Be unsinkable
when life hits
you hard
WHEN LIFE HITS YOU HARD, how do you get
out of it unscathed? Nowadays, it seems like
every which way you turn, you see people
who are going through a divorce, undergoing
financial devastation, losing their home to
foreclosure or losing their job. Some are
even experiencing many hard hits at once.
During these extra-stressful times, it can feel
like you and those around you are drowning
in problems.
Here are a few strategies and reminders
that will get you through difficult times and
help you stay afloat.
Focus on the solutions (not the
problems) and take action. Focus on
finding solutions to your problems. Write
them all down. This will make you feel
more in control of the situation. Then, of
course, take action.

a worse situation. Focus on what you are
grateful for in your life.
Take good care of yourself.
Eat healthfully and exercise. It will help
you feel energetic and positive.
Journal. Journalling is like having a
conversation with yourself. Simply by
putting your thoughts and feelings on paper,
you will feel an emotional release and youll
discover many insights on your situation.

positive state of mind, you can become

A U.S. relative named me as beneficiary of
their IRA (Individual Retirement Account).
The IRA was immediately paid out in cash
from which the IRS (Internal Revenue Ser-
vice) deducted a 15 per cent withholding
tax. Would this incur a tax liability in Canada
since I inherited the IRA as a beneficiary
rather than it passing through the estate?

Because the inherited IRA account belongs
to you as the beneficial owner, the CRA will
want to tax you on the entire income that you
receive from the IRA at your Canadian mar-
ginal rate in the year you receive the funds.

worth more than $3.5 million, there is a possi-
bility that the U.S. property in question could

erty in Arizona. One of the speakers men-
tioned that if Canadian couples jointly
purchase a property and one of them
dies, the survivor would have to pay an
inheritance tax to both the IRS and the
Canadian government. Correct?

estate is worth less than $3.5 million, or $7
million for a couple, can use the Canada/U.S.
Tax Treaty and apply for a full exemption
from U.S. estate tax on any U.S. property they
own, regardless of whether the U.S. property
is in joint ownership or not.

have been referring to was a U.S. rule that if
U.S. property is owned jointly and the surviv-
ing joint owner cant provide proof that he or
she paid for at least half of the purchase price,

tracts, then work those contracts mostly
in Alberta. Do I have to charge the HST
when working out of province?

The answer depends on whether you are
providing a good or a service. Presumably, as
a consultant, you are providing a service.
Generally, when at least 90 per cent of a
service is performed in a province, the CRA
considers the service to be provided in that
province. So, if you are performing 90 per
cent of your service in British Columbia (an
HST province), then HST must be charged.
However, if you are performing 90 per cent of
this service in Alberta (a non-HST province),
then HST will not apply.
If the 90 per cent rule cannot be met in
either of the provinces (i.e., 45 per cent is per-
formed in Alberta and 45 per cent in British

the negotiation took place (as long as more

of-country visitors agree. they say:
Canadians are neighbourly. they will shovel a neighbours walk without being asked and
expect no favour in return.
Canadians are considerate. they wont let their dog poop on someone elses lawn, and
theyll automatically turn down their music at 11 p.m.
its the little things Canadians do, such as taking their shoes off at the door, not showing up
empty-handed when theyre guests, cleaning up after themselves, being respectful of other
peoples property and tipping, that add to their reputation for civility. and yes, Canadians
are great tippers!
as the leading civility expert in Canada for the past 12 years, i am pleased to report that
Canadians are paying closer attention to their manners. increasingly, we are acknowledging civil-
ity when we experience it and we are reciprocating in kind. i believe that we are starting to better
understand the impact of rudeness on our health, our relationships, service standards and the

