get the sandwich done before the
customer is done paying.
General Manager Tommy Nacrelli relocated from Oregon recently, and has
worked for Jimmy Johns for two years.

38

I love the fast-paced atmosphere and

everyone I work with is awesome, Nacrelli said. I came down to help open
up stores. Its been a cool trip, I love
California.

He also has plans for the restaurant to

be involved in the community, from
sponsoring events to giving back.

Since Jimmy Johns is new to Roseville, Hornstra is making sure bread

close to its four-hour shelf life is used
to get the word out about the new
sandwich shop.

His upbringing in Naperville and previous employer, Hilton Hotels, was a

deciding factor for Hornstra to both
open a Jimmy Johns and also which
area of the country to do so.

The day Roseville Magazine paid a visit

to Jimmy Johns, Hornstra and his crew
were making samples of turkey and
ham sandwiches for local businesses
within the restaurants delivery zone.

Sacramento (and its suburbs) is one

of the best up and coming cities in all
of California, and it really reminds me
of the last city I worked in, Columbus,
Ohio, Hornstra said. The reason I got

involved (with Jimmy Johns) is its

just a great brand that was similar to
the brand I had been working for. You
pay a little more and know what you
are going to get.
Hornstra described Jimmy Johns as
the spot to go for a sandwich during
his college days and visits home.
You just knew Jimmy Johns was
clean, quick and good, Hornstra said.
Whenever you went to visit in the
Midwest and you wanted to get a good
sandwich you went to Jimmy Johns.

Chilled Beet Soup

with Dill
Serves 6

BY COURTNEY MCDONALD

Foothill Farmers Market Association Chef

INGREDIENTS:

farm fresh

beet
CANT BE

By Carol Arnold

s you browse your local, yearround farmers market, make it a

point to pick up a few farm-fresh
PlacerGROWN beets. Incredibly rich in
nutrients, vitamins, and minerals, as
well as carotenoids such as beta-carotene, beets have zero fat, are low in
calories and are high in ber. The hearthealthy food item has a slightly crunchy
texture when raw and a soft, buttery texture when cooked.

Beets are typically a striking reddishpurple color and are available with
white, golden-yellow, and rainbow
colored roots. When preparing this
brightly pigmented and cardiovascular-friendly veggie, make sure to wear
kitchen gloves as beet juice can stain
your skin.
PREPARATION AND STORAGE

After you purchase beets from your local

farmer, youll want to remove the tops
from the root, as they will rob moisture
and nutrition from the beet. Top greens
have the best avor when eaten as soon
as possible while they are fresh. The
beet root can be kept for a few weeks in
the refrigerator at a high humidity setting. Avoid freezing raw beets, as they
will become soft when thawed. Instead,
cook the beets rst if you would like to
freeze for further preservation.

1 pound beets, any color,

washed, stem and root ends
removed
1/2 cup extra-virgin olive oil
1 tablespoon Kosher salt
1 large yellow onion, thinly
sliced
2 small carrots, peeled and
roughly chopped
2 cups vegetable stock
2 teaspoons sugar
1/2 cup buttermilk
Salt and pepper, to taste
1 tablespoon chopped fresh dill
DIRECTIONS:

1. Preheat oven to 400 degrees.

In a medium bowl, toss the
washed beets with cup
olive oil and 1 tablespoon salt.
Spread on a baking sheet and
add 2 tablespoons water. Cover
the baking sheet very tightly
with foil and roast in the oven
until tender about 45 minutes
to 1 hour, depending on the
size of the beets. The water will
steam the beets while roasting.
When beets are tender, remove
from the oven to cool slightly.
2. While beets are cooling, heat
a small soup pot over medium
heat. Add the remaining olive
oil, onion and carrots, stirring
frequently, until onions are soft
and translucent.
3. When the beets are cool
enough to handle, use a paring
knife to scrape the skins o.
Cut into quarters and add to
the soup pot. Add the vegetable stock and enough water
to cover the vegetables, and
bring to a boil. Reduce heat to
low and simmer 10 minutes to
marry avors. Remove the pot
from the heat. Using a blender,
puree the soup to a ne consistency. Finish with the sugar and
buttermilk, and season to taste
with salt and pepper. Place
soup over an ice bath to speed
chilling and thin the consistency with cold water, if necessary.
Once soup is chilled, add the
chopped dill and serve.

