CHICKEN NUGGETS

1. Select good quality raw materials. Chill meat.
I. Meat Material: 2. Weigh/measure all ingredients.

II. Extenders: 5. Put in rectangular pans, flatten, thick.

III. Curing Mix: EXTENDED

+ 1 tsp 2. Chill the meat then grind using a 3.0 mm hole plate.

4. Mix the meat first with the curing mix.
IV. Seasonings/Spices:
5. When mixture is tacky, add the extenders and the other ingredients.

V. Packaging Materials:
Polyethylene bag, 6x8 12. To cook, deep fat fry until the nuggets turn golden brown.
