Sabrina’s Story
Back in 2001, while working as a corporate restaurant manager in New Jersey, Robert DeAbreau came up with an idea for
a new restaurant. It would be unpretentious- a comfortable, welcoming place that served comfortable, welcoming food,
and always with fresh ingredients. Moreover, the menu would feature a combination of venerable favorites and new and
interesting dishes combining ingredients in ways you'd never tasted before. Comfortable, yes, Stale and boring, never.
Robert's wife, Raquel, thought that he was on to something.
So, In May 2001, the first Sabrina's Café opened in the space previously occupied by the famed Litto bakery, formerly the
source of Philadelphia's finest cannoli. Robert and Raquel named their new baby after their new baby, Sabrina, who was
born in February 2000,
Soon after, Executive Chef Lance Silverman came on board and got to work creating masterpiece after masterpiece. For
ten years, he'd change the brunch specials every two weeks. None of the specials have ever been repeated. Lance's
impassioned creativity is also evident in his intricate and vivacious dinner specials,
With the success of the original Sabrina's, Robert and Raquel opened their nest restaurant at 1804 Callowhill in June 2007.
‘They named it *Sabrina’s Café and Spencer's Too’ after their son, Spencer, born in July of 2004. Robert and Raquel have
since opened Sabrina’s Café in University City on the Drexel University Campus, Sabrina’s Café in Wynnewood, PA and
‘their newest location in Collingswood, NJ.
