Habanero Gorgonzola Steak Sauce

Ingredients:

1 habanero pepper
Equal parts Gorgonzola crumbles and butter

Tablespoon red wine vinegar


Directions
On low-med heat melt the butter and then add the Gorgonzola crumbles. Melt
them stirring often. Add habaneros and red wine vinegar. Let cook for a few
minutes.
Optional: caramelized onions. a clove of garlic. dash of black pepper.

Smokey Chili-Chicken Sandwich

Ingredients:
Eggs

White sandwich bread

Remoulade

Chili sauce

Some smoked precooked meat, I prefer smoked chicken

Directions:

Eggs on a pan. When they start simmering, put regular white sandwich bread on
top of the eggs. The egg will stick to the bread, as the egg cooks. Give it about
one minute, the yellow yolk should still be liquid, but the egg whites should be
cooked through.
Now shut off the heat, and turn the entire thing over. Now you add the
ingredients. Apply remoulade around the yolk, chili sauce (Apply it in the middle
right over the yolk), and smoked meat on top in that order.
When you're done, the bread should already be brown from the heat on the pan.
Now take a knife, and jam it down the middle of the bread. You do this in order to
mix the yolk with the chili sauce, and to make it run down into the bread.
I can make this dish in no more than 5 minutes. It has crunch, a bit of sour, a bit
of smoke, and a spicy surprise in the middle. If you can't find remoulade in your
country, mayonnaise is a good substitute (Although I would supplement it with
pickled cucumbers).

Spicy Peanut Soup
6-8 cups low sodium Vegetable broth, chicken broth, or a combination of
broths and water
28 oz can of low sodium diced tomatoes in juice
5 carrots, chopped
2-3 ribs of celery
3 cloves of garlic
1 medium red onion
1/2-3/4 cup of crunchy or creamy unsalted peanut butter
2 small sweet potatoes, peeled and cubed (optional - this is for texture, you
can just add more carrots instead)
2 Thai chilies
1 tbs cayenne - adjust to taste
sriracha, red pepper flakes, cilantro, whole dry roasted unsalted peanuts for
garnish

Directions:
Chop red onion into desired size, I like mine in 1 in strips. Sautee in soup pot on
low heat in preferred oil with a dash of salt. While these are in the pot, mince
garlic, chop carrots and celery - don't forget to stir the onions occasionally (let
them sweat though). Add the garlic, carrots, celery and turn heat up to medium
high until fragrant, stirring continuously.
Add the broth/water combination. Once it starts simmering, add the canned
tomatoes. Bring to a boil, then add the sweet potatoes, peanut butter, cayenne,
and Thai chilies. I put almost a cup of peanut butter in mine bc I love it.
Let it boil until the sweet potatoes and carrots are soft. For a smoother soup
consistency (as opposed to a stew), use a potato masher to mash up the
contents.
To serve - pour into a bowl and top with a healthy squeeze of sriracha, splash of
red pepper flakes, peanuts, and chopped cilantro. Just smelling this makes my
eyes water.

Fire-Roasted Chorizo Jalapeno Poppers.

Ingredients:
Half a sweet onion, minced
four jalapenos, minced
two cloves garlic, minced
small bunch of cilantro, minced
3/4 lb fresh chorizo (or use ground pork and season to taste based on the
spices found in a good chorizo recipe

1/2 lb cream cheese

1 lb shredded monterey jack cheese (or cheddar-jack)

2 lbs Jalapenos to stuff, cut in half lengthwise and de-seeded

Directions:
Heat a large saucepan over medium heat and add everything but the cilantro and
cheeses. Break up chorizo as much as possible as if you were cooking meat for a
pasta sauce.
Cook until onions and jalapenos are tender and excess water has just barely
boiled away. Drain any excess fat (a couple of tablespoons in there would be okay
- this all depends on the quality of your chorizo). Add the cilantro and cook for
just a minute.
Remove from heat, break up cream cheese and mix it in.
Once cream cheese is melted, add shredded jack cheese and blend thoroughly.
Stuff halved jalapenos with filling, bake at 500 degrees F for 10 min or until filling
is browned and peppers are soft.
Excess filling will keep in the fridge for a week.

Laab Moo

Ingredients:
1lb Ground Pork
Water
1-2 tbsp Fish Sauce
a few mint leaves
1 tbsp Thai basil
Red Onion
1 Habanero
1 Jalapeno
Lettuce
cucumber
tomato

Directions

Brown a pound of ground pork. Drain fat. Throw a touch of water on it.
Then pour in a tablespoon or two of fish sauce to taste. Simmer for a few
minutes. Squeeze in the juice of a whole lime.
Chop roughly half a bunch of mint leaves and Thai basil and toss them into a
mixing bowl with the pork. chop 3/4 of a red onion and as much of a hot pepper
as you want... i like to use half a habenero. a full jalapeno with seeds is a good
middle ground. Add these and stir.
Serve the mixture on a bed of big lettuce leaves with wedges of tomato and slices
of cucumber. Sticky rice on the side is great as well.