if we define Civility as the avoidance of conflict and the adoption of a

polite position that seeks not to discriminate (or, at least, appears not to), then
the verdict would be yes. we Canadians continue to be considered by our
southern and european friends as some of the most polite people in the world.
of course, there are myriad exceptions to our mild-mannered tenden-
cies: symphony-blaring cellphones in restaurants; pedestrians and motorists
mindless of one anothers presence; people hurrying through doors with no thought of who
theyre shutting out behind them; pregnant women and the elderly being left seatless in subways;
internet addicts posting venom in gleeful anonymity; certain teenagers bottle-fed on American
Idol who can hardly write a decent sentence, but who feel entitled to unlimited fame and riches.
Beyond these irritants is something deeper and more disturbing. true civility, in the classical
definition of the word (civil or civic), demands active and pro-social citizenship. it requires us to
think not only of the comfort of the person with whom we are face to face (or e-mail to e-mail),
but also of the well-being of the civic environment we inhabit. it requires ethical thought and eth-
ical action. and there we run into problems.
Contemporary Canadians are faced with numerous impossible contradictions. we are a nation
in our constitution, but, in reality, we are 12 territories with different health and education systems,
political parties and notions of best government and corporate practices. the individual is required
to be civil and ethical, yet is confronted by innumerable hurdles: schools that have tried to remain
non-directive by turning a blind eye to student bullying; corporations that, in a bid to be supra-
competitive, have abandoned Canadian workers in pursuit of offshore workers earning minimal
wages; governments saddled with debt that have forgotten that waiting for a year to see a medical
specialist was never the deal made with citizens when Canadas social system was built. How are
Canadians to remain civil, altruistic and ethical when, at every turn, they are asked to turn a blind
eye to their needs, those of their colleagues and those of the most unfortunate? Opinions expressed are those of the

YOURE A SAVVY computer user. You scan
your hard drive for viruses. You regularly
upgrade your applications. You back up your
companys data to an external hard drive. And
then a natural disaster hits, your office is
flooded and you lose everything anyway.
Thats one problem that Sue Varty never
has to worry about. To ensure the integrity of
her businesss financial data, Varty, a freelance
technical writer and owner of Toronto-based
Wordtree Consulting, recently decided to
move all of her records away from her Toronto
officevery far way.
Varty has switched to cloud computing, a
system whereby she no longer keeps her data
and applications in her place of business.
Instead, theyre stored on remote computers
run by an independent company and placed
in multiple locations throughout the world.
Many uses of the cloud
The idea is simple: Instead of keeping
your programs and data on a computer or
server near you and possibly losing every-
thing through a theft, fire or natural disaster,
let someone else store and manage the mate-
rial for you in the cloud: remote servers kept
in several locations throughout Canada or
other countries.
Data backup is just one use of the cloud.
Companies large and small are realizing that
they can ditch their in-house servers and let
other people store and manage their e-mail,
and even their favourite software, from any-
where in the world.
Cloud computing has been slow to catch
on in Canada, but its an established approach
in the U.S. and other countries. Many busi-
nesses are now using cloud versions of e-mail,
word-processing, spreadsheet, calendar and
presentation software. Microsoft is working on
a cloud version of its Office suite. Sophisticated
accounting and customer-relationship-man-
agement (CRM) software, such as Salesforce.
com, is kept on a remote server and accessed
from a standard Web browser.
By utilizing cloud computing services,
you have less need for an information tech-
nology (IT) department, and you dont have
to burn a backup CD every Saturday and take
it over to your brother-in-laws place.
Cloud computing is growing as high-
speed broadband connections become wide-
spread, making fast data transfer feasible.
When colleagues need to revise a document,
everyone can use his or her Web browser to
view it in the cloud and make necessary
changes, all on the same copy.
Security in the cloud
But what about security? Fearful that data
could be compromised, the government of
British Columbia is not allowed to store per-
sonally identifying data outside the province,
says Shawn Chaput, owner of Vancouver-
based Privity Systems Inc., a security and pri-
vacy consulting firm.
Cloud-computing service providers say
that steps are taken to ensure safetytypically
several layers of protection. And customers
files are usually kept encrypted. However,
business owners are advised to check with a
privacy expert or legal adviser to make sure
they comply with privacy laws before sending
an employees or customers personal infor-
mation to a cloud-computing service.
To keep data safe, Chaput recommends
that a defined level of security be spelled out
in any data-storage contract. And that should
include your right to decide who gets access
to your information, and a requirement that
the company will return your data to you in a
form that can be read if you decide to end
your relationship with the firm.

levels of replication, says Mike McDerment,
co-founder and CEO of FreshBooks, the
Toronto-based cloud-computing company
used by Varty, the freelance writer.

