EGGPLANT PARMIGGIANA

Ingredients:

4 Eggplants
2 lb Tomatoes
1/4 lb grated Parmasan cheese
12 Basil leaves
1 lb Mozzarella cheese
1 Onion
1 Garlic clove
oil for frying

Preparation
slice the eggplants on the width, add salt and put in a colander for 30 min, the water will go away.
during this time make a tomato sauce by blending the tomatoes with onion and garlic
place the sauce in a saucepan and put to cook on a medium heat for about 30 min
cut the mozzarella cheese in dice.
pre-heat the oven at 350
put oil in a pan at medium heat
dry the eggplants and fry them in the pan
in a big plate put 3 spoons of tomato sauce then a layer of fried eggplants then a layer of tomato
sauce with some basil leaves and some mozzarella, and continue alternating layers until you put
all the eggplant.
finish with a layer of tomato sauce topped with grated parmiggiano
bake for 1 hour
