Vegan Cranberry Dark Truffles

Fluffy, fresh and warm.

Warm up the water until it is between 100-115 F and add 1 teaspoon of sugar,
and all the yeast. Stir and let sit for a few minutes. Yeast should activate.

Add the coconut oil, salt, 2 cups of flour, remaining coconut sugar, and stir until
the mixture comes together. Add additional flour in cup increments until
mixture pulls away from the sides of the bowl. Turn dough out onto floured
surface and knead a few times until you form a smooth ball.

Combine the cinnamon + coconut sugar mixture. Dust the counter with more
flour, and turn the dough ball out onto the floured surface.

Make a dough into a rectangle about 12x16 inches. Spread melted coconut oil
over the rolled out dough.

Starting at the long end closest to you, begin to (gently but tightly) roll the dough
up into a log. You should get around 12 rolls.

Set somewhere warm for about 40 minutes. After 40 min, put in preheated
oven to 350F. Rolls should puff up and double in size. Bake them for about 15

Combine all ingredients.

Preheat the oven to 160C / 320 F.

Combine flour, baking powder, baking soda, vanilla,


pinch of salt, lemon zest, coconut sugar.

Add water, olive oil, yoghurt (soy or coconut), melted


vegan butter. Mix with all the ingredients.

Pour the batter in the bread form.

Lemon glaze:
Mix 1 cup icing sugar + lemon juice. Spread over.

Bake 30-40 min.

Stir together coconut sugar + lemon juice.

Preheat the oven to 200 C.

In a small saucepan (over medium heat) mix 1 cup frozen


blueberries + 1 tbsp Coconut sugar. Stir well. Cool down.

Whisk 2 1/2 cups flour + baking powder + salt in a large bowl.


Then add remaining sugar, flax eggs, coconut oil, vegetable oil.

Slowly whisk almond Milk, vanilla, blueberry mix.

Put the mixture in muffin cups.


Bake for about 18 minutes.

Tips and tricks


Flax eggs
Combine 1 tablespoon Golden flaxseed meal with 3 tablespoons
water, stir and let sit for 1 few minutes.

Sticky deliciousness.
Caramel

Place the sugar in a saucepan over medium-low hear.


Stir and melt until golden.

Mix soy milk + agar agar flakes. Wait for 10 min.


Bring to boil. Reduce the heat to low. Stir, stir, stir.

Put the tofu + sugar (1 1/2 tbsp) + vanilla + pinch of


salt in a blender.

Pour into ramekins over caramel.

Refrigerate for about 1h.

Remove from the ramekins.

Like OREOs, but better. Much much better.

Combine and stir dry ingredients.


Separately combine all liquid ingredients and stir.

Knead the dough.


Roll it.

Preheat oven to 170 C.

Put OREOs on a baking paper.


Bake for about 12 minutes.

Cream
Whip upper layer of the coconut cream out of the can, add 1 teaspoon of vanilla
extract. Spread 1 teaspoon cream filling between two cooled cookies.

Matcha cha-cha-cha with Mango.

Blend almonds, coconut and dates until you get sticky dough.
Press the dough into a mini tart pan.

Add cashews, coconut water, lime zest and juice, Matcha, coconut oil and
Sweetener of your choice to the blender (perhaps coconut sugar, agave syrup, etc.)
and process until you get smooth cream.

Scoop the cream into the pan and smooth out the top.

Refrigerate at least a few hours.


Serve chilled.

All you need is love and some chocolate.

Preheat the oven to 170 C.

Mix all the ingredients.


Add baking powder, salt. Stir to thicken.

Pour into baking dish. Add chocolate chips.

Bake for about 20-25 minutes.

One banana, two bananas, pancake.

Blend all the ingredients except flax seeds and cocoa nibs.
Blend until smooth.

Stir in Flax seeds (ground) and cacao nibs.

Bake thin pancakes.

Dehydrate at least 24 hours.

Serve with sliced fruits.

Take time to have a bubbly break.

Blend banana and almond milk.

Add cooked tapioca pearls.

How to cook Tapioca pearls?


Look for pearls that use all tapioca starch, no substitutes. Boil the water, and add the
tapioca pearls to the water all at once. Stir. Let the water come up to a boil again; the
pearls will float to the top. Cook for 35 minutes. Dont forget to stir.

Color up your day.

Mix bananas, liquid coconut oil, cocoa powder, baking soda.

Blend until smooth. Add sparkling water.


Blend slower.

Add dark chocolate (small pieces).

Cover with Blue Frosting.

Tips and tricks


Blue Frosting
Mix 6 tablespoons virgin coconut oil, 2 tablespoons coconut sugar,
3 tablespoon vegan creamer or non-dairy milk and a touch of coloring.

Melt coconut oil and mix with coconut/almond/soy milk, coconut sugar, salt, vanilla
extract. Use medium heat! Stop after 2 minutes or until everything is melted.

Add oats and coconut flakes.

Mix everything until you get sticky dough.
