Questions
Representative Sample
Why is a representative sample important?

To ensure samples adequately reflect the entire lot of grain,

proper sampling procedures must be used
The key to having dependable and representative sample is
sampling often and thoroughly mixing and dividing down the
selected sample

For deliveries to licensed primary elevators
Appeals can be made in relation to grade, dockage, moisture and
protein
1000 grams
What grade and dockage are you
expecting?
Encourage producers to speak with the elevator prior to delivery
This is an opportunity to identify what grade and dockage you are
expecting
If you hired someone to deliver $15000 of cash to a bank, would
you give them any specific instructions?
Subject to Inspectors Grade and Dockage
Sample taken must be agreed upon by producer and
elevator manager

Visual Grading Factors
The degree and frequency of frost/heatstress or mildew or
immaturity or combinations of these factors
Are assessed by comparing the sample being graded against
the standards and guides
2014 & 2015 Crop Year CWRS Mildew

Mildew in the brush

Impact of Refining Visual Guides for Mildew
in CWRS
Scientific testing has shown that moderate levels of mildew has no
impact on the flour quality or end products

The refinement of visual grading guides for mildew only impact the
aesthetic appearance of the wheat but has no impact on soundness or
end use functionality
Distinctly Green
What shade of green is distinctly green?
The CGC issued a Canola/Rapeseed Colour Guide
This tool is used in the determination of distinctly green seeds.
Heated
The CGC issued a Canola/Rapeseed Heated Colour Guide
This tool is used in the determination of heated seeds.
Objective Grading Factors
Determine the grading factor
Objective Grading Factors
Objective grading factors are factors to which a
percentage may be applied

Tolerances are set out in the grade determination

Fusarium and DON (Vomitoxin)

Canada recognizes the importance of

safety first in all commodities.
Normally FDK infection occurs at
flowering however this year it also
occurred later
Weather influences at flowering
Species of Fusarium - F. graminearum
Visual assessment difficult to predict
deoxynivalenol (DON) levels
Companies are testing for DON to
manage their purchases to ensure
meeting customer needs for safety ie:

Procedure found in Official Grain Grading Guide
Assessed and recorded to nearest 0.1%

Cleaning for grade improvement
Dockage
Sample must be free of dockage material before grade assigned
Dockage:
Material that must be removed from grain by the use of
approved cleaning equipment so that the grain can be
assigned a grade.
Foreign material:
Material other than grain of the same class that remains in the
sample after the removal of the dockage.

Objective of the Modernization Proposal

Core principle:
Canadas wheat classes are a critical part of the total grain quality
assurance system
Rationale:
provide a more consistent and balanced functionality
increasing demands for more consistency by stakeholders and
customers both domestically and internationally

Background for modernization proposal
Customer concerns related to gluten strength have
increased in last few years
Gluten strength is a function of wheats glutenin and
gliadin proteins and is key to bakery processing,
crumb structure and gas retention in a loaf
Quality of protein just as critical as Quantity
