Campari Bruschetta
This is a great starter when you have your grill fired
up. Weather not permitting, this flavorful tomato
topping is also great scooped up with artisanal
crackers or on crostini.

Ingredients
1lb SUNSET Campari tomatoes
1 Small loaf rustic artisanal bread
or baguette
Olive oil for brushing
Kosher salt for sprinkling
1/4 cup chopped fresh basil
2 tbsp finely diced red onion

23 tsp minced fresh garlic

3 tbsp high-quality Caesar
dressing
Garnish: Freshly grated
parmesan cheese and small
fresh basil leaves

Directions
Preheat the grill to a medium-high heat.
Dice the tomatoes into 1/4 1/2 pieces and set in a strainer
to drain off excess juice while you continue with recipe.
Cut the bread with a serrated knife. If using a fat bread loaf,
cut six 1/2 slices, then cut each piece in half crosswise, making
12 pieces. If using a baguette, cut twelve 1/2 diagonal slices from
the loaf.
Lightly brush both sides of bread with oil and grill on each side until
lightly marked or toasted. Sprinkle bread lightly with salt.
Place on a platter.
In a medium bowl, toss together the drained tomatoes, basil, onion, garlic,
and Caesar dressing. Divide the tomato mixture between the grilled bread
slices. Sprinkle with Parmesan and garnish with basil leaves if desired.

Chefs notes
If you want to make this bread-free, you can serve the tomato mixture in small
romaine-heart leaves.

1 pkg SUNSET Y.E.L.O.
tomatoes, cut into wedges
1 pkg SUNSET Campari
tomatoes, cut into wedges
1/3 cup balsamic vinegar
2 tsp Dijon mustard
2 tsp honey
1 tsp ground cumin
1 tsp salt
1/2 tsp freshly ground pepper

1/4 cup extra virgin olive oil

4 garlic cloves, minced
3 cups small cauliflower florets
1 can (540 mL) chickpeas,
drained and rinsed
1 bunch dinosaur kale, stems
removed and thinly sliced
1/4 red onion, very thinly sliced
1/2 cup crumbled feta cheese

Directions
Preheat the oven to 425F.
Line a large baking sheet with foil; grease well and set aside.
Whisk the vinegar with the mustard, honey, cumin, salt and
pepper. Slowly drizzle in the oil, while whisking constantly,
until well combined.
Measure out 1/3 cup dressing and set aside. Whisk the garlic
into the remaining mixture. Toss with the cauliflower and
chickpeas. Arrange on the prepared baking sheet.
Bake for 25 minutes or until golden brown and tender.
Cool completely. Toss with the kale, red onion, tomatoes and
the reserved dressing. Sprinkle with feta. Serve immediately.

Chefs notes
Dinosaur kale is also known as Tuscan, Lacinato or black kale and is slightly sweet
and more delicate in flavor than regular kale.

Angel sweet Tomato

& herbed ricotta pizza
This quick, easy and healthy pizza is just the thing for a busy
weeknight dinner!

1 /2 lb SUNSET Angel Sweet
grape tomatoes (1012
tomatoes), halved
1 cup ricotta cheese
1 tbsp dry Italian salad
dressing mix
1 (12) pre-baked Mama Marys
pizza crust
1/2 cup chopped red onion

1 1/2 cups (4 oz) shredded fourcheese or Italian-style cheese

blend
Optional toppings: cooked
sausage meat, olives, artichokes,
prosciutto and salami
2 Tbsp torn mixed fresh herbs,
such as basil, Italian parsley,
oregano and chives

Directions
Preheat oven to 450F.
In a small bowl combine ricotta cheese and dry dressing
mix. Place pizza crust on a baking sheet. Spread ricotta on
pizza crust to 1 from edge. Sprinkle with red onion then
cheese blend. Place tomato halves evenly over pizza.
Sprinkle with salt and pepper if desired. (Add other
toppings at this time if using.) Bake for about 20 22
minutes or until cheese is bubbly. Remove from oven and
scatter with herbs. Cut and serve.

Chefs notes
For a crisper crust, place pizza directly on oven rack to bake. For easy clean up,
put a baking sheet on the lower rack to catch any drippings.