licated in an additional server, as well as in
multiple locations across Canada. We have
enormous redundancy, McDerment says.
Many services in the cloud
By cutting IT costs and by not needing to
continually upgrade both software and local
servers, cloud computing can also be a bar-
gain for many small businesses.
Just by switching to a cloud-based e-mail
service, for example, a typical small business
can reduce costs. According to Forrester
Research, a local e-mail service can cost a
business from $7 to $21 per month, once IT
and hardware expenses are included. Cloud
e-mail can cost as little as $5 per month.
With cloud-computing services, you
benefit from our economies of skill, says
John Betz, Microsofts director of product
management. In addition to the expected
coming release of cloud versions of Microsoft
Office, the company offers cloud computing
for e-mail, CRM and instant messaging,
among other services.
FreshBooks allows its users to create
invoices that are automatically generated at
a set time defined by the customer. Other
employees and subcontractors can access
the database from anywhere to amend the
amount of work done on a project. Invoices
can then be sent via e-mail or snail mail.
Varty appreciates the flexibility that a
cloud application gives her business, eliminat-
ing the need to do manual arithmetic calcula-
tions. With FreshBooks, I can prepare special
invoices for international clients that auto-
matically leave off GST [goods and services
tax], she says. And my accountant can see
my books right in his office, without me hav-
ing to lug hard copies to him. C

might be talking about her business.
No longer content to let motherhood isolate them from or hamper their
ability to thrive in the business community,
entrepreneurial moms fill an economic
niche and have gained recognition as a
legitimate business force.
Mothers who have become at-
home entrepreneurs are a phenom-
enon that has emerged over the
past decade as part of a larger trend
of female entrepreneurship, and the
businesses and products they have
created run the gamut.
According to a study by the
Womens Business Enterprise National
Council (www.wbenc.org), women-
led firms provide 1.7 million jobs
in Canada and are creating new
jobs at four times the rate of the
average business. Women entre-
preneurs in Canada contribute
more than $18 billion to the
countrys economy.

Financial resources include women-specific
lenders. Organizations such as the Atlantic Canada
Opportunities Agency (ACOA; www.acoa.ca) and
the Business Development Bank of Canada (BDC;
www.bdc.ca) are recognizing the difficulty women
have historically had in accessing capital. They are
targeting women with some of their start-up pro-
grams, such as the Business Management Training
Allowance (through ACOA), the Women Entre-

Many moms admire that I have taken
the risk to leave the corporate arena.
Juggling and boundaries
In the end, mom entrepreneurs encounter
many of the same challenges, pitfalls and perks
faced by any other home-based business. Being
a work-at-home mom doesnt magically solve
all those work/life problems. If theyre not care-
ful, women who start their own businesses say,
they find it easy to get distracted.
Its really hard, says Wee Piggies founder
Cornelius. People tell you that at the begin-
ning, but you dont listen. Ive had times when
[my] kids have gotten my financials and the
accountant gets my kids school work.
Isabelle Lipari says that setting up guide-
lines from the very beginning made the dif-
ference: We had very strict rules. After the
workday, we would not talk about the busi-
ness. Setting the rule for [my] home office:
Kids are not to come to the office. Kids knew
what they were allowed to do.
Throwing all of the responsibilities of
motherhood into the mix makes for a tough
juggling act. Business activities are typically
planned during downtime, when children are
napping or at school, or at night, while theyre
sleeping. Often, work is taken care of in transit.
A lot of my business is done in the car
when I have downtimewhile Im waiting to
pick up my children from dance or hockey,
says Cornelius. My BlackBerry is my third
child, she laughs.
Moms also rely heavily on other family
membersparents, husbands, siblings, some-
times even their childrento help out.
My parents help take care of the children
when I have meetings and drive them to
extracurricular activities, says Quinton of
Stories Worth Telling. My husband patiently
advises on what he thinks might work for me.
My mother and two sisters provide encour-
agement and understanding. My father is my
accountant and has set up my books. He
makes sure I pay my taxes on time and pro-
vides advice earned from his many years of
work.
All agree the efforts have been well worth
it, and in ways beyond financial measure.
I love being my own boss, setting my
own hours and feeling the true sense of
accomplishment in knowing that I am creat-
ing something and making my ideas come to
life, says Broback. Although it has been dif-
ficult balancing home life, kids schedules and
many franchisees at once, it is absolutely
worth the trade-off when I consider both the
time I am able to spend with my family and
the life lessons it is teaching them.
It has been a highly rewarding journey, a
business education, a self-esteem builder and
creative outlet for both of us, says Bea Moritz,
the other half of Bealoo Kids. The process of
creating and running Bealoo has been a
source of inspiration, showing us that we can
accomplish just about anything.
Says Draper, My main aim was to be
there for my young children, and this reason
alone makes it worth it! C

