tothebatter.Thegramflourbattermustbethickandmusthavebeenmadeusingonlyalimited
amountofwater.Onecan,however,altertheamountofchutneysappliedintothePavasper
liking,keepinginmindthatthespicieritis,thebetteritwillalltaste.

VadaPavisMumbaisanswertotheburger.ThecreditforitsinventiongoestoamannamedAshokVaidya,
whousedtoownastallnearDadar,fromwhichheusedtosellbatataVadaandfreshPav.Oneday,
sometimeintheyear1971,acustomeraskedhimtostuffthebatataVadaintothePavandserveittohim.
And,theVadaPavwasborn!ThesnackhasbecomesopopularinMumbaiandotherpartsofMaharashtra
todaythatAugust23iscelebratedasWorldVadaPavDayeveryyear.

Method
TomakePav
Puttheflour,yeast,breadflour,saltandsugartogetherinthebowlofastandmixer.
Attachthepaddletothemixerandstirforafewseconds.
Heatupthemilkandbuttertogetheruntillukewarm.Pourthemilkandbuttermixintothebowlwhile
maintainingthemixingspeedatlow.
Switchtoadoughhookandkneaduntilsmoothandalmostshiny.
Placethedoughinawelloiledbowl.Coverwithplasticwrap.
Keepitinawarmplaceuntilithasrisentodoubleitsoriginalsize.Dependingontheweather,itcantake
anywherebetween45minutestoanhour,orsometimesevenmore.
Oncethedoughisdoubleinvolume,takeitoutofthebowlandpunchitdowntoreleasethetrappedair.
LineabakingsheetwithparchmentpaperandsettoworkonshapingthePav.
Makeballsoutofthedough.
Placethemonthebakingsheetandpositionthemclosetoeachothersothattheytouch.
Coverwithakitchentowel,andleavethemundisturbedforanother30minutes.
Preheattheovento420*F.
Whentherollsrise,brushthemwithsomemilk.
Bakeforabout15minutes,untiltheyhaverisenandarebrownontop.
CoolbeforeservingasPav.
SlitthePavatthecentre.Heatapan,plopsomebutteronitandplacethePavfacedownonit.Heatit
untilitislightlycrispontheinside.
TomaketheVada:
CombinealltheingredientsfortheVadabatterinabowl,add1cupofwaterandmixwell.
Heatoilinakadhai.Then,tossinthesarsonandwhenitbeginstosplutter,addhing,kadipatta,ginger
garlicpasteandgreenchilliestoitandsautforhalfaminuteonamediumflame.
Next,addinthemashedpotatoes,saltandtheMTRHaldi/TurmericPowder.Mixwellandcookfora
minute,stirringcontinuously.
Keepasidetocool.
Dividethismixtureintofiveequalportionsandmoulditintoballs.
Dipeachballintothebatterandcoatthemixturewellwithit.
Heatoilinkadhaiandgentlyslideintheseballs.Deepfrythemtilltheyhaveturnedgoldenbrownin
colour.Scoopoutthevadaswithaladleandspreadthemoutonakitchentoweltodrainoutanyexcess
oil.
