A>Chicken

1. Use big pieces, preferably with bones. Chicken thigh is the best
2. Put slit marks on the chicken.
B>Brine marination[4-8 hrs]
1. Take water in a wok. Put salt to taste(but do not add too much)
2. Grind coriander, green chilly and mint leaves. Add 2 Tbsp of this mixture
3. marinate the chicken in it overnight.
c>1st marination[1-2 hr]
1. Rub the chicken well with lemon juice, ginger garlic paste and paprika(red chilly powder). Massage
the chicken well with this 1st marination
2. It is advised to do this marination in a bigger bowl. You would know the reason in the next step
D>2nd Marination[2-4 hrs]
1. take hung curd or greek yogurt, biriyani mix, salt. 2 Tbsp of coriander,chilly and mint leaves paste,
pepper and other spices of your choice(Maze, whole spices etc)
2. Mix all the ingredients by stirring
3. Put this mixture over the bowl with chicken, so that all the chicken are covered.
4. Do not stir or disturb this mixture.
5. Refrigerate for 2 to 4 hours.
After this the chicken would be ready for use in a Biriyani recipe.
