Directions

1. Dissolvegelatinin2tbspcoldwaterandletitswellforabout5to10minutes.

2. Inamediumsaucepanbringthecream,milkandsugartoasimmerovermediumlowheat(Donot
boil).Whensugarhasdissolvedremovefromheatandaddvanillaextract.Letcoolfor5minutesbefore
addingthegelatin.

3. Addgelatininthemilkmixtureandstiruntilthegelatinhascompletelydissolved.Pouritintheserving
glasses(I'veused5oz150mlcapacityglasses)orramekinsandrefrigerateuntilitsets,forabout4
hrsorbetterovernight.

4. Topreparethesaucewashthestrawberries,drainwellandremoveleaves.Cutstrawberriesinquarters.
Inasmallsaucepanputthestrawberries,sugarandwater.Bringtoasimmerandremovefromheat
immediately.

5. Pourintothebowlofablenderorfoodprocessorandblendthemixturetomakeasmoothsauce.Pass
throughastrainertoremovetheseedsoutofthesauce.Coverandletitcooltoroomtemperaturethen
refrigerateuntilreadytoserve.
