Ingredients
1headgreencabbage
1largecarrot,chopped
2tablespoonsbutter
1/2largeonion,chopped
1/2bellpepper,chopped
1clovegarlic,minced
1cupcookedrice
1poundgroundbeef,lamb,pork,orchicken
1egg,beaten
saltandpeppertotaste
1cuptomatosauce
1cupchickenorbeefstock
2bayleaves
3tablespoonssourcream
Inalargepot,bringsaltedwatertoaboilandgentlyaddentirecabbage.Boilfor35minutes,until
outerleavessoftenslightly,butnotfallingapart.Removeasmanyleavesasyoucaneasily,careful
nottotearthem.Boilthecabbageuptoabout3moreminutes,asneededtoremovetheleaves.
Discardthecoreandcoarselychoptheextracabbageleaves.Mixthechoppedleaveswiththecarrot
piecesandlinethebottomofalargepot.
Oncetheleavesarecoolenoughtohandle,cutoffasmuchofthecenterstemontheoutsideofeach
leafaspossiblewithoutcuttingintotheleaf.
Inalargeskillet,meltthebutterovermediumheat.Oncemelted,frytheonion,bellpepper,andgarlic
untilsoftened,about5minutes.Removefromheatandcool.Oncecooled,mixinalargebowlwith
therice,groundmeat,andegg.
Onaworksurface,placealargespoonfulofthemeatandrice,about1/2cup,ontothecabbageleaf
closetothebottomofthestem.Foldinthesidesoverthemeatandrolluptheleaftightlytoclose.
Repeatwithremainingleavesuntilthereisnomeatandriceleft.
Placethefilledrollsseamsidedownonthechoppedcabbageandcarrotsinthelargepot.Sprinkle
eachlayerwithsaltandpepper.
Inamediumbowl,stirtogethertomatosauce,stock,andbayleaves.Pouroverthelayeredcabbage

rolls.Bringthesaucetoaboilovermediumhighheat.Reduceheattolowandsimmer,covered,for
aboutanhour,untilmeatfillingiscookedthrough.
Removethecookedcabbagerollsfromthepot.Stirthesourcreamintotheremainingsauce.Serve
thecabbagerollshotwiththesourcreamsauce.
