Resumen
El tamao de partcula de harina de maz tiene un efecto significativo en sus propiedades funcionales y fisicoqumicas. En este estudio,
la smola de maz se moli para diferentes intervalos de tiempo (3,5, 4, 5, 6, 10 y 14 min), y los efectos sobre la composicin de pulido,
propiedades funcionales y fisicoqumicas de la harina de maz se evaluaron mediante el Analizador Visco rpido (RVA) , calormetro
diferencial de barrido (DSC), electroforesis en gel de poliacrilamida dodecil sulfato de sodio (SDS-PAGE) y otros mtodos qumicos.
Los resultados mostraron que la molienda podra pulverizar eficazmente las partculas de harina. A medida que disminuye el tamao de
las partculas, el almidn daado y el contenido de amilosa, el grado de gelatinizacin, capacidad de hidratacin, ndice de solubilidad
en agua y el ndice de absorcin de agua fueron significativamente (P <0,05) mayor. La molienda caus una reduccin en la viscosidad
artesa, la viscosidad final y el tiempo de pico y un aumento de la viscosidad de pico y la descomposicin de las harinas de maz. El
almidn aislado a partir de harina de maz tratado con tiempos diferentes mostr una disminucin de la temperatura de gelatinizacin
de transicin (A, Tp y Tc) y la entalpa de gelatinizacin, mientras que los tratamientos de molienda no tienen ningn efecto sobre el
contenido de protena y la estructura primaria de las protenas de la harina de maz. Los cambios de tratamiento de molienda en los
grnulos daados y distribucin del tamao de partcula son responsables de las diferentes propiedades de la harina de maz.

2.5.2. Determinacin de la capacidad de hidratacin
La capacidad de hidratacin (capacidad de fijacin de agua), la harina de
maz molida estuvo determinada consiguientemente con la aplicacin de
AACC 56-20 (AACC, 2000) mtodos estndar.
2.5.3. Determinacin del ndice de solubilidad en agua y el
ndice de absorcin de agua
El ndice de absorcin de agua (WAI) y el ndice de solubilidad en agua
(WSI) de harinas de maz molido se determinaron de acuerdo con el
mtodo de Anderson et al. (1969) utilizando el mtodo de centrfuga con
alguna modificacin. Una harina de maz (1,5 g, base seca) de la muestra
fue dispersa en agua (18 ml) a 30 C con agitacin suave durante 30 min, y
luego se centrifug a 4.000 rpm durante 20 min. El sobrenadante se
colocado en una lata de aluminio y se sec en el horno de aire caliente a
105c durante 3 h. El (WAI) y el (WSI) se calcularon de la siguiente manera:

2.6. Determinacin de las propiedades de pegado
Las propiedades de pegado de cada suspensin de harina de maz eran
medido usando un analizador rpido visco (RVA, Super 3, Newport
Scientific Instrument e Ingeniera, Australia). Las harinas de maz molido
(3,0 g, db) se pesaron directamente en un bote de RVA, seguida por la
adicin de agua destilada (25,0 ml). La pasta era calentada a 50 C durante
1 min antes de calentar a 95 C a una velocidad constante de 12 C / min, y
luego se llev a cabo en 95 C durante 2,5 min.
Despus de eso, se enfri a 50 C a la misma velocidad constante y se
mantuvo a 50 C durante 2 min., la velocidad de las paletas se estableci
en 160 rpm en este anlisis.
3. Resultados y discusin
