Daily Food Prep Levels Sheets - simple

Purpose & Value:


1. These sheets are designed to help understand Daily Sales for main menu items
2. By understanding the Daily Sales, it is then possible to relate this to how much food needs prepping on a daily basis
3. This will assist with managing labour time spent prepping, assuring enough of each food item is available each day
4. In turn this will manage shelf life and wastage, improving Food GP 's & %
5. By knowing how much food to prep, it is easy to understand how needs to be de-frosted
6. This will reduce the amount of items that become unavailable on a menu, creating a consistent approach
7. If we know how much food to de-frost, then we know how much food to order
8. Ordering wisely will reduce maintenance costs on fridges & freezers as they are allowed to operate efficiently and not over loaded
9. Less cash is tied up in stock holding, enabling an increase in cash flow

Instructions:
1. Firstly print off the sheets
2. Take a sales mix comprising of the items you wish to track in terms of ordering & prepping
3. We suggest that you choose items that are popular and/or take time to prep
4. It is best to take an average over 3 - 5 weeks for each item to gain a true picture
5. The sheets are organised by kitchen section enabling an understanding of which food is placed in which fridge/freezer
6. Insert your menu/ products into the columns labelled "Menu Item"
7. Insert the sales mix for each of these items/products according to each day of the week into columns labelled "Sales"
8. Each day you then need to check the level of stock already prepped in each fridge
9. Columns labelled "Stock" is there for you to enter these amounts
10. "Sales" minus "Stock" = "Prep"
11.The "Unit" column is for you to depict the size or batch of prep normally related to each Menu Item
12. These sheets are really useful for training new members of the kitchen team
13. On the electronic version the sheet will calculate "Prep" levels automatically
14. Once these sheets are adopted as a normal way of life, they will only need adjusting for weeks or days out of the ordinary
15. These days might include Bank Holidays, Christmas, Valentines, St Patricks Day etc.
