BIEN CUIT CROWN JEWEL ITEMS

Cakes/Entremets:

Black & White Cake Layers of devils food cake, dark chocolate cremeux and white chocolate
bavarian, glazed in chocolate. Garnished with chocolate deco and cream puree glaze

Praline Sour Cherry Cake A layer vanilla cheesecake sponge sits below a sour cherry jam and a
praline mousse. Garnished with poached sour cherries and hazelnut crumble

Tarts:

Chocolate Caramel Tart A layer of caramel mixed with toasted pecans sits on the bottom of a
vanilla tart shell. It is then topped with a chocolate ganache. Garnished with fleur de sel and
candied pecans

Ricotta and Apricot Tart Basque A ricotta filling is baked with a layer of dried apricot
marmalade inside layers of vanilla pate sucre. Lightly flavored with orange blossom water.

Eclairs:

Bien Cuit Signature clair Buckwheat (locally sourced) clair shell filled with Catskill Provisions
raw honey cremeux. Garnished with toasted oat (locally sourced) sabayon and bee pollen.

Malt Milk Chocolate clair Malted milk sabayon is filled in a plain shell. Topped with a malt
glaze and aerated milk chocolate pieces and fleur de sel.

Key Lime Pistachio clair - Pistachio cremeux is filled in a plain shell. Topped with a key lime
curd, pistachio sponge cake.

Verrines:

Meyer Lemon Mascarpone A mascarpone mousse mousse fills the bottom half of the jar with
a meyer lemon marmalade. Caramelized white chocolate feuillentine crunch add a layer of
texture as garnish

Smores A layer of aerated chocolate pudding fills a portion of the jar. Then is topped with
a piece of toasted vanilla marshmallow, graham cracker tuile and tempered chocolate garnish.

Breakfast A layer of local yogurts is set in the jar and topped with a layer of seasonal
jam/compote and fresh fruit. Small side of granola is served with it.

Bread Pudding Seasonal Flavors

Smoked Chocolate Chip Pound Cake Lightly smoked vanilla pound cake is mixed with 70%
dark chocolate pieces

Norwich Farms Carrot Cake Classic carrot cake, cream cheese glaze, garnished with carrot
powder.

Palmiers House made puff pastry dough rolled up with sugar and baked until golden brown

Arlettes House made puff pastry dough rolled up in a tight jelly roll, then sliced and rolled out
into a large oval using a sugar. Baked until golden brown and caramelized.

Chouquettes

Chocolate Chocolate pate a choux rolled in white pearl sugar

Plain Pate a choux rolled in white pearl sugar

Lemon Honey Pate a choux seasoned with lemon zest and honey rolled in white pearl sugar.

Curry Lightly flavored curry pate a choux rolled in white pearl sugar

Bars

Flourless Chocolate Bar This gluten free bar is a rich and dense mixture of dark chocolate,
butter and eggs.

Seasonal Jam Bar This bar is made from savory flaky dough and has a layer of seasonal jam
and topped with a crumble.
Loose Granola - Mixture of oats, nuts, butter, sugar, seeds, local honey and different grains.
