Rosita's Arrozaroni and Cheese
Serve Up This Mexican Style Dish to Your Familia

Ingredients:


3 cups brown rice, cooked 1 tbsp flour

1 (16-oz) can kidney or pinto 3 oz. low-fat cheddar cheese,
beans, drained grated
1 large onion, chopped 1 cup low-fat cottage cheese
1 clove garlic, minced


Arroz means rice in Spanish. Rosita loves this cheesy bean and rice casserole.

Gather these ingredients to make Rosita's Arroz-a-roni and Cheese.

Step 2: Mix It Up
Preheat oven to 350F. In a large mixing bowl, combine the rice, beans, onion,
garlic, cottage cheese, and flour.
Little Hands Tip: Try counting in Spanish as you add each ingredient: uno, dos,
tres, cuatro, cinco, seis.

Step 3: Some Like It Hot
For spicier flavor, stir in 2-4 tablespoons of chopped green chili peppers before
baking.

Step 4: The Cheesier, The Better


Pour the mixture into a casserole dish. Top with grated cheese.
Little Hands Tip: As you sprinkle, practice saying the Spanish word for
cheese: queso

Step 5: Bake
Bake covered for 30 minutes.

Step 6: Uncover and Brown


Remove from oven and return uncovered for 5-10 minutes until the cheese is
golden brown.

Step 7: Delicioso!