he craft breweries that make up the Placer

Ale Trail are a tight bunch. So much so, that
when new players come on to the scene, no
one is more welcoming than the competition.
As long as the newbies bring quality to the table
or the bar, as it were and share a desire to rm
up Placer Countys position as a craft beer destination, there is a cultivated willingness to work,
pour and promote together.
Similarly, our neighbors to the west have joined
forces to form Sacramento Area Brewers Guild and
produce Sacramento Beer Week, seven days of
non-stop events, tastings and education. Luckily,
our own Placer County breweries are also taking
part. Local favorite Boneshaker Public House has
a week full of events including Black Tuesday, a
whole day dedicated to the bold avors of Imperial
Stouts and Porters, and Lupu Loco, a Double and
Triple IPA competition. Check out sacbeerweek.
com for a complete calendar and list of Placer
County venues.
Not ones to be satised with just one week of beer
appreciation, Fork N Productions is hard at work
organizing the Placer County Ale Trail Passport
Event Flights & Bites to take place in March.
Over the course of the weekend, youll have an
opportunity to meet local brewers, explore their
unique styles, and enjoy pairings of small, beerfriendly bites at each participating brewery along
the Ale Trail. Youll also have a chance to learn
from different educational opportunities set-up
at the breweries along the way.

42

While youre out and about, be sure to check out

some new beer-focused businesses that opened
during the end 2015 - all boasting a large selection
of beer from your favorite Placer County brewery.
Final Gravity, a popular Granite Bay taproom, has
opened a second location in Auburn featuring as
many as 20 beers on tap and a satisfying wine list.
Porters House of Draft in Roseville has 28 taps
dedicated to mostly California brews and a menu
of bar room favorites and some serious eats.
Infusion on Twelve Bridges Drive is the hoppiest
place in Lincoln. Join them for Northern California
brews, beer-themed events and live music.
The Placer County Wine & Ale Trail features a map,
listings and contact information for the areas
breweries and wineries, all in one free, easy-to-use
brochure. The map is available online at forknroad

Eat
vegetables
YOUR

trick my kids into eating spinach Ill admit it,

I dont care. Even as a grown-up, a plate of
spinach doesnt send me into a urry of excitement. But I eat it because I know its good for me.

stephanie
dumm
mother, writer

I dont know if youve ever tried to get a child to do

something thats good for them, but most of the
time they dont go for it. Its like they have built in
radars for detecting that stuff.
My daughter is three, and my son is almost two,
and the radars with these two are strong, and have
been since they were babies.
Fruit is always a winner with those two, though. They
love apples, strawberries, blueberries, melons, you
name it. Peas and carrots usually get gobbled up,
along with steamed broccoli and cucumbers.
So Ive taken to nding creative ways to get them
to eat vegetables that they might actually like but
are repellent to them for some reason, like squash,
zucchini and spinach.
I should back up and say that getting them to eat
their greens isnt solely for altruistic purposes. Im
known to be lazy at times, and even before I had
kids I knew that I would only be making one meal

44

at dinner time. Being a short order cook in my own

home is of no interest to me.
Now, people scoffed at me, thought I was crazy and
said this would never work. But three years later,
I have to say this has worked out quite well. Most
of the time.
There have been a few ops along the way. Im
also a Weight Watchers member, and unfortunately, most of the recipes Ive tried from various
Weight Watchers cookbooks or blogs have not
been received well.
There are two recent dishes that come to mind.
One was Southwestern Shepherds Pie, which
was made with mashed sweet potatoes instead
of Russet potatoes, which even I had a hard time
choking down. Sorry kids! Sorry husband.
Then there was the time last month I thought I
could convince both kids that spaghetti squash
was made with actual noodles.
For those of you not familiar with spaghetti squash,
once the yellow gourd has been fully-cooked, the
fruit separates into long, pasta-like strands.

February 2016

2016_02_Feb Roseville Magazine.indd 44

1/29/16 2:53 PM

It can be eaten straight up, but it gets really fun

when mixed with marinara sauce, meat sauce or
even enchilada sauce.
I went the route of boats topped with chicken,
pasta sauce and mozzarella cheese.
When my daughter asked what was for dinner,
I told her spaghetti, which is one of her favorite
foods. It was a half-truth, I just didnt add squash
to the end of it when she asked.
While spaghetti squash boats werent a complete
fail, plenty of spaghetti was left behind in the
boats on my childrens plates.
Spinach is one veggie I can always get them to eat.
As long as there is a blender involved.
Berry and spinach smoothies are always a hit. To

spinach mac & cheese

make two pint-sized servings, take one cup of yogurt, one cup of frozen mixed berries, one cup of
spinach, a splash of milk and enough ice to reach
desired consistency.
Another favorite in our house is spinach macaroni
and cheese, and Ive included the recipe here.
Its a bright-green twist on classic baked macaroni and cheese, and the color comes from fresh
spinach blended with milk.
I love it because its a way for my whole family to
enjoy spinach and we get two meals (dinner and
lunch the next day) from one pan. My kids love it
because its green and because its macaroni and
cheese.
Which is a parenting win in my book. Now if only I
could make cauliower as popular

