Cupcas with
Row Icing
INGREDIENTS METHOD
2 cups rolled oats Preheat oven to 175C and line a 12-hole cupcake
2 tsp baking powder pan with paper liners.

cup Natvia Place oats, baking powder, Natvia and pistachios in


a food processor and grind to a ne powder. Place

in a medium sized bowl and make a well in the

3 cup peanut oil Blend rosewater, oil and eggs, then pour into the

Divide mixture between cases and bake for 18-20

Cacao Spt MAKES 20

INGREDIENTS METHOD
cup wholemeal spelt flour Si ours (adding back the husks), cacao, baking
cup plain flour powder and salt into a medium-sized bowl, then
sr through Natvia and coee.

Whisk together buer, eggs and vanilla and sr
1 tsp baking powder
through dry ingredients to form a dough. You may
4 tsp salt need to massage it together with your hands.
cup Natvia Dont be tempted to add any more liquid, it will
come together.
1 tsp instant coffee
Roll into a log, wrap in cling wrap and refrigerate
3 cup butter, melted
for 2 hours.

Preheat oven to 175C and line a baking tray with

4 cup Natvia Icing Mix Place Natvia Icing Mix in a at bowl or on a plate.
Break o tablespoon-sized amounts of dough,
roll into a ball, then press into icing mix. Carefully
aen onto baking tray.
Bake for 10-12 minutes and transfer to a wire rack
to cool.

Coconut Slice MAKES 16

COCONUT TOPPING METHOD


2 egg whites Preheat oven to 180C and line a 18cm square

Lon Frian MAKES 12

INGREDIENTS METHOD
cup Natvia Preheat oven to 200C. Lightly grease 12 friand

instead).

Rich Chocole SERVES 16

SE METHOD
1 cups wholemeal our Preheat oven to 160C. Lightly grease a 20cm
cup hazelnut meal springform n.
(or almond meal) To make the base, combine our, hazelnut meal,

and mix well unl it comes together as a ball. Press

240g dairy-free dark chocolate,
broken into pieces Combine tofu, vanilla and coee with melted
chocolate in a blender and process unl smooth.
160g silken tofu
Pour lling into cooled base and bake again for
2 tsp vanilla extract

25ml espresso or instant coee
Top with hazelnuts before slicing to serve.

SERVES 12

INGREDIENTS METHOD
1 cups wholemeal spelt our Preheat oven to 180C and spray two sandwich

In a separate bowl, whisk together eggs, buer,

with tcha Icing MAKES 12

INGREDIENTS METHOD
cup wholemeal our Preheat oven to 175C and line a 12-hole cupcake
cup plain our pan with paper liners.

2 tsp matcha green tea powder Si ours, green tea powder, baking powder and
salt into a medium bowl. Add back husks from the

Whisk together yoghurt, eggs, coconut oil and

Pao MAKES 20

Muli 
INGREDIENTS METHOD
1 cup almonds, Preheat oven to 180C and line a slice tray
roughly chopped with baking paper.
cup macadamia nuts, Combine nuts, seeds, cacao nibs, almond meal,
roughly chopped coconut our, cinnamon and salt in a medium
cup sunflower seeds sized bowl.
3 cup cacao nibs Warm coconut oil and Natvia in a small saucepan
4 cup almond meal over a low heat unl melted.

4 cup coconut flour Sr in orange juice, zest and vanilla, and combine
with dry ingredients.

Stand for 15 minutes before pressing very rmly
8 tsp salt
into prepared tray and bake for 25-30 minutes,

4 cup Natvia Cool in tray before turning out and cung into

Chocole Pr MAKES 16

Browni
INGREDIENTS METHOD
120ml vegetable oil Preheat oven to 160C.
200g dark chocolate, Lightly grease an 18cm square cake n and line
broken into pieces the base with baking paper, overlapping the sides.
3 cup cocoa powder, sifted Warm oil and chocolate in a saucepan over low

Gingbrd Loaf
with Lon Icing SERVES 12

INGREDIENTS METHOD
175g plain our Preheat oven to 150C, and grease and line
1 tbs ground ginger a small-to-medium loaf n.

3/4 tsp bicarb soda Si our, ginger and bicarb soda into a bowl and
sr to combine. In a separate bowl, mix together
125g unsweetened apple sauce
apple sauce, oil, Natvia, egg and milk unl
80ml vegetable oil combined. Bit by bit, pour wet mixture into dry
70g Natvia mixture, and whisk very gently (to ensure it
combines well without lumps forming).
1 egg
Pour baer into loaf n and bake for around 40
100ml rice or soy milk