New studies find
a healthful side to coffee

The laTesT coffee buzz doesnt come
from caffeineit comes from new develop-
ments about coffee. It turns out that coffee
might actually have healthful benefits.
More than 60 per cent of adults in canada
drink coffee, according to the Toronto-
based coffee association of canada. until
recently, however, few of us pondered whether
it was negative or positive for our health.
but coffee has been on the minds of
researchers for some time. In 1998, the Insti-
tute of coffee studies, the first u.s. centre
devoted to basic research on coffee, opened
at Vanderbilt university in Nashville. and
recently released research conducted by sev-
eral teams of harvard Medical school doctors
and nutritionists, as well as others, generated
a barrage of media and public interest by stat-
ing that coffee is good for our health.
This has become a main message, notes
Kathryn Wilson, a post-doctoral fellow and
lead researcher at the harvard school of
Public health and channing laboratory.
When people find out that they are at risk for
developing disease, coffee can be one pleasure
from which they dont need to deprive them-
selves, and then they can focus on other life-
style choices.

general population, coffee drinking doesnt
have any serious detrimental health effects,
and, in fact, causes an inverse association
with the risk of Type 2 diabetes, cardiovascu-
lar disease, liver cancer and liver cirrhosis,
says Rob van Dam, assistant professor in the
departments of nutrition and epidemiology at
the harvard school of Public health.
Potential downsides
although regular coffee drinking isnt
harmful for most people, that might not hold
true for pregnant women. Research has linked
miscarriage to caffeine consumption of 200
milligrams or more per day. a typical cup of
coffee has 100 to 150 milligrams.
It is also possible to be addicted to caf-
feine, according to university of florida pro-
fessor and director of toxicology bruce
Goldberger. If you consume a lot of caffeine,
then you dont, you start to crave it, he says.

facility in Montreal evaluated data from
nearly 50,000 participants. The independent
study found that men with a high daily intake
of regular or decaffeinated coffee, defined as
six or more cups a day, had an up to 60 per
cent lower risk of advanced and lethal pros-
tate cancer.
Wilson stresses that this is the first study
of the relationship between coffee and pros-
tate cancer. More research is needed to con-
firm the findings, she says, but the results so
far are very encouraging.

a 2008 study by epidemiologists at the

for a runny nose due to hay fever allergies.
Allergic rhinitis occurs when airborne aller-
gens cause inflammation of the membranes
in the nose, resulting in a runny or stuffy
nose; itchy eyes, nose and/or throat; and
sneezing. Symptoms may resolve without
treatment; however, left untreated these
symptoms may lead to fatigue, poor concen-
tration and lowered productivity.

LAWYERS MAKE great storytellers. Chicago
criminal defence attorney, one-time Stanford
writing teacher and best-selling author Scott
Turow has a good reason why: Every trial
lawyer lives by the motto that if you want
to teach a jury something
you tell them a story, he tells
The Connection.
Its no wonder he has
soared in parallel careers since
the publication of One L,
about his first year in Harvard
Law School, in 1977, and
his breakout novel, Presumed
Innocent, which marked him
as a genre-busting, literary
legal-thriller writer, in 1987.
Eight other books and more
than 20 years later, Turow has
come back to the beginning.
His new novel, Innocent
the first full-length one in five
yearsresurrects Presumed
Innocents Judge Rusty Sabich,
now a bit older and once The Costco

A return to the Presumed
Innocent landscape gave Turow the opportu-
nity to revisit what he admits is an alter ego of note. At some
sorts. I wanted to be with Rusty again, I
really didthis flawed, sensitive smart guy
who I really seemed to understand, he says.
Hes different from me in lots of ways. Hes a
judge and Im not; he grew up in a working-
class family and I didnt; and he was a creature
of the state criminal justice system, while I
came out of the federal system. Hes a quiet
and more aloof guy than I am. But I share
many of his failings and some of his strengths.
Even though Innocent can function as a
sequel, Turow was conscious not to imitate its
predecessor. He sets it apart from the opening
with a first-person narration, not by Sabich,
but by his sonone that also offers a chilling
glimpse of the novels thematic exploration of
change, love and loyaltythen rotates
through multiple viewpoints, including
Sabich, Molto and an important female char-
acter. But because Turow writes his way
through stories rather than thinking them out
beforehand, he wasnt always
sure how Innocent would be

was really off to the races.
Turow writes at home in the mornings
and on the train while heading to work, where
he often devotes time to pro bono cases he
takes on as a matter of principle and values
a way to share some of his good fortune with