Serves 6

3 cups of uncooked elbow macaroni

2 cups of fresh spinach
1 cup of milk
1/4 cup butter
3 tbsp our
1 tsp salt
1 1/2 cups shredded cheddar
Cooking spray
2/3 cups panko bread crumbs
1. Preheat oven to 350 degrees and coat
a square glass baking dish with cooking
spray.
2. Cook pasta according to directions on
package and drain. Set aside.
3. Add milk and spinach in a blender or
food processor, and blend until smooth.
4. Melt butter in a large saucepan over
medium heat. 5. Once melted add the
our, and stir for one minute, or until
golden brown.
6. Add the milk and spinach mixture to the
butter and our, stir and heat until bubbly.
Remove from heat.
7. Stir in the shredded cheddar until fully
melted.
8. Add the cooked macaroni to the cheese
mixture until the noodles are fully coated
with the sauce.
9. Spread the macaroni and cheese into
your prepared pan, and top with the panko
bread crumbs.
10. Bake for 20 minutes.

HOW CAN I

Decrease
my risk of getting cancer

atients over the years have asked me what

they can do to reduce the risk of getting cancer.
The answer is complex. Some people will get
cancer because their genetic makeup increases
the likelihood of developing a particular disease.
Others may develop the disease in part because of
their age, gender, lifestyle and environment.

Chris
Palkowski, MD
Physician-in-chief
Kaiser Permanente
Roseville Medical
Center

What I most often tell patients is they can help

reduce the risk of cancer by eating healthy foods,
exercising, not smoking, maintaining a healthy
weight, and getting the recommended screening
tests.
When it comes to cervical cancer, theres a hopeful
message for women: There are ways to prevent cervical cancer, thanks to medical advances and scientic evidence that have emerged in recent years.
For many years, cervical cancer was the leading
cause of cancer deaths for women in the United
States. But in the past three to four decades, the
cervical cancer death rate has decreased by more
than 50 percent.
Simply put, the medical community has been
doing a better job of screening women for cervical
cancer, and Im proud to say that Kaiser Permanente has been at the forefront of a nationwide
effort to prevent cervical cancer.
Beginning in the mid-20th Century, the Pap test
was the principal method used to detect changes
in the cervix cells that might develop into invasive
cancer. But in 2003, thanks to the pioneering work
of some fantastic researchers including a colleague
of mine gynecologic oncologist Walter Kinney
the U.S. Food and Drug Administration approved
a laboratory test to detect the presence of human
papillomavirus (HPV), a sexually transmitted infection that causes cervical cancer.

46

Specically, the FDA allowed the medical community to use the laboratory DNA test, along with the
Pap test, to determine if early cell changes could
eventually lead to cervical cancer.
Kaiser Permanente was among the rst health plans
to recommend the combined Pap and HPV tests for
women age 30 and older. In the past few years, major
organizations such as the American Cancer Society
and the American College of Obstetricians and Gynecologists have adopted the dual screening method.
As a result, statistics show, fewer women are getting
cervical cancer.
Using the combination of Pap and HPV testing,
computerized tracking of abnormal results, and
our top-notch screening rates has resulted in further decreasing our already low rates of this preventable cancer, says Dr. Kinney, who practices
at an outpatient clinic connected to Kaiser Permanente Sacramento Medical Center.
When Kaiser Permanente offered Pap tests alone,
Dr. Kinney says, the cervical cancer rate was about
6.5 per 100,000 women. Today, with the combined tests, the rate is down to 5 per 100,000. Nationwide, the rate has been reduced from 12 per
100,000 to 8 per 100,000.
Unlike other cancers, cervical cancer is almost always
preventable.
Typically, women ages 21 to 29 should get a Pap
test every three years; women ages 30 to 64 should
get the combined Pap and HPV test every ve years;
women 65 and older usually dont need testing.
As always, I recommend patients to keep in close
communication with their medical provider, who
can provide specic information about the need
for testing to prevent cervical cancer.

Valentines Day, February 14th

AND

Beyond
T

he month of love will soon be upon us. Your

special someone may have high hopes for
celebrating Valentines Day, which is why its
best to start planning now. In my opinion, youll
enrich your relationship if you think beyond the
14th. After all, why stop mid-month? Celebrate
the person you love with small but signicant
gestures all month long!

out these fun ideas and you just may meet that
special someone along the way.
CAFFEINATED SURPRISE

Show him youre thinking of him, even in the

Starbucks line! Everyone loves a little warm pickme-up now and then. Why not pick up his favorite
drink or better yet a gift card.
STROLL THROUGH THE NEIGHBORHOOD

