Pour the canola oil to a depth of 3 inches into a wok or deep, wide
saucepan, add the sesame oil (if using), and heat to 350F on a deep-frying
thermometer or until bubbles immediately form around a wooden chopstick
held upright in the pan.
Meanwhile, make the batter. Fill a large bowl with the ice cubes, and then
nest a second bowl in the cubes. Add the flour, ice water, egg, and salt to the
second bowl and, using a fork or chopsticks, stir lightly just until all the flour
is moistened, the egg is incorporated, and the batter is lumpy, rather than

medium-low heat. Add the mirin and soy sauce, stir to mix, remove from

In a shallow bowl, dissolve the salt in 1 cup water. Dip your hands into
the salted water, then grab cup of the rice. Using your hands, shape the
rice into a small, fat triangle, then use your thumb to create an indentation
in the center. Place a teaspoonful of the salmon in the hollow, dampen your
hands lightly again, and pat the rice over the hollow to encase the salmon.
Repeat to create 3 more rice balls.
Dry your hands thoroughly. With the pointed end of the triangle facing
the ceiling, wrap the nori around the bottom of each triangle, leaving the
point showing between the open ends of the nori. Eat right away, or pack
in your lunch box for later.
VARIATION Yaki Onigiri (Grilled Rice Balls): These rice balls have no filling
or nori. Instead, once compactly formed, they are brushed with soy or miso
and broiled until they are crispy and chewy on the outside and soft on the
inside. As they are broiling (or grilling) evenly drizzle both sides of each triangle
with 1 teaspoon soy sauce or brush with 1 teaspoon white miso. Broil, turning
once, until both sides are very browned. Do not allow them to burn; especially
watch the miso, which can burn quickly. These onigiri are delicious hot.
note: Experiment with fillings. Try tempura shrimp, chicken salad, codfish
roe, Japanese pickles, tunafish with mayo, or cooked tsukune (page 134).

In a food processor, combine the tahini, water, garlic, lemon juice, 1 tablespoon

puree forms, 12 minutes, stopping to scrape down the sides of the bowl as needed.

Beautiful deeply red pears poached in red wine with star anise and cinnamon not only
taste incredible but will make your home smell amazing. With a rosemary crust and a
rich mascarpone filling, this is sure to become a modern favorite.

1 In a large saucepan over high heat, combine the wine, sugar, lemon zest
and juice, cinnamon stick, and star anise and bring to a boil. Reduce the heat
to medium-low, add the rosemary sprig, and simmer for about 5 minutes.
Add the pears, making sure they are mostly submerged. Simmer, turning
them every 5 minutes, until just fork-tender but still firm, 1520 minutes.
Let cool to room temperature in the liquid. Refrigerate in the liquid, cut
side down, for at least 2 hours or up to overnight.

Raise the speed to medium-high and beat until stiff peaks form, about
30 seconds. Pipe or spoon the filling over the crust.
4 Using a slotted spoon, gently remove the pears from the liquid and cut each
half into slices 14 inch (6 mm) thick, keeping the slices attached at the stem
end and fanning them slightly. Arrange the pears over the filling. Remove
and discard the cinnamon stick, star anise, and rosemary sprig. Transfer the
liquid to a small saucepan and simmer over medium-high heat until thickened,
about 10 minutes. Let cool to room temperature. Drizzle over the pie.
Refrigerate for at least 1 hour or up to overnight before serving.

3 In a saucepan over low heat, combine the butter, cream, sugar, and
honey. Cook, stirring, until the butter melts and the sugar dissolves. Raise
the heat to medium-high and bring to a boil, stirring constantly, then boil
for 2 minutes. Remove from the heat and stir in the almonds, followed by
the flour mixture. The batter will be thick. Drop the batter by 2-teaspoon
scoops onto the prepared baking sheets, spacing the cookies about
3 inches (7.5 cm) apart. Flatten each cookie with the back of the spoon.
4 Bake the cookies, 1 sheet at a time, until they spread to about 3 inches
(7.5 cm), are bubbling vigorously, and have light brown edges, 810 minutes.
Transfer the baking sheets to wire racks and let the cookies cool on the
sheets for 10 minutes. Using a wide spatula, transfer them to the racks
and let cool completely.
5 To make the chocolate glaze, place the chocolate, butter, and corn syrup
in a large heatproof bowl set over (but not touching) barely simmering
water in a saucepan and heat, stirring often, until the chocolate and butter
are melted, about 4 minutes. Remove from the heat and pour the glaze
through a fine-mesh sieve into a bowl. Let cool to 92F (33C) before using.
FOR DEEPER COLOR AND FLAVOR, POACH THE PEARS THE DAY BEFORE AND REFRIGERATE OVERNIGHT
6 Using a spoon, drizzle the chocolate glaze over the top of each cookie.

