Lesson: Proper Drainage, Water and Fuel Resources

Vocabulary:
Soil stack - is the part of a plumbing system that connects interior plumbing to the
sewer and vents gases out of a building. These pipes may be found in any building
type, but they are in nearly every residential home or small building. When a
system uses a soil stack, the pipe runs vertically from below the building to a vent
on the roof. These vertical pipes are characterized by an occasional whooshing
sound as waste water flows downwards from an upper drain.
Acoustical tiles - is used in building construction to maximize the quality of sound
produced in the area where the tile is installed. This product may also reduce
unwanted sound transmission coming from outside. There are a number of different
types of acoustical tile products, including those which can be hung from a
suspended grid system on the ceiling, those which can be affixed directly to an
existing ceiling, and those which can be fastened to the surface of a wall. All
acoustic tile works by making the surface softer, which deadens the echo and
reverberation that a hard surface would otherwise produce.
Advocates - To speak, plead, or argue in favor of
Fuel - is any material that stores potential energy in a form that can be practicably
released and used as heat energy. The concept originally applied solely to those
materials storing energy in the form of chemical energy that could be released
through combustion, but the concept has since been also applied to other sources
of heat energy such as nuclear energy (via nuclear fission or nuclear fusion), as well
as releases of chemical energy released through non-combustion oxidation (such as
in cellular biology or in fuel cells).

_____________drainage is a source of foul odor in the kitchen.

Open canals can be a breeding places for _________________.
_____________ is important in all aspects of food service operation.
_____________ must be installed in the kitchen to minimize if not prevent noise.

Study Helps
1. What is the effect of improper waste disposal?
Proper garbage disposal helps prevent the clogging of the drainage system.
Hence, the sink should be protected by a drainer to hold small pieces of food.
Clogged drainage is a source of foul odor in the kitchen. Open canals clogged
with garbage can cause floods and serves also as the breeding places of
mosquitoes and other vermins.
2. Why is water important in food service?
Water is important in all aspects of food service operation. Constant supply of
clean water is needed from the dining room preparation and service to the
food preparation and production to the washing and cleaning of tools and
equipment.

3. What is a noise control device?

A noise control device is used to minimize if not prevent the noise. Some
materials that can be used to control the noise are acoustical tiles similar to
the ones used in the radio booths or recording studios. Cork, wood panelling,
carpeting system, rubber and other materials that are absorbent are needed
for sound control to make dining pleasurable to patrons.
4. How does noise affect the performance of kitchen employees? The patrons?
Minimizing noise in the kitchen helps produce the quality product and
harmonious relations among employees. Misunderstanding can be prevented
and customer satisfaction can be achieved if noise control device is used.