Steam up a hot chocolate (or hot toddy!) and take

time to recap the day on a relaxing post-dinner stroll.
A SPA DAY

Indulge in a couples massage. Zen Spas Valentines special has all you need for a romantic visit,
a one-hour Swedish massage for two, a red rose,
box of chocolates and sparkling cider. For that
extra special touch, take advantage of the gift

card bundle and let your sweetie stop in one day

after work.
GIVE YOGA A TRY

Give yoga a try. The couple that exercises together,

stays together. Well, thats what they say at BodyHeat Hot Pilates & Yoga. After a long day at work
or with the kids, reconnecting through exercise is a
way to decompress together.
A LITTLE TLC FOR THE CAR

Its Monday morning. Shes late to a meeting, the

windshield is spotted from yesterdays rain and
the gas gauge is on empty. Wouldnt she be so
surprised if you took the time to ll the tank and
shine up the windshield?
STOP TALKING ABOUT IT AND JUST DO IT

Do you both keep talking about something

you want to do, but never get around to it? The
month of romance is the perfect time to pull out
all the stops. Go ahead and plan that special trip.
Youll both enjoy making lasting memories with
each other.
Valentines surprises dont have to be elaborate
or expensive. After years of meeting hundreds of
massage clients, I have found the old adage to be
very true it really is the thought that counts.

ou may have seen luxury homes before but youve never

seen anything quite like this. Via Milano is a quiet, gated

enclave of spectacular style homes.
But 5440 Via Milano stands out, even amid these high-end

throughout. Start with custom marble and travertine tiles
tiles that make up an oversized covered veranda and extend

The rear of the home has custom-cast concrete stones and there
are even stepping stones cast to replicate petried wood that
were designed by the homeowner.
But those are just a few of many features that you wont nd
anywhere else. Every gate, window or door in the fencing
and pool area is unique, from window coverings in the
loggia, which were sourced from doors in India, to Moroccan
doors, to Moroccan light xtures and corbels from Bhutan.
Aesthetics and quality are obviously important to the homeowners, as is using reclaimed and highly-specialized materials.

Take the olive trees that were imported from Californias Wine
Country. The trees are large, gnarled wood fruit-producing
trees that are more than 100 years old.
Wood is important to this family. The kitchens open oor plan
comes to life with walnut-colored hardwood that is shined to
a high gloss. Knotty alder cabinetry includes custom corbels,
decorative styling and pullout vertical spice racks that are disguised as decorative features. The kitchen is truly designed for
a chef, or multiple chefs, with dual Thermador Professional
ovens and an additional in-wall Thermador oven, a warming
oven and a built-in microwave.
Dual dishwashers, a refrigerator and freezer are built-in, as
well, and all the appliances are stainless.
The kitchen includes a large center island topped with umber,
amber and cream colored granite multiple slabs worth. The
island doubles as workspace and seating area. The kitchen
also has a custom backsplash that pairs light and dark stones
with custom motif and stove top faucet. Best of all, the kitchen
has two separate pantries and two separate butlers pantries
an ideal house for entertaining.
The home has a guest wing that offers its own bathroom, and
the room has a large walk-in closet, as well as French doors
that lead to the front of the property.
Theres a laundry room that rivals the size of most bedrooms
and a mudroom area that includes the same knotty, alder and
granite surfaces that are found throughout.
As you would expect, the garage includes specialized ooring
and custom cabinetry that the homeowner designed.
Bedrooms throughout the home have custom walk-in closets,
that the homeowner designed, to house both linens and
clothing items; the master has his-and-hers closets that are
similarly sized, both large.
The master is a wing by itself, with special ceiling treatments,
a large stone replace and a separate room that can be used
as reading space, ofce or exercise room. The area has private
access to the backyard, and its easy to imagine enjoying quiet
time with the French doors open, listening to the Moroccan-inspired fountain just beyond.
The master bath area has a full-body shower with an additional
rain head xture, a hand-held detachable xture and a separate
soaking tub. Dual vanities topped in marble, as well as a makeup
area, complete the room that is breathtaking in its simplicity.
Likely the most highly coveted area of all is the backyard,
which includes a large covered porch and a loggia with a
custom concrete-topped wet bar and replace. The loggia also
has remote-controlled screens to allow use in all weather.

A saltwater swimming pool has a cascading water feature that

originates with the raised hot tub, as well as dancing water
showers and a swim-in-place feature that allows easy exercise
without ever leaving the side of the swimming pool.
Theres even a specialized pool bath that includes a large
seating area and vanity created from reclaimed wood from
Bhutan. The area also includes a built-in barbecue with stained
concrete tops, reclaimed corbels and an outdoor shower with
mosaic tiles.
Best of all, the large home is powered primarily by solar, so
the utility bill is barely a blip. The home has numerous replaces, numerous French doors that provide a year-round
outdoor feel, and, in addition to stained and stamped concrete just outside of the garage, is a decomposed granite
space that seamlessly ts the landscape and was designed
for additional parking.
