toms bAked Cod fish COCONUT-PINEAPPLE

3 pieces cod fillet, about 5-6 oz. each
Lemon juice
DROP COOKIES
Butter or margarine
Mix together in bowl:
Salt & pepper to taste
3-1/4 cups sifted flour
1/2 bell pepper (red or green), cut into strips
1/2 tsp. salt
1/2 sweet onion, cut into rings
1 tsp. baking soda
Pre-heat oven to 400 degrees. 2 tsps. baking powder
Rinse fish and pat dry with paper towels. Sprinkle liberally
with lemon juice.
Add:
Butter both sides of fish. Sprinkle with salt and pepper. Add 3 beaten eggs
1 cup shredded coconut
bell pepper and onion. Place on large piece of foil and wrap 1 cup crushed pineapple
1 cup shortening
and place on a baking sheet. Bake until fish flakes easily with
1-1/2 cups granulated sugar (with most of juice drained off)
a fork, about 35 minutes.
Yield: 3 Servings Grease cookie sheet or use parchment paper. Drop by
teaspoon. Bake at 350 degrees 10-12 minutes. Check at 8-9
