Disciples Escoffier International was created in France,
on April 21st, 1954 in Nice by a Chef of Auguste Escoffier,
Mister Ducroux. Today, the Association counts more
than 25.000 Disciples in the world who are present in
France, China, Hungary, United States, Italy,
Switzerland, Germany,
About Spain, Japan, Benelux,
Canada, Mexico, Indian
Disciples Ocean, in Portugal, in
Thailand, in South Africa, in
Escoer Brazil, in Argentina, in
Vietnam, in Russia,
International etc....Due to its size, the
Association chose to get
organized by delegation, one
for every country in which it
is present. Each has its own
mode of management but
they are connected between
them and headed by the
Great Council of Disciples
Escoffier International,
which is situated in France, to Villeneuve Loubet,
Auguste Escoffier's home town. So, in spite of the
independence of these branches, they remain united by

the same strategy, and the same
guideline organized by the heart of the
Association in France.

The common objectives of
the Delegations

Honour the memory of Auguste Escoffier

For half a century, the Disciples Escoffier


International has for objective in France
as well as abroad to honour the memory
of Auguste Escoffier, Master of French
and international cuisine. The aim is to
promote the great traditions of cooking
and the techniques created by Auguste
Escoffier particularly in the primary,
secondary, superior or professional
training of cooks, and in apprenticeship,
the traditional way of 80% of the starred
chefs.

Motivate the young one
The association leads a true battle from the young ones so that
they find the desire and the motivation of being cooking. To do so,
the International Association of the Disciples Auguste Escoffier is
Young getting closer and closer to school, establish contacts between
professional and students.
Talents It is a question of fostering the young ones, whether they are
apprentices, employed or helper by inculcating actions and ways
Escoer of thinking of our great mater, man of heart profoundly altruist,
without forgetting to add the subtle and indispensable note: of

Young Talent Escoffier
Competition
Since 2007, the Disciples Escoffier
organised a cooking competition for the 2017
young chefs. So, the first young Asian
chefs of less than 24 years old (Thailand,
Vietnam, Philippines, Korea, Macao,
Hong Kong, Singapore, China) having
succeeded in the pre-selection in their
native country have rivalled to be the
best "young talent ASIA". Facing them, a
public and a jury have evaluated their
skills in cooking during two hours of
fierce competition in respect of the
heritage of Auguste Escoffier. The
"Young Talent Escoffier" 2017 will be
held at Hong Kong Restaurant & Bar
Expo in September.

Young Talents Escoffier Asia 10th
anniversary of The YTT selection held at
10;45 in IFT Macau Campus as one of
the Asian Younth Chef Talent Macau
selection activities.
It is the 10th anniversary of the Disciples
Escoffier Young Talents Escoffier
International in 2017, as a non-profit
association, on behalf of the President of
Macau Delegation Mr. Emmanuel
Souliere, Vice President of Macau
Delegation Mr. Raphal Kinimo, Social
Responsibility of Macau Delegation

In this years YTE competition there are
8 contestants from major hotels and
hospitality institute, included Grand

Lapa Hotel, Wynn Palace Hotel, Galaxy
Macau, Parisian Hotel and IFT Macau,
our main goal is promote and develop
young talents. Due to the demand in
quality from Chefs of western cuisine is
constantly increasing in the present
hospitality industry. Disciples Escoffier
International is provide a platform to
young talents with more opportunities.