the underrepresented and disadvantaged.
Im lucky that Ive had a pretty long highlight
reel, certainly as a lawyer, says Turow, citing
a complex capital punishment case as one of
his most remarkable. (Known as the Alex
Hernandez case, it was described in Ultimate
Punishment). And obviously, as a novelist,
Ive had a good roll of the dice.
Though he has scaled back his legal
duties to make room for his now primary role
as a writer, he still feels engaged when practic-
ing law. It enables you to do a lot of different
things, says the sharp and erudite Turow,
who doesnt seem to stay still for long.
Whatever happens, by the time Innocent
comes out I intend to be enmeshed in some-
thing else. Thats the best antidote to the ups
and downs of publication.
Whether thats the comic thriller idea hes
been pushing around or that play hes always
wanted to write, its certain his next creative
endeavour will be surprising. People dont
want to read about the humdrum and
ordinarythey live the humdrum and
the ordinary, says Turow. I want to
write about change. C

AS SUMMER TRAVEL plans inch ever
closer, its time to start thinking about what
you want to see and do when your reach your
destination. For travellers looking for guid-
ance, Lonely Planet (www.lonelyplanet.com)
introduces its new Discover series. These
guidebooks focus on highlights and must-see
attractions and experiences, making them
ideal for one- or two-week trips.
We saw a need to create this series
because many travellers are interested in pre-
selected top recommendations so that they
can make the most of their time in the desti-
nation, says Heather Dickson, assistant
regional publisher at Lonely Planet. Weve
done the first step in planning for the reader,
clearly presenting the key travel options and
making it easy to take a one- or two-week trip
to overseas destinations, like Europe or Asia.
The guides are all full colour and include
itineraries organized around themes and the
length of the trip. Dickson adds that the
books also include expert recommendations
for major points of interest.

IDEALLY, FAMILIES should be able to go to
a Disney theme park when crowds are thin
and prices are rock bottom. Unfortunately,
most peoples vacations fall over the summer
or during spring break, exactly the times
when Disney parks are at peak capacity.
Saving time and money is critical when
your kids are desperate to ride Space
Mountain or eat breakfast with Mickey, and
several unofficial Disney gurus have found
surefire strategies to help travellers enjoy the
best vacation possible.
When it comes to experiencing Disney,
Bob Sehlinger believes you need either a good
plan or a frontal lobotomy. Sehlinger has
made 400 visits to Disney parks over the past
20 years, and the author of The Unofficial
Guide to Walt Disney World (Wiley, 2009) and
his team have figured out how to save up to
four hours of waiting time per day by visiting
attractions in a specific order.
Sehlinger wrote the book following a
disastrous family trip to Disney World in the
early 1980s. We didnt have a plan, we paid a
bucketful of money and we stood in lines all
day. I was horrified, he recalls.
Montrealer Patti Gruman learned this the
hard way after her familys first trip to Disney
World. We were winging it, and realized very
quickly that you need a strategy, she recalls.
Planning ahead
In terms of the worst time to go, says
Sehlinger, You absolutely dont want to be
down there over a Fourth of July weekend.
Instead, head to Disney right after school fin-
ishes, or the week before school starts up
again. Sometimes the hotel rates are less
expensive at those times.
Visit the official Disney Web site at www.
disney.go.com before leaving home and pick
the attractions you want to see. Crowd condi-
tions depend on a rides popularity and carry-

aimlessly, follow the step-by-step itineraries at
Sehlingers Web site, TouringPlans.com. He
and his team developed them by analyzing
traffic flow at Disney and creating a mathe-
matical model to calculate the best order in
which to see the attractions.
Ready, set, ride!
Whether you visit Disneyland or Disney
World, Sehlinger advises arriving at least 45
minutes before the park opens. The only
way to beat the crowds is to be one of the first
ones through the turnstile. Know what the
bottleneck attractions are and hit them first,
no matter where theyre located in the park.
In other words, go to Tomorrowland and ride
Space Mountain and Buzz Lightyear and
then go all the way over to the other side of
the park to ride Splash Mountain. Then come
back to Fantasyland and ride Peter Pan. All
four of those, even a half hour later, are going
to be mobbed.
Gruman strongly recommends bringing
or renting a stroller for kids up to age 6.
The last thing you want is a tired, hot,
cranky child who says, Im not walking any-
more; carry me, says the Costco member.
Tips from the money-saving maven
Costco member Mary Waring turned a
passion for finding Disney deals into a new
business. The founder of MouseSavers.com
found discounts posted on dozens of discus-
sion boards, so she compiled them on her
private Web site. When her brother for-
warded the site to co-workers, she got more