your tresses. Heres how to keep
the fun in the sun from frying
your hair.
PRE- AND POST-SWIM Rinse
with tap water and then spray
in a simple detangling conditioner
before diving init will seal the
hair shaft and lock out chemicals.
My go-to is 2 tablespoons allnatural conditioner, 2 tablespoons
warm water per 1 cup (240 mL)
conditioner, and 5 drops rosemary
essential oil. Post-swim, rinse and
spray your locks again.
GREEN HAIR MASK If you do
end up with the dreaded green
locks, mix cup (60 mL) lemon
juice, 2 to 4 tablespoons baking
soda, and 1 tablespoon liquid
castile soap. Apply the mixture
to wet, clean hair, massaging it
in from roots to ends. Let it sit
for 20 minutes, then rinse, wash,
and condition.
SPF HAIR MIST You know its
important to protect your skin
from the sun, but dont forget your
hair! Dilute your favorite natural
sunscreen with 2 tablespoons water
per 1 cup (240 mL) sunscreen.

Theres a saying in photography: If you cant make it good, make it big. And if you cant make it big,
make it red. Tongue in cheek, for sure, but it points to a truth: Color matters. From energetic red to
calming blue, each color carries its own visual connotations and emotional impact. Learning to read
a colors powerand to identify effective color pairings will help you capture scenes with a strong
color message, aiding your compositions and boosting your images stop-and-stare factor. Your
camera likely offers tons of choices for capturing color. You can set different saturation levels (which
affect the intensity of colors) and mimic types of film and film processing, such as black-and-white or
sepia. These settings can be fun to play with. But I recommend using neutral settings that contain all
of the image and color data from your cameras sensor (see #158164 for more on shooting RAW), and
then altering or tweaking color with software later.

the miniature world, these workhorses excel at more
than closing in on frog feet and bug eyes. Try them
out in creating an abstraction: a study of color, line, or
shape isolated from its context. This close-up picture
of a soap bubble offers an intriguing entre to abstract
photographyits packed with kaleidoscopic colors and
eddying patterns that please and tease the eye.
STEP 1 Gather your gear. A DSLR with a macro lens and a
set of extension tubes (a magnifying optic that fits between
the lens and the camera body) are musts. A tripod and
macro focusing rail will come in handy, too. You will also
need a continuous light source by which to focus, a black
background, and diffusion material for the light source,
whose output needs to be flat, even, and soft.
STEP 2 Mix the soap solution. A bottle of childrens soap
bubbles will do the trick (just dont shake itthis can create
microbubbles that will be difficult to focus on later).

A BRIEF HISTORY OF CYBER CRIME The idea of cyber crime truly
began in the 1970s, and expanded in the 1980s and 1990s. But it
was not until just after the turn of the 21st century that cybercrime
really came into its own. It happened because of the confluence
of several key world trends. First and foremost, of course, was that
the majority of the United States became covered by always-on,
high-speed Internet connections, connected to relatively powerful
computers able to more easily multitask.
Banks saw this as a boon: the more online banking they could
get you to do, the less they had to pay tellers and clerical staff.
Investment companies saw their margins shoot through the roof,
with customers researching, investing, and following on for flatfee charges, shifting the burden from brokers to dramatically less
expensive (and needy) geeks.
THE FIRST BIG BREACH The idea of hackers as sci-fi criminal
geniuses has been kicking around the culture since at least the 1980s,
but it wasnt until 2004 or 2005 that real-life hacking stories started
to make the front page. (This, of course, was when the front page
referred to the morning newspaper.) After a flurry of incidents, we
suddenly became aware of a new type of massive-scale crime wed
never really had to think about: the data breach.
In 2005 the news broke that due to security problems at a data
aggregator called ChoicePoint, some 145,000 records had been
stolen. And then it came out that ChoicePoint was just one of a
group of vendors with 20 billion or so public records about every
person in the country, including car registrations, social security
numbers, deed information, military records, bankruptcies, licenses,
and a range of digital detritus of the lives of each of us.

vehicle for software that undermines computer security
on a massive scale. It was personalized, personal, and
ostensibly secret: youd be steered to free images and
videos depicting your most sensitive desires, tantalized
that the real stuff was just one click away. And with that
click, as the real stuff played on your screen, also ran
software that exposed your computer, and everything
on it, to the global underworld. Is there a way to look at
naughty pictures without melting down your computer?
Indeed there is. Well get into details in a bityoull just
need to go through a few more steps before enjoying
some quality time with your keyboard.

banner ads can infect you even if you just view the file,
theyre referred to as drive-by downloads.
