What are internal and external controls?


Internal vs. External Controls:
All plans are internal
Internal controls consist of plans, goals and objectives, standards, policies
and procedures
Internal controls ensure that the organization reaches their goal by way of an
effective strategy in addition to utilizing resources appropriately for better
decision making
Internal controls are primarily concerned with employees
External controls consists of local, state and federal regulations and contracts
External security focuses on preventing the loss of items within a facility
Both internal and external controls provide guidance for any system

What type of "disasters" can happen to the food service department?


Gas leak
Fire
Foodborne illness
Chemical contamination/leak/explosion

What are the plans for, power failure, floods, snow, water shutoff, etc.?
Back up generator is in place for power failure in addition to gas stoves that
can still operate in the event of a power outage to continue to cook certain
foods and keep others warm
If there were to be a flood that would affect the inside of the kitchen, all
appliances should be unplugged or at the very least turned off as this could
cause a greater risk if electricity mixed with incoming water
In Pennsylvania we are very accustomed to snow however, this has great
potential to affect deliveries. In this situation it would be the responsibility
or management and/or receiving to plan ahead and note the weather
forecast and order more than needed in case of emergency or inability for
vendors to deliver
In case of a water shutoff it would be our responsibility to make other
arrangements whether that means reaching out to vendors to deliver bottled
water on short notice or obtaining more from other spots on campus

What are safe working conditions?


By definition, safe working conditions implies that ones work environment is
free from any known dangers
The Occupational Safety and Health Administration (OSHA) establishes and
enforces protective workplace safety and health standards
What are safety concerns of the employees? (i.e. Accident prevention;
chemicals, burns, cuts, electrical, and falls. Infection with contagious diseases;
hepatitis, and HIV. Assault of employees by intruders or injury due to fire.)
Electrical shock
Burns or cuts (On my first day the baker, Karen, cut off the tip of her index
finger and was admitted to the ER)
Slips and falls could lead to broken bones, concussions etc.
Chemicals and/or hot oil splashing into eyes
Sexual harassment
Threat of violence/act of violence by student(s)

What type of safety training is provided?


N/A at my facility
There are educational materials available if desired on what to do during a
fire or power outage but that is the extent of safety training

Occupational Safety and Health Act (OHSA) The OHS Act of 1970 purpose is: To assure
safe and healthful working conditions for working men and women; by authorizing
enforcement of the standards developed under the Act; by assisting and encouraging
the States in their efforts to assure safe and healthful working conditions; by providing
for research, information, education, and training in the field of occupational safety
and health; and for other purposes. Be it enacted by the Senate and House of
Representatives of the United States of America in Congress assembled, That this Act
may be cited as the "Occupational Safety and Health Administration Compliance
Assistance Authorization Act of 1998".