Become your own advocate and do
some research, says Waring. Frequently,
youll save money by buying your tickets sep-
arately from your hotel.
Waring also suggests bringing along a
suitcase of cereal, snacks, juice and water. If
your hotel room has a fridge, stock it with
sandwich supplies and have a picnic lunch
instead of lining up for expensive meals. If
you eat on-site, consider sharing meals; por-
tions are huge at Disney parks.
Disney provides plenty of what Waring
calls shopportunities. Most rides end up in a
gift shop, but Gruman notes, You dont have
to lose your shirt. We gave our children $10
per day to spend on souvenirs; it taught them
about budgeting.
Take a breather
Although trying to tear your children
away from Fantasyland may seem daunting,
Sehlinger and Waring advise leaving the
parks after lunch to escape the hottest, most
crowded time of the day. Splash around the
hotel pool, take a nap and go back in the
late afternoon, suggests Waring. You can
literally stand at the exit at 4 oclock and
watch children who didnt have a rest com-
ing out in full meltdown mode. Its just
screaming mayhem.
Above all, says Sehlinger, Dont get
hung up on how many rides you fit in. Stop
from time to time and ask, What would
make us happiest right now? and just follow
that instinct. C

practice a few up-and-down (holing the ball in
two strokes) scenarios incorporating your
wedge and a putter. The goal is to get up and
down a few times. This will give you confi-
dence if you happen to miss a green.
At this point you will be on your way to
the first tee, remembering the feeling of the
great shot you hit at the practice range, which
you can now relive on the first tee.
Fixing a fade or slice
If youre still having trouble with your
swing, here are some common problems and
how to solve them. For example, when using
the driver, golfers often have a swing that
results in a fade (when a ball moves to the left
before curving back to the right) or a slice
(when a ball curves in the shape of a banana).
Because the speed of the ball off a driver is
much quicker than off the irons, the effect on
the balls flight is much more dramatic.
EYEWIRE
way to improve this swing path is to simply
place a small golf towel under your right
armpit (if youre right-handed). The idea is
to not let go of the towel while swinging
your club to the target. The towel will fall
out as you get the club to your finish posi-
tion. If you practice this technique over a
period of time, you will find yourself staying
more connected at the impact position and
perhaps swinging the club from the inside
and not the outside.
Another factor in hitting a fade or a slice
is not releasing the club at impact; releasing
the club means getting the club face to a square
position at impact.
Its easy to improve your release. If you
have ever thrown a stone into a lake and tried
to make it skip, you are on your way. Think of
the simple way you can hinge your wrist to
create power and then unload your wrist to
release the stone into the water. The feeling is
somewhat similar when you are unloading

Shrimp on the Barbie
Melbourne, Australia
680 to 908 g (11/2 to 2 pounds) jumbo
shrimp, peeled and deveined
Coarse salt (kosher or sea) and freshly
ground black pepper
1 bunch fresh basil leaves
170 g (6 ounces) very thinly sliced
prosciutto, cut lengthwise into
11/2-inch-wide strips
Wooden toothpicks or small
bamboo skewers
15 to 30 mL (1 to 2 tablespoons)
extra virgin olive oil
125 mL (1/2 cup) Pernod, absinthe or
other anise-flavoured aperitif
Lemon wedges, for serving
Season the shrimp on both sides with
salt and pepper. Wrap a basil leaf around
each shrimp, then wrap it in a strip of
prosciutto. Secure the prosciutto in place
with toothpicks. Drizzle the olive oil
over the shrimp to coat them lightly on
both sides or brush on the oil with a
pastry brush.
Set up the grill for direct grilling and
preheat it to high.
When ready to cook, brush and oil the
grill grate. Arrange the shrimp all facing
in the same direction on the hot grate and
grill them until the prosciutto is sizzling
and crisp and the shrimp are just cooked
through, about 2 minutes per side; do not
overcook them. Transfer the grilled shrimp
to a platter or plates.
Pour the Pernod into a small saucepan,
place it on the grill and warm the Pernod
until it is just body temperaturedo not
let it boil. Remove the pan from the heat
and, making sure that the area is clear
of flammable material and that no one is
standing too close, use a long match to
ignite the Pernod. Very carefully pour the
flaming Pernod over the shrimp and serve
them at once, with lemon wedges.
Makes 4 servings.
Ginger, Garlic and Honey
Grilled Baby Back Ribs
Siem Reap, Cambodia
2 racks baby back ribs (each 908 g to
1.13 kg, or 2 to 21/2 pounds)
6 cloves garlic, coarsely chopped
1 piece (2 inches) fresh ginger, peeled
and coarsely chopped
15 mL (1 tablespoon) sugar
20 mL (1 tablespoon plus 1 teaspoon)
coarse salt (kosher or sea)
10 mL (2 teaspoons) freshly ground
black pepper
30 mL (2 tablespoons) honey
15 mL (1 tablespoon) soy sauce
15 mL (1 tablespoon) Asian fish sauce
or more soy sauce
DIPPING SAUCE
20 mL (4 teaspoons) coarse salt
(kosher or sea)
20 mL (4 teaspoons) white pepper
4 juicy limes, cut in half

