Sweet
THROWING APPLES (V) - 110
As delightful as a blushing young lady and the
apple of her eye, red apples and dashi vodka pair
up in a surprising combination with refreshing
lemon juice, simple syrup and white ale.
LATE AUTUMN (V) - 110
Reminiscent of our favourite season of the year,
a blend of Havana 3 years rum, chrysanthemum
tea cordial, and homemade slow-cooked
pandan syrup is carbonated in a
Perlini shaker. Served over ice.
GENMAI 13 (V) - 110
A simple mix of Beefeater 24 gin,
genmaicha tea cordial, topped with
refreshing soda water for a delicious long
drink, topped with crunchy bits of
toasted genmaicha kernels.
HOW MANY CARROTS? (V) - 120
Not to be mistaken with diamonds,
the juice of carrots, yuzu and orange are
anchored with Beefeater gin and Cointreau,
shaken with simple syrup, poured over ice.
Garnished with an heirloom carrot.
PEANUT BUTTER MILKSHAKE - 120
A playful and surprising blend of white
chocolate liqueur, Frangelico, half and half,
and a pinch of salt. Shaken and strained,
then served as a glass of milk.
EL POLICAN AGUA FRESCA (V) - 120
A Zubrowka vodka cocktail with fresh, fragrant
tamarind and lemongrass, and electrifying sparks
of cinnamon to awaken your senses.
Savoury
SHIITAKE & IT - 120
Traditionally, the It in Gin & It refers to
Italian sweet vermouth, but this version
does without the gin while being complex
and intriguing, served with a rim of
fermented shiitake mushroom powder.
LE BRIES (V) - 130
Much like the perfect summer drink in
everyones minds, this refreshing
watermelon, lychee and blood orange
cocktail is carbonated in a Perlini shaker,
served with a cheesy slice of brie
coated in burnt leek ash.
PCC - 130
The PCC Parmigiano Cheese Cocktail.
A combination of redistilled Parmigiano
Absolut vodka, and dry vermouth, stirred to
a balance of aromatics and a luscious
mouthfeel. Garnished with a
salted caramel nut brittle.
BLOOD WEDDING (V) - 130
As complex and intriguing as the Spanish
tragedy of its same name, this cocktail
marries Absolut vodka, a smoky Lapsang
Souchong and tomato blend, Chinese
mustard juice, lemon juice, lime juice, and
rich simple syrup. Garnished with
a thin slice of beef jerky and cherry tomato.
SALTED NEGRONI - 140
Classic flavours of this Negroni blossom
with a touch of salt. Experience this union
of Beefeater gin, Campari, Carpano
Antica Formula, and salt solution.
Sour
DARTH & SOUR - 140
A twist on the classic whisky sour, with
homemade popcorn macadamia whisky,
served with a chorizo chip for that
sweet and savoury combination.
THE WILD STRAWBERRY PATCH (V) - 120
Find your own underrated gem of a place
with homemade strawberry and elderflower
shrub, lemon juice, and Beefeater gin.
Shaken and topped with soda for
a fruity thirst quencher.
A LITTLE ALFIE (V) - 120
A little privacy with the worlds most loved
(and hated) gentleman who never fails to
seduce with fragrant almond liqueur,
hibiscus syrup, shaken with lemon juice and
egg white for that creamy, heady satisfaction.
PROVENALE (V) - 140
Don Julio reposado, lime juice,
homemade lavender honey and lavender
infused egg white, frothed and shaken
before being strained into a coupe glass.
CLEOPATRA FORMOSA (V) - 150
With a thunder of drums, all hail the
mighty queen with a roar of mezcal and
Absolut Elyx shaken with clarified
pineapple star anise syrup, and a generous
splash of fresh lime juice. Served in an inverted
golden pineapple with smoke.
PICKLE BACK - 180
Great for sharing with friends (old or newly met),
this tradition is brought back alive with Jameson shots
and a back of lip-smacking pickle juice, plus a jar of
crunchy pickles as well!

THE PINK PANTHER IN VEA - 130
Run around town behind Inspector Clouseau
with redistilled pink peppercorn Beefeater gin,
white wine vinegar, Bols cacao white, and
a delicate touch of rose syrup. Stirred
and strained into a martini glass.
PISTACHIO MARTINI - 150
Redistilled pistachio Absolut vodka,
Cocchi Americano, and a rich
simple syrup is stirred and strained
into a martini glass, garnished with
a large Mediterranean olive.
A ROMAN HOLIDAY - 140
For an experience in place of the
Vespa and scenes of Rome, stir together
a redistilled Martini rosso concentrate,
smooth cold drip coffee, Beefeater gin,
and a syrup. Strained into a rocks glass
over a large cube of ice.
BONE MARROW OLD FASHIONED - 160
Bone marrow fat-washed bourbon,
rich simple syrup and dashes of Angostura
aromatic bitters, stirred and served over
a large ice cube, zest of fresh orange
and cherry on a bone.
THE BARREL AGED HOLLAND GIN COCKTAIL - 170
A timeless recipe of Bols Genever, maraschino
liqueur, rich sugar syrup, absinthe and Angostura
aromatic bitters is matured in new American oak
barrels for that smooth, velvety finish.
A fresh spritz of lemon zest before serving
awakens all the nuances found in this classic.

called Honeysuckle, its alternative is Honey Bee
when made with Jamaican rum.
