Ascorbate plays an important role in hydroxylase enzymes in its required reduced
from (see Kivirikko et al. 1989; Padh 1990).
Only in recent years has it been appreciated that ascorbic acid has important
functions in many cellular reactions and processes in addition to its know role in
collagen synthesis. A number of dioxygenases that contain prosthetic Fe 3+ and
monooxygenases with prosthetic Cu+ are stimulated by ascorbic acid (Englard and
Seifter 1986; Padh 1990; padh 1991). These reactions are important step in the
synthesis of collagen, norepinephrine, carnitine, and several neuropeptides (Padh
1990). In spite of the fact that ascorbic acid affects a variety of biochemical
processes, none of these effects is specific to ascorbic acid. Many other reducing
agents can replace ascorbic acid.
From a few of such reactions that we have understood at the molecular level,
it has become apparent that ascorbic acid does not directly participate in enzymecatalyzed conversion of substrate to product. Instead, the vitamin regenerates
prosthetic metal ions in these enzymes in their required reduced forms. This is in
agreement with its other antioxidant functions such as scavenging of free radicals.
Ascorbate and other antioxidant nutrients are presumed to play a pivotal role in
minimizing the damage from oxidative products including free radicals. This
protective function is two-fold. One function is to reduce the already oxidized groups
in prosthetic centers of some enzymes, and the second is to scavenge the oxidants
and free radicals (see antioxidant functions of vitamins).
Deficiency Symptoms
The relationship between ascorbic acid nurture and a variety of clinical
conditions has been reviewed by Clemetson (1988). Irritability, retardation of
growth, anemia, poor wound healing, increased tendency to bleed, and
susceptibility to infections are signs of ascorbate deficiency. Petechiae, bleeding
gums, weak cartilages, and tenderness in the legs are some of the hallmark
symptoms of scurvy.
Hypervitaminosis
With Linus Paulings strong advocation (1970a,b), thousands of people are
ingesting amounts of ascorbic acid up to 200 times RDA without significant toxicity.
However, occasionally complications like kidney stones, gastrointestinal
disturbances, interference with copper and iron metabolism, and a conditioning to
megadoses may occur.
Food Sources
Vegetables and fruits provide most of the vitamin C in a diet. Meat, fish, eggs,
and milk provide insignificant amounts of ascorbic acid. Ascorbic acid is a labile
vitamin; thus, it is likely to incur some loss during cooking. The presence of metal
ions like copper or iron significantly enhances destruction during cooking. Because
of the increased use of ascorbic acid as a preservative in foods and drinks and the
increased availability of fresh fruits and vegetables throughout the year,
consumption of vitamin C has increased during the past several decades.

Vitamin B2: Riboflavin
History
Riboflavin was the first coenzyme vitamin to be recognized. Its name is
derived from its components: ribose and the fluorescent pigment of a group
flavins.
Chemistry
Stableto heat, acids, and oxidizing agents. Labile to light and alkaline
conditions.
Deficiency Symptoms
Dermatitis around nose, cheilosis, altered coloration and texture of lips and
tongue, fatigued and sensitive eyes, and bloodshot and vascularized eyes are
common deficiency symptoms.
Food Sources
Dairy products, grains, meat, fish, and eggs provide a good supply of this
vitamin. Fruits and vegetables provide little riboflavin. Exposure to light leads to
significant loss of this nutrient.
Niacin
History
Pellagra characterized by rough skin has been described in the early
eighteenth century. Goldberg in the United States is credited with the
characterization of pellagra preventing factor. This was followed by identification of
the factor as nicotinic acid. The vitamin was named niacin to distinguish it from
nicotine from tobacco.
Chemistry
The term niacin includes nicotinic acid and niacinamide. It is a fairly stable
vitamin.
Biochemical and physiological Functions
The amino acid tryptophan is a precursor of niacin, and therefore tryptophanrich and niacin-poor foods like milk and eggs also prevent pellagra. Niacin is a
constituent of coenzymes NAD and NADP, which are hydrogen acceptors for
numerous reactions in the metabolism of carbohydrates, lipida, and amino acids.
Therefore, requirements for niacin vary with the metabolic state of an individual.
Deficiency Symptoms
It usually takes several moths to develop a niacin deficiency. Pelegra is rare in
the United States, but is not uncommon in countries where corn is a staple diet. The
gastrointestinal tract, skin, and nerveous system are affected in pellagra. Variable
symptoms include loss of weight, poor health, nausea, soreness in the mouth,
anemia, symmetric dermatitis, confusion, irritability, and dementia.
Food sources
A diet adequate in protein will generally provide adequate niacin and also
tryptophan. Meat, fish, poultry, and whole grains are good sources of niacin. Except
for legumes and potatoes, fruits and vegetables provide insignificant amounts of
this vitamin.
Vitamin B6: Pyridoxine
History
In addition to riboflavin, vitamin B2 preparations in early times were reported
to contain another factor named pyridoxine or B 6 The factor was isolated in 1938
and its structure determined.
Chemistry
Vitamin B6 is actually a group of compound like pyridoxine, pyridoxal and
pyridoxamine. Vitamin B6 is stable in heat and acid, but is labile in light and in
alkaline conditions.
Biochemical and Physiological Function
Coenzyme pyridoxal phosphate is an active form of the vitamin that is
involved in numerous steps of amino acid metabolism like transamination,
decarboxylation, and transulfuration. It also has a role in many other reactions
including the conversion of tryptophan to niacin. Excessive intake of pyridoxine may
lead to dependency on higher intake.
Deficiency symptoms
Weakness, ataxia, vomiting, irritability, seizures, dermatitis around the mouth
and eyes, and neuritic symptoms are observed in a vitamin B 6 deficiency. People
taking isonicotinic acid hydrazide is an antagonist of vitamin B 6.
Food Sources
Meat, fish, poultry, potatoes, vegetables, and whole grains are good sources
of vitamin B6.
Pantothenic Acid
History
Although pantothenic acid was isolated in 1938, it drew interest only after
1950 when Lipmann showed that pantothenic acid was a part of coenzyme A,
required for biological acetylation reactions.
Chemistry
Pantothenic acid in its salt form is quite stable during normal cooking
procedures. It is labile in acidic and alkaline conditions.
Biochemical and Physiological Function
Food sources
Organ meats, legumes, nuts, and egg yolk contain good amounts of biotin.
Cereals and milk contain small amounts of biotin. The avidin present in egg white is
a heat labile antagonist.
Folic Acid
History
The name folic acid is derived from a latin word, folium, for green leaves. It
was isolated as a growth factor and as a factor for the treatment of megaloblastic
anemia.
Chemistry
Folacin, a common name for folic acid, pteroylglutamic acid, and other
related compounds having the vitamin activity, is a complex molecule made up of
pteridine, para aminobenzoic acid, and glutamic acid. There is a variable but
considerable loss of folacin during cooking.
Biochemical and physiological Function
Folacin is stored in the liver. Tetrahydrofolate is an active form of this vitamin.
It is a coenzyme for numerous reactions involved in one-carbon transfers in the form
of methyl, hydroxymethyl, or for myl groups. These reactions are involved in the
synthesis of DNA, choline, methionine, serine, and glycine.
Deficiency Symptoms
Folacin deficiency leads to megaloblastic anemia in which proper maturation
of red blood cells is hampered, resulting in fewer red blood cells and release of the
large nucleated precursor cells. Folacin deficiency is sometimes observed during
pregnancy and in the elderly.
Food Sources
Folacin is widely prevalent in many food group. Organ meats, eggs, whole
grains, and green vegetables are particularly rich in folacin.