Cut each rack in half and place ribs in a

non-reactive baking dish just large enough
to hold them in a single layer.
Place the garlic, ginger, sugar, 1 table-
spoon of salt and black pepper in a mortar
and pound to a paste with a pestle, or
pure these ingredients in a food proces-
sor. Work in the honey, soy sauce and fish
sauce. Spread the spice paste over the ribs
on both sides. Let the ribs marinate in the
refrigerator, covered, for 1 to 4 hours; the
longer the ribs marinate, the richer the
flavour will be.
For the dipping sauce, place 5 mL (1 tea-
spoon) of salt and 5 mL (1 teaspoon) of
white pepper in neat mounds side by side
in each of 4 tiny bowls. Place 2 lime halves
next to each bowl.
Set up the grill for direct grilling and pre-
heat it to medium. When ready to cook,
brush and oil the grill grate. Place the ribs,
bone side down, on the hot grate and grill
until golden brown and cooked through,
8 to 12 minutes per side, a little longer for
full-size ribs. When ribs are done, the meat
will have shrunk back from the ends of the
bones by about inch. Watch for flare-
ups. Should they occur, move the ribs to
another section of the grill.
Transfer the racks of ribs to a cutting
board and cut them into individual ribs,
then arrange them on a platter or plates
for serving. Just before eating, instruct
your guests to squeeze 1 to 2 tablespoons
of lime juice into their bowls of salt and
white pepper and stir them with chop-
sticks until mixed. Dip the ribs in the
sauce before eating.
Makes 4 servings.
Grilled Vegetable Salad
Russia
3 to 4 small or 2 medium-size 15 mL (1 tablespoon) chopped fresh
eggplants (about 454 g, or cilantro, or 15 mL (1 tablespoon)
1 pound, total) more dill
3 luscious, red ripe tomatoes 30 mL (2 tablespoons) vegetable oil,
2 medium-size or 1 large green bell or more to taste
pepper, 3 Cubanelle or Anaheim 15 mL (1 tablespoon) red wine
peppers, or 6 horn peppers vinegar, or more to taste
1/2 small sweet onion, finely chopped Coarse salt (kosher or sea) and
4 to 6 purple or green basil leaves, freshly ground black pepper
thinly slivered crosswise, plus Grilled bread for serving
1 basil sprig for garnish
15 mL (1 tablespoon) chopped
fresh dill
Set up the grill for direct grilling and preheat it to high.
When ready to cook, brush and oil the grill grate. Arrange the eggplants, tomatoes
and peppers on the hot grate. Grill the eggplants until the skins are charred and
blistered on all sides and the flesh is soft (the eggplants will be easy to pierce
with a skewer), 3 to 4 minutes per side, 9 to 12 minutes in all.
Grill the tomatoes until the skins are dark and blistered, about 2 minutes per side,
6 to 8 minutes in all. Grill the peppers until the skins are darkly browned and blis-
tered, about 2 minutes per side, 6 to 8 minutes in all, for medium-size bell peppers
or Cubanelles; 3 to 4 minutes per side, 12 to 16 minutes in all, for a large bell pep-
per; and 2 to 4 minute per side, 4 to 8 minutes in all, for Anaheim or horn peppers.
To ensure even cooking, turn the vegetables with tongs.
Transfer the grilled vegetables to a platter to cool to room temperature. Scrape off
any burnt skin, discarding any stems. Cut the peppers in half, remove the cores
and scrape out the seeds. Cut the vegetables into - to -inch dice (or as large as
you like). Transfer the diced vegetables to a non-reactive mixing bowl.
Add the onion, basil slivers, dill, cilantro (if using), vegetable oil and wine vinegar
to the diced vegetables, and stir to mix. Taste for seasoning, adding salt and black
pepper to taste and more oil and/or vinegar as necessary. Garnish with a sprig of
basil. Serve the salad with grilled bread.
Makes 4 to 6 servings.