Spicy Hummus

Ingredients:
Hummus
Garlic Powder
Paprika
Sour Cream

Directions
Add your favorite ground red pepper to hummus, and then add garlic
powder or garlic salt and paprika, with a dollop of sour cream

Sweet and Spicy Spaghetti

Ingredients:

1lb ground beef


chopped onion
1 clove minced garlic
1 jar of spaghetti sauce
1 tsp red chili flakes
3 tbsp brown sugar
cup cheddar cheese
(Optional) Hot Dogs
1 cups water

Directions
Brown 1lb of ground beef, add chopped onion to your taste, add minced
garlic to your taste, pour one jar of spaghetti sauce into the mixture, add crushed
red Chili flakes until it's spicy enough for you, start with 1 tsp. Add 3 tbsp Brown
Sugar and bring to simmer .Chop up hotdogs into small chunks and then Measure
out 1/2 cup Cheddar cheese. Add hotdogs into sauce after 30 minutes and turn to
medium. Add 1 and 1/2 cups water and add and then. cook for 10 minutes .Turn
off heat and taste for seasoning. Add in cheese and stir.

Stuffed Habaneros

1. Pick out the biggest habaneros you can find.

2. Cut off the tops and scrape out seeds and ribs.
3. Put directly on burner to blacken chili skin.
4. Fill with cream cheese blended with shredded sharp cheddar.
5. Wrap each in a half slice of bacon.
6. Preheat oven to 450deg and roast for 20min.

Platypus Eggs
Ingredients:
1 Habanero
lb Ground Beef
Blue Cheese Crumbles or Cheddar Cheese
Salt and Pepper
BBQ Sauce

Directions:
Seed the habaneros. Stuff with blue cheese.

Flatten the ground beef into about a 1cm thick (roughly 1/4inch) patty and place
the stuffed habanero in the middle.
Wrap the ground beef around the habanero and cook on medium heat until well
browned. Top with BBQ sauce.
You can also substitute the BBQ sauce with lemon juice and garlic or perhaps red
wine vinegar or balsamic vinegar depending on what cheese you use. These are
really fun at parties and HOT!

Caribbean Curried Chicken
Ingredients:
1 Pound Chicken meat diced
Juice of two limes
1 1/2 onions, finely chopped
6 cloves of garlic, finely chopped
2 Sprigs of fresh thyme, finely chopped
2 Sprigs fresh chives, finely chopped
2 Sprigs parsley finely chopped
1 bay leaf
1 large red bell pepper, finely chopped
3 to 4 Tbs Mango Habanero Hotsauce
2 to 3 Carolina reapers
1 tsp allspice
2 Tbs veg oil
1 tsp cumin seed
2 Tbs curry powder
2 Tbs tomato paste
2 cans coconut milk
1 Tbs Jamaican brown rum
1 Tbs Butter

Directions:
Wash Chicken meat thoroughly. Cover with lime juice. Set aside for 15-20
minutes Add all the seasonings and spices except for the cumin seed, garlic and
curry powder. Heat oil in stock pot and heat until the oil starts to smoke Add
cumin seed, garlic and fry until toasted. Add curry powder and stir. Add tomato
paste, stirring constantly. Add coconut milk and simmer until mixture starts to
boil. Add pieces of chicken and all the seasonings and spices. Let simmer for 20
minutes making sure that liquid does not evaporate. If needed a little water can
be added. After cooking time is finished add rum and a pat of butter let it melt
slowly. Serve with Jasmine boiled rice. This recipe can be done with all kind of
meats or vegetables.

Three Meat, Three Booze, Three Pepper Spicy Pseudo Chili

Ingredients:

1 lb bacon
1 lb cube stew meat
1 lb ground beef
5-7 Jalapeos
1-3 habanero
1-3 dried poblano.
2 big cans red beans
1 can crushed tomatoes
1 can diced tomotoes with garlic and basil
1 big white onion
1 clove garlic.
Bourbon
Vodka
Beer

Directions:
Get a big sauce pan and a big stew pot. Most of these things you will saut before
adding to the stew. Fry the bacon, and when all the fat is rendered, pull it out,
break it up, put in the pot. Leave pot cold for now. Use the bacon fat to sear the
cube meat. When well seared, add two shots of bourbon and flamb. Add to pot.

Add beans and ground beef to pot, turn on med-low and let simmer. stir often,
breaking up ground beef.
Dice all peppers except the poblano and add to the sauce pan- leave the bacon
fat. Saut for just a second, then add the diced onion. Another second, then the
whole clove of crushed garlic. Saut until the onion is clear then dump it all in the
pot.
Put all the tomatoes in the pot with two shots vodka. Don't stir- let the tomatoes
sit on top and absorb the vodka first. Wait five minutes.
Add beer and poblanos and simmer for two hours. Remove the poblanos before
serving, but squeeze them out. They'll have rehydrated and there's flavor there,
but the skin isn't good eats.

Henry's White Guy Ceviche
You Will Need:
a knife
a cutting board
a bowl
a fork (unless you eat with your hands. Hey, it's your party)

Directions:
-Open 2 cans of tuna, drain water dump in bowl
-Chop up 2 smallish-tomatoes, dump in bowl
-finely dice 3 (or more) habanero peppers, dump in bowl
-chop up half a white onion, dump in bowl
-add a little seasoned salt (I used one of those ghost pepper seasoned salts)
-add a little pepper
-add however much cilantro you want to, if you hate cilantro then whatever, don't
put any in.
-add the juice of half a lemon or lime (I prefer lime based on how limes are
green. Seriously, That's how little I know about cooking. In my mind they are the
same fruit)
-now mix it up really well and eat it with that fork I told you about. It's tasty, its
easy, you don't have to wash anything and if you're a fitness nut, it's pretty
healthy as far as I can tell.
