Making an Omelette
This is the way an omelette should be made. It
is important that the frying pan should be
proportionate to the number of eggs; in other words,
to the size of the omelette. The frying pan must be
made of iron, not of aluminium, tin or enamel. And
here I feel I must stress a point essential to what
might be called the background of omelette-making,
namely that the frying-pan must never be washed
with water but rubbed, when hot, with salt and
tissuepaper, as this is the only way to prevent
sticking.
For three portions, we take six eggs, break
them into a bowl, season them with salt and freshly
ground pepper, and add a good teaspoonful of
water. We beat this lightly with a fork or the wire
broom, not the whisk, until large bubbles form on
the top. This takes half a minute; it is fatal to beat
too long. Meanwhile, our frying pan is getting hot,
not too hot, and we drop in an ounce and a half of
butter, or butter and best lard, over a quick flame for
a minute or two, until it gives no more froth and has
turned light golden. We give our egg-mixture
another stir and pour it into the fan, letting it spread
evenly over the fryingpan.
All this is a swift business, and we may well
feel a few extra heartbeats and a little breath less at
that moment. The flame is now turned down a little.
With a fork or palette-knife (a fork seems to work
particularly well) we loosen the edges of the
omelette all round and, once or twice, in the middle,
letting the liquid flow into the empty spaces, taking
care always to move towards the middle.
This takes about two minutes. Then, keeping as
calm as we possibly can, we fold it. This is easy if
we fold over and pin down with two or three fork-
pricks about an inch and-a-half of the omelette
along one side. Then, it is quite easy to roll it into
shape. Our omelette should be golden brown
outside and wet inside: baveuse, as the classical
French term says. It is then slid on to a hot plate and
its surface made shiny with a little butter. This last
touch makes all the difference.

off our feet when our wings have trouble
remembering how to fly. It means that our friends
are people who will always be there for us any time
we need them.
Im so lucky because I have three best friends.
They are Firsty, Ronald and Jonathan. We have
known each other since we were four years old. We
met in the kindergarten. Since then, we always go to

There are about nine cats. She loves them all. One

Nevertheless, she wants to be a model.
Ronalds nickname is Ron. Most of girls in
our school love and adore him. Theres no doubt
about his good looking. We call him The
Charming Ron. His height is 176 cm. Ron has
straight hair and perfect face. He is an intelligent
and introvert person. Above all, he is humble. He
was crowned as The Best Student this year. He won
so many prizes on Math, Chemistry and Physic
competition. However, his favourite subject is
Chemistry. He wants to be a chemist someday.
Jonathan is a funny person. He can always
find a way to make the people around him laugh. I
wonder what it is in his head for he can create jokes
spontaneously. Jonathans nick name is Jo. He is
plump. Hes about 168 cm tall. His weight is 80 kg.
Thats why we call him The Big Jo. He has a
round face with brown eyes. His spiky hairstyle
makes him easily recognized. Jo is a humorous,
friendly and an easy going person. He is a movie
freak. He would never miss any new movie in the
cinema. He dreams of becoming a famous actor one
day.
About me? Well, my name is Hana. Im the
shortest one among them. Im about 160 cm tall. I
have long wavy hair with round face. My friends
call me The Chubby Hana because I also have a
chubby check. Most people, even my parents say
that Im a careful, generous and diligent person.
They also say that Im a bit sensitive. I love
painting. I spend much time in my small studio just

The gift
Della and Jim Young, newly married, were
poor. Jims wage was enough to rent only a very
small apartment. But there were two things of
which each was extremely proud. Della had the
longest and most beautiful hair in all New York,
thought Jim, as he watched her combing it; and Jim
possessed a magnificent gold pocket watch, given
by his father.
Christmas was drawing near, and Jim and
Della began to think what present they could afford
to give each other. Della always noticed sadly,
when Jim looked at his watch (which he did
whenever he had an excuse to), that it was fixed to
the button-hole of his coat by common old leather
strap. He really needed a gold chain. And Jim often
thought, as he looked at Della doing her long hair,
how well it would looked if only he could buy her
jeweled comb to hold it in place. But a gold watch-
chain or jeweled hair-comb would have cost far
more money than either of them possessed.
Now it was Christmas Eve. With tearful eyes
Della had counted the money she had saved for
Jims Christmas present for the tenth time 87 cents.
If only I knew ... she thought. Then suddenly she
had a wonderful idea. She hurriedly putting on her
old hat and coat, she ran down the street to the shop
with the notice Hair bought. She entered and an
hour later walked out of the shop richer by 15
dollars, but without her chair! On the way home she
stopped at every watchmakers shop until at last she
found exactly the right chain to suit Jims watch.
Returning home, with one dollar and 87 cents
left in her pocket, she had just enough time before
Jim arrived home from work to wrap the precious
gift. She also curled her remaining hair. When Jim
saw it, he was speechless. Oh Jim, dont look at
me like that. It will grow again, Della cried. And I
had to do it. Here. She gave the parcel to Jim, you
see, I had to sell my hair to get money for your
present! Merry Christmas, dear.
When Jim opened it, he collapsed on a chair.
I think wed better put our presents away for a
while, he said gently at last, You see, Ive sold
my watch to buy this comb for your hair. He gave