to save money on utility bills while
helping to protect the environment look
for the Energy Star symbol, which identifies
products as the top high-efficiency perform-
ers in their category. This spring, Costco will
be introducing LED (light-emitting diode),
LCD (liquid crystal display) and plasma tele-
visions with a new and higher Energy Star
standard of 4.0, which will be at least 40 per
cent more efficient than conventional models.
The new televisions are among the many
products Costco will highlight during a week-
long promotion (May 31 to June 6) that coin-
cides with Canadian Environment Week (May
31 to June 5). Other Energy Starrated products
include washing machines, refrigerators, com-
puters, thermostats, dehumidifiers and lights.
During Environment Week, members
will find instant-rebate coupons offering dis-
counts of between 10 to 30 per cent off a range
of energy-efficient and environmentally
friendly products. Last year, for example, there
were discounts on bicycles, lighting fixtures
and biodegradable cleaning products.
In addition, representatives from various
provincial utility companies are expected to
set up kiosks at Costco warehouses, where
they will be available to talk to members about
energy efficiency and answer questions.

FOR ENVIRONMENTALLY conscious citi-
zens, following certain steps to take care of
the planet is a no-brainer. These steps include
recycling more, using less electricity and driv-
ing less. But what happens when you have to
driveparticularly if you need to rent a car? tors such as clear air filters, tires with the

mentally friendly as possible. When choosing
a rental company, look for the following.
Hybrid cars. Hybrid cars have two en-
gines: a standard gasoline engine and an elec-
tric motor. The gas engine turns off when the
car is running at a constant speed and when
the car is on but not moving. This cuts down
on both pollution and gas consumption.
Popular hybrid models include the Nissan
Altima, among others.
NOT ONLY IS IT nice to be
green, its nice to save some green queues and the need to come to a full stop
too. Between May 1 and August 31,
Costco members who rent from Budget can
get $50 off a minimum six-day rental including
GPS or $20 off a minimum six-day rental without
a GPS unit. These savings are in addition to the
exclusive savings of 5 to 25 per cent off car rentals
for Costco members at participating locations in
Canada, the U.S. and overseas. Executive Members
receive a complimentary one-car-class upgrade, and
pay no extra charges for one additional driver and no
surcharges for drivers between the ages 21 and 24.

Fuel efficiency. Ideally, any car you
drive should be rated 7.35 litres per 100 kilo-
metres for highway driving.
Vehicle age. Newer, well-maintained
vehicles get better mileage. This includes fac-
proper air pressure and, quite simply, cars
that have been washed.
Flex-fuel options. Look for vehicles that
can use E85 ethanol flex fuela combination
of ethanol and gasoline. Its use can reduce not
only gasoline consumption, but also carbon
monoxide and carbon dioxide emissions.
Because ethanol is water soluble, non-toxic
and biodegradable, E85 contains fewer poten-
tial contaminants than gasoline does.
Toll-collection services. Cars that use
electronic toll-collection services, such as EZ
Toll or EZ Pass, not only save travellers time
by skipping cash payment lines, they also
help the environment. By eliminating long
and then start up again, electronic toll passes
help cut down on fuel consumption and
harmful hydrocarbon, carbon monoxide
and nitrogen oxide emissions.
Fuel storage. Car-rental com-
panies need to have fuel on hand to
fill their fleet. While it may not be
obvious, these businesses can take
several steps to lessen their environ-
mental impact. For example, what

I had been working as a songwriter and
recording artist for a couple of years, he says,
but when I moved to Winnipeg in 1998,
thats when this all started.
This is Tribe of One, a collective of per-
forming and visual artists who create an
immersive experience that is both entertain-
ing and edifying.
The area of Canada where Ive lived for
the last 12 years, the Red River Valley, its very
distinctive in Canada, Leaf says. Its probably
the only place in the country where the First
Nation and the French and English cultures
coexist to such a degree.
Tribe of One was born in a serendipitous
moment of inspiration.
We were working on a song one night,
Leaf recalls, and a couple of dancers were

DIRECTIONS
Muddle all ingredients except for Motts Clamato
cocktail and ice in a mixing glass. Then add Motts
Clamato cocktail, ice and mix thoroughly.
Strain mixture into a rimmed footed glass over
fresh ice.
Garnish with a cucumber stick seasoned with freshly
ground salt and pepper.

TIP: Muddling is a simple mashing technique used

to release flavours from certain ingredients like herbs
or fruit. You can use a wooden muddler or a bar
spoon with a muddler on the end.
