Praktikum Teknologi Pengolahan Daging Ikan Susu dan Telur dilakukan survei ke
salah satu UKM Telur Asin yaitu UKM Telor Asin Bobodolan yang terletak di daerah Jalan
Bobodolan, RT 03 RW 13 Rancaekek Wetan, Bandung, Jawa Barat. Usaha Kecil dan
Menengah (UKM) merupakan unit usaha yang dikelola oleh kelompok masyarakat maupun
keluarga. Banyaknya pengolahan telur kedalam bentuk telur asin ini disebabkan oleh sifat
telur yang mudah sekali rusak, sehingga diharapkan dengan adanya pengawetan melalui
olahan telur asin, umur simpan telur dapat bertambah. Cara pengolahan telor asin yang
dilakukan di UKM Telor Asin Bobodolan yaitu dengan proses pemeraman dengan abu
gosok. Sifat organoleptik telur yang dihasilkan yaitu telur asin memiliki putih telur berwarna
putih dan kuning telur warna oranye. Aroma telur asin menghasilkan aroma sedikit
agak amis. Rasa yang dihasilkan yaitu asin pada putih telur dan kuning telur, serta
tekstur agak kenyal pada putih telur dan agak masir pada kuning telur. Pembuatan telur asin
dilakukan 3 hari 1 kali. Jumlah bebek yg diternak berkisar 300 ekor dan dapat menghasilkan
600 butir telur untuk 1x produksi.
ABSTRACT
The practical Technology Processing of Fish Meat Milk and Eggs conducted a survey
to one of the SMEs (Small and Medium Enterprises) called Telur Asin "Bobodolan" which
located in the area of Jalan Bobodolan, RT 03 RW 13 Rancaekek Wetan, Bandung, West
Java. Small and Medium Enterprises (SMEs) is a business unit managed by community
groups and families. The number of egg processing into Telur Asin shape is due to the nature
of the eggs are easily damaged, so with their preservation through processing salted egg, egg
shelf life can be increased. Telur Asin "Bobodolan" using curing process with ash.
Organoleptic properties of eggs produced white in eggwhite and orange in yolk. The aroma
of Telur Asin are a little bit fishy. The flavor is salty in the egg white and yolk, and somewhat
chewy texture of the egg white and yolk rather masir on. This SMEs of Telur Asin can be
produced 2 times in a week. Number of ducks who bred around 300 tails and can produce
600 eggs for the 1x of production.
