Nutrition and Foods 15, Nutrition for Infants and Young Children, Section 9630

Lecture: Mondays and Wednesdays, 10:00am- 11:25am

Location: Math Science Bldg. Compton Ctr. Room 105

Instructor: Valerie Henderson, MS

Course description:

In this course students study the nutritional needs in the growth and
development of infants and young children. Students also learn the physical and
mental well-being and the absence of disease. They will learn healthful practices
that prevent or minimize illness or disease. In addition to health and nutrition,
students will receive knowledge on how to keep children safe by understanding
more about environmental toxins.

Course prerequisites: English A

Course objectives:

The student will:

a.) Know the sources and functions of nutrients


b.) Understand and be able to use various guidelines for food intake
c.) Understand the nutritional needs of the growing child
d.) Be acquainted with common challenges in feeding children and their proposed
solutions
e.) Be able to apply policies and best practices for feeding children in child care
programs.

SLO Statement:
1. Students will be able to identify basic nutritional issues behind major infant
and childhood diseases/disorders.
2. Students will be able to understand their role in nutrition as it pertains to
their specific career.

Student Learning Outcomes:

1. Students will be able to understand the 6 classes of nutrients and how they
affect the growth and development of infants and young children.
2. Students will be able to incorporate correct healthy eating into school menus
that will encourage a love for vegetables in toddlers and young children.
3. Students will be able to assess infants and young children for accurate
growth and development
4. Students will be able to provide tips to encourage parents to continue
healthy eating at home

Assessment activities: The following activities will be used to assess mastery of


student learning outcomes:
Lecture (power point, chalk board)
Homework exercises, writing assignments
Audio-Visual films.
Use of current periodicals and articles.
Class discussions

Evaluation Criteria:

Projects are scored using an instructor-designed rubric which is shared with


the students. Quizzes and final exam are scored on a percentage of correct
answers.

Grading Scale:

90 100% = A
80 90% = B
70 80% = C
60 70% = D
Below 60% = F

Attendance:

Regular class attendance is expected. Students are also expected to arrive on


time and stay the entire class period. Attendance irregularities will be handled
according to the policy published in the current college catalog.

Student Conduct:

Students are expected to prepare for class sessions by completing the reading
and utilizing the (optional) study guides provided. Late projects are accepted
but marked down 10% (one grade). Students may tape lectures. Students may
utilize laptops for course-related activities only. Cell phones must be silenced.
At no time may a student cheat, or present the appearance of cheating. (The
instructor reserves the right to check the use of electronic devices, including
translators.) All regulations stated in the current college catalog regarding
student rights and responsibilities will be followed.

Welcome to Nutrition 15. This is one of the most interesting and relevant-to-life
courses you will study. We all started out as children, and every child deserves
the very best start in life. This is impossible if they are not well nourished. This
course prepares you to provide appropriate, nutrient-dense meals to young
children in care, and for your own children at home. I am glad you are here.
Thank you for caring about children, our most important natural resource.
